LEARN HOW TO MAKE AN AWESOME LENTIL + CHICKPEA RICE RECIPE TONIGHT!
LAY HO MA (how's it going in Cantonese)! When two of my favourite ingredients come together, magic happens! Join me in this episode and learn how to make an easy lentil and chickpea rice recipe tonight!
Ingredients:
1/2 cup brown rice
3/4 cups water
1/4 cup brown lentils (pre-soaked)
400ml canned chickpeas
pinch + 1/4 tsp salt
pepper to taste
1 tsp smoked paprika
1 tsp avocado oil
1 red onion
1/2 cucumber
1 tomato
30g parsley
2 tbsp lemon juice
2 tsp za'atar
2 tbsp tahini
2 tbsp olive oil
Directions:
1. Preheat the oven to 375F. Rinse and drain the brown rice a couple of times to get rid of the excess starch. Add 3/4 cups of water and set aside. Drain the pre-soaked lentils and add to the brown rice. Heat up on medium high heat
2. In the meantime, rinse and drain the canned chickpeas and add to a mixing bowl. Season with a pinch of salt and pepper, smoked paprika, and avocado oil. Toss to coat, then spread onto a baking tray lined with parchment paper. Bake in the oven for 25mins
3. When the water on the brown rice beings to boil, give it a really good stir. Then, cover and cook on medium low for 15mins
4. Dice the red onion, cucumber, and tomato. Roughly chop the parsley. Add these ingredients into a large mixing bowl
5. After 15mins, turn the heat off on the brown rice and allow it to steam further for another 10mins
6. Make the dressing by combining the lemon juice, 1/4 tsp salt, pepper to taste, za'atar, tahini, and olive oil
7. When the brown rice is done, fluff with a rice paddle. Add to the mixing bowl along with the roasted chickpeas. Add half of the dressing and mix to combine (taste and add more dressing if desired)

Hi there, i'm not one who regualrly leaves reviews or comments.. but i had to say we loved LOVED this recipe.. i watched this with my 7 year old daughter.. who said mum this looks delicious !!! Lets make it! We had almost everything apart from canned chickpeas! And flat leaf parsely! So today for dinner we made this! My 3 year old and 7 year old daughters couldnt get enough of this ! Infact my 7 year old has asked to take the leftovers for lunch for school tomorrow! I want to say Will, we as a family really really appreciated this tonight.. a simple yummy nutritious meal, that my kids were excited about.. after a very stressful week, was so lovely.. it brightened up our week in a way we cant explain! To make your own Zatar: Mix together dried thyme, oregano, sumac, and lightly toasted sesame seeds.
To make Tahini: toast sesame seeds, cool, put in food processor to make a paste.

I learned to love the Canton cookery, as well as Vietnamese home cooking, while working at a restaurant owned and run by a Fong family. Oh, how I miss those exquisitely simple and flavorful meals! The owners fed me their traditional dishes, not on the menu. So I am happy to find you and follow your vids, dear one!

Can’t wait to try it, it looks delicious. I know that most chefs are not colorblind, and yet they all call a purple onion, red. At the end of your video, when you were describing the dish, you switched and said that the colors, including “purple . . .” At least you confirmed that you do know the difference between red and purple.
The vegetable's English name is red onion, even if the actual color is purple. If you said "one purple onion" people would just be confused.
This recipe kinda reminds me of tabouli salad. So fresh and healthy!

Hi I just love your recipes and your easy and simple instructions. I always say you feast with your eyes, such vibrant colors yummee. My mom use to cook the rice and lentils separatel and then add them together, but when I got married over 30yrs ago, I only had one pot and through the lentils with the rice and found out that it takes the same amount of time to cook.

This looks fantastic, Will! Question, brown rice takes way longer than 15 minutes to cook, in my experience. How are you getting it and the pre soaked lentils to cook at the same time so quickly?
I've just been making my shopping list for this recipe and lentils take 30 to 40 minutes to according to cooking instructions. I guess we'll have to go by trial and error to start with. Maybe even cooking in separate pans! Good luck.
It's 15 mins with the heat on and a further 10 with the heat off (don't take the lid off or it might cool too quickly). Combined with the overnight soak of the lentils it should be enough I think.
Only way to be sure is to try it! 😀
Dry chickpeas, beans and lentils are inexpensive, save space, store long-term - and best of all, don’t waste cans in recycling. Soak overnight or for a day, cook in instant pot, slow-cooker or stovetop and salt and season as much or little as desired.

I love smaller pulses (beans) because I don't have to soak them. I feel that soaking beans and then draining the liquid loses some of the flavor. 😊
@@user-mt4tf5gx2u Can beans be boiled in the same water they are soaked in to retain some of this flavour instead?
@@zeddybear257 I do it, but with smaller beans cause they cook faster (e.g. black/turtle beans - my favorite) - I rinse them, then bring them to a boil (with a lot of salt, haha, and sometimes I add a few cloves of garlic in there - adding more water if I need to), then simmer until tender.
However, I don't use the same water if i let them soak overnight, for example if I'm cooking chick peas or red beans - that water could get me "sick".
But, I must say, canned beans are my "guilty pleasure", - they're so soft, and the brine is so flavorful - it's because the companies _pressure cook_ them after they are packed and sealed inside the can (with even more salt, haha). I notice that my dried beans are always a bit firmer than canned beans. So, I often cook my dried beans twice. The second time, I quickly stew some tomatoes, onions, more garlic, sometimes chilis, water, then i add my cooked dried beans - and cook those for an hour until i can't see the tomatoes anymore. 😋
Only ever used dried beans in all recipes. Much better.

Those are ingredients that we use to make a Mediterranean quinoa salad I’ve even added kale or spinach for more greens if the parsley isn’t available. Mediterranean diet is healthful, flavorful and delicious and this fits in perfectly. Thanks for sharing this one!

I made this for my evening meal today, I didn’t have zaatar spice so I used fresh ground ginger instead. Everything else I had in the house this turned out so good. I really enjoyed it.
