I have a marinade recipe for catfish grilled over hot mesquite charcoal that will blow your mind, literally! Got it from an old guy in the oilfields of west Texas. He used to cook it for us field guys when I worked for Texaco. You have to put the filets in a grill basket so they don’t fall apart when flipped......Mmmm good!

I know this was posted years ago, but just on the off chance you our anyone else is still interested, he has posted a blend ratio of 4 parts kosher Salt, 2 parts granulated garlic, and 1 part coarse ground black pepper. Easiest way is 1 cup salt, 1/2 cup granulated garlic, and 1/4 cup of coarse black pepper. I add some dried parsley into it just for visual presentation and a tiny amount of extra flavor, about 1/4 cup.

Putting the catfish on some citrus is a great tip. There is nothing worse than having half of your fish stuck to the grate!
