      Thanks man! People do seem to appreciate that. I did a follow-up video where I did grilled catfish again and showed how to fix that sticking problem. They came out awesome!

      @@RonOnTheGrill I made catfish tonight and used most of your video as a reference but I did the sear on my black stone and other than edges being overcooked. The fish was delicious.

    If you try and light coat of olive oil the fish will not stick and you will get the grill mark

      Yeah that’s definitely where I went wrong. I coated the indirect side but searing was a spur of the moment decision and I just didn’t think to put oil on it. I guess I thought it would be so hot there wouldn’t be a problem. But really it was just all my seasoning that stuck to the grates, not the fish itself. We’ll definitely be doing it again though, so I’ll try your suggestion. Thanks!

      If I’m understanding Darren correctly, yes. But on the grate, not on the fish.

      Man I’ve never done it before, but it couldn’t have been easier. Maybe it’s because mine was already cleaned and gutted, had no skin, etc. It wasn’t any harder than cooking some Thighs, with the exception of making sure to pull them at the right time.

      Man I already have 3 grills, lol! I’m trying to get rid of one. I’ll have to make it happen on these Kettles. Shouldn’t take more than a slight adjustment.

    They look great, my bride wouldn't touch them with the head or tail on, but I'm in.

      The tail could easily be cut off these. And I loved these because they were thick and didn't have skin to contend with, so there was no sticking to the grill. We're putting them in rotation for sure man.

    Sear first then smoke offset! And make sure your grill is well oiled

      I've been sleepin' on it but not any more man. And I only put a hint of smoke on 'em. These were done in 30 minutes tops. I've seen guys smoking them for 4 hours. I can't imagine any reason to do that with fish.

      Hey Antonio, in this video it’s just a couple of bricks. It keeps my coals on one side, giving me a two-zone set-up. One side is for high temperatures, direct grilling and searing. The other side is for cooking with indirect heat.
      Since I posted this video I’ve replaced the bricks with an accessory called the Slo-N-Sear. It’s a charcoal basket that’s specifically designed to do everything I’m doing with the bricks, only much better and more efficiently. You’ll see it in my more recent videos.
      By the way, I’ve done a follow-up video to this one wheee I’m actually using that accessory. In that video I fixed the sticking problem by grilling the fish directly over the coals. You should see a link to that video at the end of this one.

    Catfish meat is too soft to be grilled imo.. Fried or Blackened (Fillet) is the best way

      Then I can’t help wondering why you clicked on the video, lol! I do plan on trying other varieties though. There’s one that’s really dense, almost like a steak. Very lean though. Can’t think of the name of it right now.
