      Well first off, never cook to time, only temp. INTERNAL TEMP. All proteins have a minimum safe internal temperature.That number for poultry is 165 degrees. For white meat you should pull your poultry off at about 5 degrees before that. Carryover heat will take it up to 165 For dark meat like thighs, drums and wings you can go several degrees higher and still be good. I go up to around 175 degrees. Hope that helps!

    I used a different type of season and also different dipping sauce. That's was on one cook. My other was based on hot honey. I agree with you. Yours was basic and a little boring with the choice of flavors. Sometimes, you have to experiment with flavors and step out of the basic seasonings and comfort zone. Like fresh cut herbs and blended spices. Nice presentation and good 👍🏽 cook.

    Great stuff! I think oven thermometers are important too, not only for the oven but for inside a smoker as well. The oven at my old place was about 50 degrees off from what the setting on the dial said. Trust the thermometer, not the dial on the oven!

      I feel you, lol! I’ve always considered myself a “lazy cook” because I don’t like a lot of steps. But if you can push yourself past that you can actually make some pretty awesome food, so that’s what I’ve been trying to do. And every time I do, it ends up being worth it.

    When I was looking up a recipe for oxtail stew, the lady said you can substitute beef shanks for oxtails. Looks really good. I'm going to make some with butter beans and a side of carribean rice and peas and some plaintains.
