works great. i love that it has stainless steal pot inside ua-cam.com/users/postUgkxG-7WiT7ocumjytOpHDFt632PL0pxXRAg and not the one with coating. we used to have a coated pot before, and the coating slowly peels, and i am sure went into the food that we cooked. Absolutely love stainless steel, and will not use a coated product again.This pot has many settings and many buttons, and i need to sit down with a manual to figure out which setting to use. I used the basic functions, and even though i am not technologically skilled, i turned it on and assembled it without any help.Very satisfied with this product overall.

A trick I learned if you’ve over salted a dish is to cut a potato in half and throw it in and simmer for about 20-30 minutes! It will absorb some of the extra salt and restore the balance of flavors!

My five year old granddaughter informed me a week ago that she loves Italian Wedding Soup, so I am so glad I came across this recipe. I can't wait to try it!
I made this last night turned out really good. The meatballs are amazing. I went with tube Basil instead of the real thing. Thinking I'll use fresh basil next time and maybe combine the garlic broth with some chicken broth. It's definitely one I'll make again and dial in the flavors to my liking.
Mmm... It looks and sounds so good. ATK did one that is more labor intense and not in the instant pot but one step they did was beat the meatball mixture in the mixer to keep the meatballs glued together. I forget the exact science but it does make for tight meatballs that don't fall apart even after freezing. I recommend you to all new instant pot users that I know. You rock!!!
I made this for dinner tonight on a cold windy February day. OMG. This is freakin awesome soup! I didn’t have any Aci de peppe in the pantry so I used orzo instead. I left out the fresh basil, allergic and used fresh escarole instead of spinach. Used fresh garlic too. Even my picky husband ate two big bowls and said it was the best. Who am I to argue?
I grew up eating this and yours is as good as it gets!! But I had to add the raw beaten egg after it was finished. My hard core Italian Mom said " Now" it's perfect!!

Thanks for posting this recipe! Love your recipes Jeffrey and I have been waiting to find an instant pot recipe for Italian Wedding soup. Will try this and compare to my stove top simmered version that everybody loves. I am Italian and make Italian Wedding Soup just like my mother and grandmother did. My ingredients are different from yours but everybody I know makes it their unique way. My recipe has the vegetables, beef meatballs, lots of chicken and escarole instead of spinach. Think I will make a batch the traditional way and a batch with the instant pot and have a taste test with all my friends! Thanks again!
Lovely recipe! A tip from Sweden (we do a LOT of meatballs in my country): Put the whole mixture in a piping bag. Add a bag clip at the top or keep it tightly rolled. Put it on the counter, squeeze out let’s say one inch (every time - then you get the exact same size on each meatball). I use my right forearm to squeeze out the mixture, “cut” it with my left hand and then roll each ball. You should see our Christmas-deli-meatballs here in Sweden. They are a third of the size of yours in this video. Your size here is almost a little too large for an ordinary meatball in Sweden too. Again - lovely recipe🌷🌷🌷

I've never had Italian Wedding Soup, if anything it's a southern Italian dish, and we lived in Northern Italy for many years, so I've been curious, but not overly so. I figured, what the hell, I keep passing over this recipe, let's take a look. MADONNA MIA! Che fantastico! Mi sembre una meraviglia! I can see grandma's face, with the traif and the cheese and who puts weeds into soup? The weather forecast for Christmas Eve and Day is for snow here in the south. That means the markets will be decimated, I need to get my butt of the chair, pick up a pound of sweet Italian sausage, some fresh basil and some chop meat. Noch a mull, caro, grazie mille per la ricetta. Facca subito! Addendum: I couldn't wait for Christmas. The soup is amazing. Minor changes: I found fresh sorrel at the market when I was picking up the basil. If you don't know about sorrel, ask your mother about chav - it's the disgusting green stuff they drink around pesach to complement the livid pink borscht. It's quite good! Anyway, wilted the basil with the sorrel. The meatballs, polpitini. One of your competitors uses finely diced orange peel in with the meat - a trick from his Sicilian grandmother. I couldn't resist, you shouldn't either. 2TBSs in with the meat. Lemon would be equally good. I added a small chopped onion to the soup, I don't know that the shallot did anything, but I used both. And since I don't like spinach, I used rainbow swiss chard for the green cap, pre pressure cooking. The soup, the meatballs, all are amazing. Of all the recipes I researched, Jeffrey's is unquestionably the best. This one is a keeper!

I need to use up a bag of meatballs in my freezer. At first I was going to make yet another yummy batch of your great Pasta Italia but I decided as much as I love that I wanted to make something new so I decided on this! I was going to use ditalini left from your great Minestrone recipe but I didn't have quite enough of that but I do happen to have some orzo so I'll be using basically half and half orzo and ditalini. Should be great when I make this tomorrow! I'll post my results on my FB page and the Instant Pot Community with of course a link back to your recipe. Thanks for another amazing one! Growing up every wedding served this soup and my mom made it on special occasions. I remember sitting at the table making the tiny meatballs but we made them much smaller than this, took forever! lol
With the salt in the sausage, boullion and celery you probably don’t need to add any. I would not because I like to top soup with Parmesan cheese! Will definitely try this. We always used ground turkey for the meatballs growing up but will try the sausage mixture. Thanks again
Definitely concur with your salt warning. I used better than bullion but did not use a low sodium version and am really glad I did not add any salt to the recipe. Was borderline too salty without adding any. It is a really good recipe though....will make it again.

Kudos for using celery greens! A lot a people don’t use them, but they truly add soooo much flavor.
Yes, when I buy my celery I always look to make sure there are lots of leaves... Yum.

The innermost part is the only part I truly love. The rest is great is soups, etc., but I’ll devour the greens raw

If you find the spinach is a bit slimy, try chopped kale instead. It holds its shape better and tastes remarkably the same in most soups.
