Chickpea and Curry are a match made in heaven and when you throw in tofu the vegan staple you're in for a winner. This came out absolutely amazing!! I swapped out the kale for spinach and green onions for regular onions. I also added fresh garlic and jalapeños and red chili powder, and Garam Masala. Super easy and delicious!

HappyPear Year! 😃 We have 3 tofu types in the market. Besides firm and silky there is something in between and it is good mainly (or almost only) for scrambled tofu.

I’m a big fan of eating and cooking with tofu. Tofu is seriously underrated. It is so versatile. I want to try this recipe. I make cooking videos too. So many people are shocked with how we can make tofu look & taste so good! 👍🏻 thanks for sharing!
I’ve made this 3 times now and love it! Wasn’t keen on the tofu first time so next time I used roast butternut squash instead. Just so quick, easy and full of flavour. This is going to be a regular in my house!

There's actually more than 2 types of tofu. There's silken tofu which is very soft, and used in Asian countries for desserts usually. Then there's soft tofu which is best in scrambled tofu; firm tofu which can be used for frying to make the outside nice and crispy; and extra firm tofu which much more robust and holds it's shape when cooking.
And there’s regular or medium tofu, the type most used in Japan in stir fry, in miso soup, and dishes with sauce. And there’s fresh tofu, kinugoshi-dofu in Japan, sundubu in Korea, which is made and served in restaurants. If a tofu maker is near you, going by in mid morning might get you warm, just made tofu.
I have never seen coconut cream like that before. Is yours very solid because it's cold there? (I'm from Australia, aka always fucken hot)

I use a jar of salsa as my curry base. It has everything I want to start with, tomato, onion, pepper, citrus, cilantro

Looks amazing. Wish I could eat this but I'm allergic to coconut. 😥 Why is coconut in everything tasty these days...
Am keenly make this dish, but I’m not allowed any fat (Doc orders). It’s easy cooking without adding oil to the pan, but any ideas what to substitute coconut cream with?
The only down side to this stuff is the coconut milk. I wish someone made a half calorie version. The regular version tastes best. The light version is way less calories, but just doesn't quite have the taste.
I made it ,loved it, my husband not a fan of veg he loved it, I intend to make for a small group for 15 people should double it ,,it is for a gathering Can you please help me out

I am confused. I thought they had healthy courses to encourage people to cook oil free but some of their recipes are with olive oil which is no different heart-wise from seed oils like canola, corn oil, etc. Thanks for making the vid nonetheless. I will try to make it oil free...

The recipe is fine - but 5 minutes? You must be kidding... It took me about one and a half hour... (okay I used normal kale, but still...)
I’m flying in on your chickpea curry with spinach and sweet potato curry, thanks to ye 2 I discovered I was not f**king up with the coconut in a can, I dumped so many 😣 but now I am wiser

Just a suggestion, it will make so much difference to the taste, if you smoke and activate the spices first, and then brown the tomato puree for a bit. And after that goes the coconut milk etc.

Made a half size batch adding a clove of garlic and reducing the tomato by about a third as I've noticed these guys are a tad tomato-happy. I intended to eat it today and tomorrow but it was so tasty I finished it off.
Made this and even my non-vegan husband liked it (minus the tofu which he doesn't like). It was delicious.
