Even though you get higher broadband speeds, you are still restricted to 4 video streams on most of the ATT DVR's. 6 if you have the 1tb DVR. So even though you say you can have unlimited STB's, you cannot use more the 4 or 6 streams at a time. All STB's can be connected via cat5/6. WiFi will still be poor in a large house since the Gateway is not a good wifi router.
Multimode fiber is not necessarily faster than coax with DOCSIS 3.0 (cable internet). In fact FTTH is designed and built with the exact same layout as coax, a shared main distributed in a neighborhood (node). The main difference is that fiber isn't susceptible to noise like coax is. DSL is limited by distance and the amount of data that can be sent over 2 wires. Cable companies run fiber to the node or to the curb and have the hand off to copper at that point. What most people don't realize is that most of the time they will NEVER use the full capability of their internet service because most websites are limited by their upload speeds. 100% wrong. GPON is not the same as DOCSIS. DOCSIS is a noisy tech with alot of overhead. GPON is passive (passive optical network). The "main difference" is that DOCSIS is not as good as fiber, because fiber is already so fast. Not even DOCSIS 4.0 will keep up. Thats why cable company are abandon coax instead of docsis 5 docsis 6.
