I tried this yesterday and i came out well. I fried some salmon fillet first then use the remaining oil to make the sauce. After the sause was complete i added the fillets and some spinach and let simmer for another minute. I love it. The ingredients were easy to find in Jamaica so that's a plus.

i LIVE for your recipes- i just made this without the wine and instead of cream i did milk and that made it very liquidy but then i cooked some pasta straight in the sauce and that seemed to make it thick and nice. i could’ve added some pasta water to help balance everything but i was so hungry. definitely gonna try again
Made this dish today was delicious i also added some tomato paste to thicken my sauce and pasta water because i served it with pasta added some paprika thyme oregano as well and was so good definitely will do it again
This is how I made it: -2 tbs of Butter 🧈 -2 tbs Olive Oil🏺 -8 Oz of sliced mushrooms 🍄 (But wished I had used 16 Oz) -1 tbs of minced fresh Garlic 🧄 -1/8 tsp Salt -1/8 tsp Black Pepper -1/2 cup of White Wine -1 cup of Chicken 🐔 Broth -1 cuo of heavy/whip cream -2 cups of fresh Parmessan cheese -1 tbs of fresh thyme leaves Additionally (and optional), I also added the following: -1/2 tbs of Worcestershire Sauce -1/2 cup of Gruyere cheese 🧀 -3 tbs of minced white Onion -2 tbs of cold Butter🧈
@@Rita50 use other types of cheese, they're saltier but cheaper, and add more heavy cream and less salt then. But leave out the wine... bad cheese and good wine don't mix up...
OMyGoodness. This one looks yummy and pairs well with pasta and steak dishes... BTW, is it okay to use white wine instead of red wine? IMO, white wine gives bettee flavor than red wine for sauces..

@@janedoe5749 like when the pan is on the heat. Just add a bit of cheese and when it's off the heat, add the cheese in then otherwise the cheese just clumps with the mushroom. I make this with pasta. So add the cheese when sauce is mixed with that.
@@ohyup5567 try flour (like in bechamel sauce) you'd want to sautee the mushrooms first, set it aside, and make Roux from browned butter and flour. Pour in broth and mix in the mushrooms afterwards. I personally liked to add browned onion tho, it helps to get the brownish color and its sweet and savory flavors are great to combine w/ mushroom 😋
Replace the wine by Porto reduced it before adding your stock then reduce it again then add your cream and at the very end the finish the saus with fine chopped parsley instead of thym and for a steak don't add the cheese. By the way i am a belgian chef trained with michelin star chefs.

Agreed. Lemon juice. But try the wine! The alcohol cooks off if that's what you are worried about. Totally safe for non drinkers and adds beautiful flavour
2 handfuls of mushrooms butter 5g olive oil 5g a cup of Porto or Brandy a cup of chicken stock a cup of double cream a spoon of fine chopped parsley salt and pepper to your taste.
Just substitute with more chicken stock. The wine does add some needed acidity, though. Maybe a dash of lemon juice to cut through the heaviness of the cream?
SOS !! HELP! I tried to make twice already this mushroom sauce. But my parmesan cheese just never melted!!!! Damn. Firstly, I bought block then I grated myself in the finest grater; second, I did’t pour all of them altogether at once like the above video did( Thought it wil clot if poured altogether at once). Still, even second time is a failure. Help !
Not possible. Parmesan should melt in heat. 1) Are You sure it was a real cheese not cheap fake cheese(in such case there should be written "cheese product not cheese"? 2) maybe it was frozed cheese(some shops froze cheese to get longer selling life which is awfull but You can see it by checking iff cheese is breaking apart when you slice it.

This is how I made it:

I recommend using a block of parmesano cheese and grating it yourself, dont use the pre grated ones from the super market. Fresh is better.

Grape juice / apple juice / vinegar. I’ve used a mix of grape juice and applecider vinegar, it works decent enough.
