I made the Rich Panang Curry from the Cook with Confidence cookbook tonight and OMG!!! It was soooo delicious!! Super simple and I was able to use the rest of the Red Thai curry paste from previous recipes (which cut cooking time in half). It was super flavorful, beautiful color and easy! My husband really enjoyed it as well. Thank you!

I just found your channel and oh man, where have you been all this time! Your recipes are straight forward, the ingredients are not that hard to come by. I mean, I don't have to hire a mountain alpaca to take me to the right cliff on the solstice to get that one herb. Your cookbooks are now on my gift list for myself. The burning question I have is what containers do you use for your spices? You opened up that cabinet and I almost cried with the beauty of it all.

Just a little remark, you often use avocado oil, on one hand it is pretty expensive and on the other hand the cultivation of avocados requires a lot of water and is therefore problematic for industrial cultivation, especially in regions with little water. I therefore prefer to use a good olive oil. Thank you for all these tasty recipes.
it's not even pure avocado oil in some cases; depending on where you buy it, the oil is often adulterated with cheaper oils. A constant problem in the food industry. I use 100pct olive oil (hopefully also not adulterated) or grapeseed oil.
Love these you can also char the onion and garlic to give a little more smokeyness to it, peel the onions but leave the garlic in its husk and burn away let it cool them smash it through much love from Australia 🇦🇺
Came upon this channel this morning, I like the channel because the recipes are plant based. Also where can I buy those spice containers and all those fresh spices, I live in the Virgin Islands, not ready to get all the spices here.
Great recipes, thankyou :) next time if you have excess curry leaves, just strip them off their stalk and freeze in an airtight container. They will keep their form, colour and fragance better than the dried type. When you need to use them, no need to defrost ahead of time. Just take them out of the freezer when you need them, they defrost within minutes.
