    INGREDIENTS
    ½ red onion
    2 tablespoons olive oil
    1 clove of garlic
    ½ thumb-sized piece of ginger
    ½ a red chili (if you like it spice like Dave, leave the seeds in!)
    1 tbsp curry powder
    1 tsp cumin powder
    1 tsp ground coriander
    1 tsp ground paprika
    1 400g tin chopped tomatoes
    1 400g tin coconut milk
    1 400g tin of chickpeas (drained and rinsed
    1 tsp salt
    ½ tsp ground black pepper
    small bunch of coriander
    zest of ½ lime
    juice of ½ lime
    1 avocado
    INSTRUCTIONS
    -Heat the oil on a medium heat.
    -Thinly slice the onion and garlic and add to the pan.
    -Grate the ginger into the pan. No need to remove the skin!
    -Thinly slice the chilli and add to the pan.
    -Add the spices and cook for 30 seconds.
    -Add the chopped tomatoes, coconut milk and chickpeas.
    -Add the salt and pepper.
    -Chop the coriander and add to the pan along with the lime zest.
    -Add the lime juice, season to taste and serve with avocado and the grain of your choice. Lovely!

    Okay people when you make this give yourself more than 5 mins. Let the onions cook properly, let the spices roast properly, let chickpeas and tomato cook out properly. Don't serve with an avocado and you've got yourself a delicious curry. Good work!

      The Craft I agree! I like the chickpeas a bit softer and I prefer everything a little more cooked apart from the coriander. Lovely 👍🏾

    It took me 12 minutes to make this because I don’t have a twin, but it was AMAZING!!! So delicious!! I paired it with Jasmine rice. Sometimes I will adjust a recipe to suit my tastes, but I followed this recipe exactly and it’s really good!!! I already have requests to make this for our family functions! I will make this forever!

    My daughter and I just made this together and it was absolutely delicious! It took us about 20 minutes or so as we weren’t in any hurry and enjoyed the cooking process, but it only took us 5 minutes to eat!

    I just made this today and it's one of the best vegan meals I've ever had. I'm half Burmese and this actually reminded me a lot of the curry my grandparents make, minus the meat and dairy. Anyway, kudos and many thanks to you guys for the amazing recipe 👌🏻

    Just made this and it is amazing. I did add around 10 minutes to the simmering time and also added alittle cauliflower (had a quarter head) shallow fried and paper towel drained.
    I have been looking for good vegetable alternatives to meat for ages!
    Accompanied by some quinoa, brown rice and wholemeal flat bread. Delish

    I cooked this dish tonight n was a total success, it took me around 45 mins cuz I used fresh tomatoes n fried the onion n other ingredients with enough time to develop flavour. Soooo delicious, I didn’t add that much hot spices n my 18 months old loved it! THANK U 😍

    I watched this video yesterday...immediately went to the grocery store to buy the ingredients I didn't have...came back and made the chickpea curry. Shortly realized I've been missing out lol This chickpeaa curry is SOOOO GOOOOD, its full of flavor (the ginger is a great touch, quick and smells amaaaaazing!!! Definitely a staple for me.     I successfully made this recipe x 6 and dehydrated it to take backpacking! It came out so good. I am taking it on my hike of the Pacific Crest Trail in 3 weeks. I purchased powdered coconut milk (coconut milk is fatty and hard to dehydrate) and added while re-hydrating...worked like a charm! Thanks! I will think of you guys each week when it’s curry night!

      only really in the mountains, but it's cold enough everywhere else, it gets down to near freezing many nights,
      haven't checked melbourne's weather recently, but canberra has also been fairly wet and miserable

    I made this dish two days ago. It was amazing! I let it simmer for quite a bit to make sure there was no tin taste from the tomatoes, and so that the flavors melded together. DELICIOUS! It will become a staple dish from now on!

    Love Lauren's comment! I idiosyncratily (probably not a word) avoid coconut anything but these recipes still come out brilliantly. This is boring and anecdotal but my family lived on the island of Domenica for a year while our Dad was thinking of developing an hotel; very good that he changed his mind and lobbied for it to be designated as hands off eco territory like the Galapagos, always proud of him, still missed. IF you really like coconut, there was a drink that was stellar there; fresh coconut liquid and flesh, split down the middle, ditto sugar cane and lime juice. It was really too good to be true. Also my sister and I did the world a great service by saving the lives of countless giant frogs, called locally mountain chickens, (7 and 9 yrs respectively) by following the guys up the extinct volcano and making holes in the burlap bags. We kept one, named Charlie, who ate all the insects in our house. Will never forget that year.

    Thanks so much. Loved this. I did this, but I tweaked it. First, I did it with no added oil. I didn't miss it at all. Additionally, I started with adding 1 tsp cumin seeds, 1 tsp cilantro (coriander) seeds, 1 star anise, 1 bay leaf, and 2 cardamon pods (slightly crushed). Then I added the ingredients as you suggested. Except: I added 2 cups of spinach and a cup of chopped up cauliflower.
    Doing it your way took me about 30 minutes- including prep, but I still appreciated the speed. Doing it with my added stuff takes me to about 45 minutes. By doubling your recipe, I had enough to last me for 3 weeks!
    I love your videos and will continue to learn from you two. I usually follow the recipe exactly the first time, and then add my own tweaks in subsequent trials. You guys are awesome. Please keep them coming!

      Bonus: (I forgot to say) Save the chickpea juice from the can. I used it for a "buttercream" frosting that knocked people's socks off and now I'm eyeing macaroon recipes- aquafaba (as it's called) is incredible.

    Love you guys!! Your videos are so energetic and enthusiastic you've inspired me to start cooking more!!
    I've made this 3 times over the last week, first time I found it a bit bland as for me a whole tin of coconut milk is too overpowering on the other flavours, 2nd attempt used a coconut block instead but that time the curry lacked a creaminess and was a bit too strong so third attempt used half a can of coconut milk and I thought it was very nice!! Thanks for this recipe and all the other videos, without them I never would have tried this and I feel as though I'm enjoying my cooking a lot more!!

    This made a Gorgeous curry! I had all ingredients except the fresh ginger. Also, I used normal (not lite) coconut milk. I also added one small honey-nut squash (cooked-just microwaved in bowl of water), and peas. I cooked mixed vegetable quinoa for the side. This curry is so wholesome, satisfying, and comforting...the second I tried a spoonful from the pan my body involuntarily smile...I felt like a child. If you don't add the squash or peas and make it exactly like they say, you have yourself a wholesome 5 minute, comforting curry. I'm addicted.

    Those onions are no where near being cooked once you put the tomatoes in xD The recipe is great though, although its similar to other currys you've done.

    I subbed dry milk and water for the coconut as I was out, and used coconut oil for the frying. All spices from dry, including garlic and onion. All in all, very good, and easy. Thank you for sharing!

    Coming back here 3 years later and I must say I STILL use this recipe. I now use fire roasted tomatoes, a whole onion, the whole lime , and a little extra ginger for sweetness. It's absolutely delicious this way!!!

    I'm Indian myself and loved this curry! I did put a little spin on it by adding some finely chopped kaffir lime leaves (I ran out of coriander!), and it tasted amazing! it sort of turns this into a Thai-Indian hybrid :)

      Krystle Nelson yeah.. you can. But unlike coriander, which is added at the end as garnish, The curry leaves would be the first thing you should add in the hot oil to allow them to splutter and fry up and season the oil.
