  • We had the great pleasure of visiting ‪@wasabigrowersuk‬ in Dorset and harvesting one of the plants. We cooked every single part as the whole plant is completely edible.

I'm plants person in Japan and I must say this is truly Wasabi🌱
This beautiful farm's environment is perfect.
Even wild wasabi growing in Japanese mountain would want to move here.

I was at an izakaya in Fukuoka and my coworker was good friends with the owner and she just gave us a fresh wasabi root and grater with our food. It was amazing. I've been living in Japan for 13 years and been to plenty high-end sushi places but just tasting some of the freshly grated wasabi on its own was a whole different experience.

*I absolutely LOVE the aesthetics of wasabi/cress farms. Reminds me of brisk autumn days when I was a kid wandering around the woods with my brother. Come across a small stream in the shade, moss, leaves, stones, the clean crystal water slowly passing us by. It’s like… a bedroom for a forest spirit type of thing. Just quintessential vista of a forest stream turned up to 11.*

I have a commercial indoor cultivation setup and have a familiarity with hydroponics. I have four Daruma wasabi plants that I just plunked into a shady corner of my garden a few years ago, and they're getting pretty big. I never do more than take a couple leaves here and there. Slugs and snails have never really been an issue. I'm surprised to see what conditions they're farmed in, since about all I've ever done with mine is weed around them and spray them with the hose. I have this weird misting thing that I'll put on them if it gets into the 90s in Summer, but that's about it.

We can't fully replicate the japanese wasabi experience outside Japan, but at least we can still plant the wasabis to each of our own country, provided that the optimum conditions for wasabi farming is met, of course. I guess UK had spots for wasabi farming, seeing that wasabis really preferred mid-to-high altitude and chill environment with enough irrigation.
