Hi there, i'm not one who regualrly leaves reviews or comments.. but i had to say we loved LOVED this recipe.. i watched this with my 7 year old daughter.. who said mum this looks delicious !!! Lets make it! We had almost everything apart from canned chickpeas! And flat leaf parsely! So today for dinner we made this! My 3 year old and 7 year old daughters couldnt get enough of this ! Infact my 7 year old has asked to take the leftovers for lunch for school tomorrow! I want to say Will, we as a family really really appreciated this tonight.. a simple yummy nutritious meal, that my kids were excited about.. after a very stressful week, was so lovely.. it brightened up our week in a way we cant explain! Thank you so so much! ❤ this will be added to our weekly meals.. love from Jazmine, Emilio, Beatrice and Ilaria (originally English, now live in Sicily)

You are the best when it comes to sharing your recipes. There are a lot of vegan chefs that do not put down in the description below the ingredients I'm not sure why but they do constantly push their books so unless you buy the book or keep on stopping the video you don't know what the real ingredients are. Who does to you Thank you again for sharing the ingredients and yummy recipes
Yea, his takes just add a different flavor to the ingredients. So far I've enjoyed all that I've made using his recipes. It's a good twist to the usual Indian masaledaar khana which we enjoy :)
This is a keeper, I may sub quinoa/ amaranth /wild rice I make instead of rice, I love the way he uses tahini and zaatar, growing up eating these, and the whole tasty combo and balance of nutrients flavors and textures, yup!
Veni, Vidi… Recipe read yesterday. Lentils in water overnight. Started getting ingredients ready at six o’clock this morning. Completed the recipe. Cooled it in the fridge. Than in a few thermos for a cycling lunch with a friend. So delicious… and so healthy. Vici!
I love wholesome recipes like these and made this today. I used olive oil instead of avocado oil, as I didn't have any, and replaced the cucumber with chopped celery and the tahini with a nut/seed spread ... the result was delicious ... thank you!
I just made this today, exactly as written. It is so good! Top marks from both of us. I know it serves four but there are only two of us, sooo…😊. Needless to say, we devoured almost all of it. Thank you, Will. I’d like to add that I bought the Za’Tar spice and it will not go to waste. It’s a lovely blend.

Cynthia, You will love this recipe! It's easy and as you can see, contains many ingredients common to Lebanese and Middle Eastern cooking! It's SO delicious!!
Dry chickpeas, beans and lentils are inexpensive, save space, store long-term - and best of all, don’t waste cans in recycling. Soak overnight or for a day, cook in instant pot, slow-cooker or stovetop and salt and season as much or little as desired.
I never had eaten colcannon soup before. I made this version today and it was delicious. It was good even before adding the cashew cream, and super quick to make too. It was ready before I was :-) I left the red potatoes unpeeled; it adds a bit of color to the soup, along with the carrots. This soup doesn’t need much liquid, unlike other soups. I used two cups of frozen chopped onions and celery, fresh carrots, plus one half of a small cabbage.
This looks fantastic, Will! Question, brown rice takes way longer than 15 minutes to cook, in my experience. How are you getting it and the pre soaked lentils to cook at the same time so quickly?
I've just been making my shopping list for this recipe and lentils take 30 to 40 minutes to according to cooking instructions. I guess we'll have to go by trial and error to start with. Maybe even cooking in separate pans! Good luck.
It's 15 mins with the heat on and a further 10 with the heat off (don't take the lid off or it might cool too quickly). Combined with the overnight soak of the lentils it should be enough I think. Only way to be sure is to try it! 😀
Can’t wait to try it, it looks delicious. I know that most chefs are not colorblind, and yet they all call a purple onion, red. At the end of your video, when you were describing the dish, you switched and said that the colors, including “purple . . .” At least you confirmed that you do know the difference between red and purple.
Love this! Have been cooking brown rice and brown lentils lately. Bought a big bag of Za’atar a while back and use it in EVERYTHING! Always have chickpeas on the shelf. This will be easy to put together! Thanks!
Ts pronounced like za' ter. It's a Middle Eastern spice blend of usually thyme, sesame seeds, salt, and sumac. It's savory and slightly sour. You can get it easily in most international stores, middle eastern markets, or in the international aisle of the grocery store if you live in a bigger city. It's delicious on eggs with olive oil and some warm pita or just with the pita bread and olive oil.

I really enjoyed this! It has a unique flavor and it’s not overwhelming. I’m really looking forward to the leftovers for lunch tomorrow!
🙌🏻🙌🏻🙌🏻
This was so delicious! I made it with barley instead of brown rice, and sprinkled pumpkin seeds on top to serve. My chickpeas took a lot longer to crisp up in the oven, so I had to be patient, watching the video while my tummy grumbled. So worth the wait!
That sounds delicious! Glad to hear you enjoyed 🙌🏻
Wil, for those of us that collect your cookbooks, would you please consider indicating which cookbook we could find the recipes from your videos? Thanks for inspiring me! All the recipes I have tried so far have been awesome!👏
Hiya 🙋🏻♂️ Will keep this in mind for future episodes. This one here has yet to make its way into a cookbook 🙌🏻

I’m really enjoying it today for lunch!!! Thank you!!
I adapted, yesterday made the quinoa/ amaranth/,wild rice and lentils, came out lovely and Made The chickpeas, like to make in p cooker with kombu etc. and the dressing, yum!! Love zaatar! Then today took a good portion a big lunch of that and added the fresh veg, like a mid-eastern salad! And your rice and lentils also mid eastern, my family calls it m’jedra.
The dressing is amazing!! I am so happy that I came across your cooking channel. I have been looking for healthy ways to feed my family. I just made this and my kids are asking for seconds before we even sat down to eat firsts!😄
🙌🏻😁 That’s awesome

Hi Wil,

Thank you for your awesome and healthy creations and books! I'm really enjoying them!
This looks amazing,I love your cooking. This dish one looks delicious, and as you said easy to make. If it’s not quick and easy, I’m not interested 😉 Thank you so much …
again yum and so good for you. Wish I saw this earlier, I just ate basmatic rice and only put in some miso. What I love is the mix of raw foods with cooked. I made soba noodle salad yesterday....fresh carrot, red pepper, ginger green onion, cucumber, sesame oil, soy sauce and the soba --so good. Two of my favorite I always have in the house: Za'atar and tahini.
