    Thanks for showing the non mushy canned product, something I was wondering about. Bring us more IP Max canning videos. Off of your expert video on the canning in the IP Max, I ordered one. Love all the science you provided. I'm a long time canner but now older and just me and hubby, so the IP Max fits our life.......thks for filming Jim.

      ​@@grlnexdoorable unfortunately independent lab tests and the manufacturer has admitted that IP Max is not safe. I bought two based on her recommendation! I'm not using mine anymore for pressure canning. 😢. Bought a stove top All American 10.5 quart.

    So glad you mention “not” using bacon in canning. I’ve watched a couple of video of canning baked beans and bacon was used. Since you’re my final word, on canning safely, I’ll be using salt pork. Thanks for your expertise delivered with wisdom and kindness.

    Hi my name is Arlene Lumper, I live in the state of Washington and have starting canning again, I have bought the Max instant pot and did my first canning again in the pints which works great for two people. Thank you for show all of us how to be a safe canner. I remember back in the 50, 60's when my mother was canning and WOW thank God for the updates and do's and don'ts when it comes to canning.

    Rose, you should have stressed baking or Barbados molasses. Many northerners think it’s okay to use blackstrap molasses and it’s not a good molasses to cook with. Baking molasses is from the first drainage of sugar cane. Blackstrap is from the last drainage of the cane and is also the most bitter. It’s always most desirable to use baking or Barbados molasses but everyone does not know this.
    I’m so glad you do a NR. So many times I’ve watched people canning with the Max & they select Quick release! I keep waiting for them to find a cracked jar but it hasn’t happened yet. Or let’s say, they haven’t shown this yet. Thank you for the video.

    My Grandmother made a similar baked bean, except that the armoatics were shredded and diced tomatoes added and left in. Yum, yum.

    Thank you for all the good information! I purchased my Instant Pot Max (previously had an 8 qt.) and used the canning feature to put up leftover spaghetti meat sauce. I kept an eye on that temperature and it was over 244* for nearly an hour. We saved room in our freezer, and for that I am thankful.
    I will still be using my 23 qt. Presto pressure canner for larger batches, but the ability to do a (very) small batch of leftovers is wonderful!

      Wonderful! That temperature for that length of time ensures that you were in the kill zone for more than enough time!

    Hi Pam, great video. When i was a kid, i loved Libby Beans. As a adult i have been searching for a recipe that tastes like them. I have tried so many but havent found it yet. Seems to me simple ingredients is the answer. Libby's never had all the extra flavors the beans of today have So i am thinking this recipe is definitely worth trying. I think Jim should be at the end of all the videos tasting the food. Anyways thank you.

    Completed 8 jars two days ago. Husband opened one jar today to go with his lunch. He loves the baked beans. I have white beans soaking now to make more. Your recipe was excellent.

      The USDA does have guidelines for seafood so if you follow what they say yes you are able to safely can seafood. The processing time is generally a bit longer.

Nightshades cause a lot of symptoms for me and where I’m at all the baked beans and bbq sauces always have some kind of tomato… I’m making this now although I only could find great northern beans to use. I will try the crockpot method rather than the oven as I don’t have a Dutch oven and I will be using my presto canner :)

    ALERT!!!!!! INSTANT POT MAX will be DISCONTINUED in SEPTEMBER 2021 as I just learned when going to the Instant Pot website. That was all I needed to know to get off the fence and finally buy one today. Got it for a good price, Yippie! Will be glad to finally own a well designed Instant Pot brand as the Zavor Lux Max recommended a couple of years ago by America's Test Kitchen is an awful design both in body and panel prompts. Ironically they are finally recommending the Instant Pot model Duo Evo Max. Thanks for the salsa tutorial Pam.

      Izzy--I could not find that information on the PI web site. There was a different model with Bluetooth capability that was discontinued. I am glad you got one! I might get another one just to have a back-up.

    Oh this is perfect timing! I just ran out of last year's stash. I baked mine for 7 hours and still had a lot of liquid left over... Going to try by your method this time. Would it be ok to substitute the water with vegetable broth when making the molasses mixture? I sub when I can for more dense nutrition.
    I must have used a cowboy canning recipe because it called for bacon, which is thinner than the salt pork cubes, and I had about 1 or 2 little pieces per jar. It was a tad on the mushy side, but the taste was the bomb! No more cowboy canning recipes for me since I found your channel! 😄

    I absolutely adore you and appreciate all your videos 💜. I am trying to make butter beans and I am following your quick soak method. I will also cook them with aromatics and follow up with cooking them in the oven. Hopefully I can pull this off and not make them mush.     I really liked both videos.
    Would you please provide the recipe source, bake temperature, and canning upgrades (larger Quart Batches, Canning times, etc. if not in the recipes)?
    Call me lazy but I like to make full Pressure Canner batches; my Canner holds 18 pints or 7 quarts.

      Thanks. Yes, I prefer larger batches as well, but not before I have tasted the results to see if I really want a big batch. In this case, we will most definitely make a large batch!

    Beans should have 1" of head space (with ratio in jar of: 3/4 beans to 1/4 liquid - that ensures there will be liquid above the beans prior to the lids going on).

    Thanks for going the extra mile to get this recipe just right. If using a pressure canner, would the jars need to be timed for meat (because of the piece of pork) or vegetables?

    Loved this video, can you please do a video on candid yams. I only see yams with huge hunks, can the sweet potatoes be cut small, the size of french fries, can all the seasoning plus sugar be added then pressure cooked? Please advise. Thanks in advance.

      Thank you. We have a video on sweet potatoes cut in chunks. I see no reason you couldn't add a heavy syrup and some spices so long as the syrup is not thick like honey or pancake syrup.

    Question, did you say that you have the Insta Pot Max or (I Pot Max)???? I am thinking that water bath canning a smaller amount in the I Pot would be better than in a water bath canner.

      It is an Instant Pot Max, but I often call it the I-Pot Max. You can use any Instant Pot for water bath canning, but it will only hold 4 pint jars at a time.

    Question… When using the Instant Pot Max for canning, should I always do a “natural release” of pressure? Also, should the “keep warm” feature be “on” or “off”? Thanks for your assistance! 🙂

      My stovetop pressure canner doesn’t have an option to release pressure any other way than naturally. I turned off the keep warm function. And I do not use the delay start feature. I haven’t pressure canned much, but I don’t think there’s a recipe that it could sit in there for hours before being processed…. But, I don’t know why those features are options in canning mode?

      Just be sure it is safe for pressure canning. It needs to reach 240°F and maintain that for quite some time. Or, you need to verify it is at 15 psi for the processing time.

    I'm wondering if you can cook the beans in the instant pot using the USDA recipe (ingredients). It cuts the time down. For example softening the beans takes only about 15 minutes un the instant pot and another 15 minutes to finish cooking them.

    We (redmonds) salt (with maple syrup and black pepper, for 10 days) and then smoke our pork belly and call it bacon. It’s not cured, but tastes delicious. Can that be used? Is the smoking an issue or only the pink curing salt with nitrates/nitrites?

    I was sorely disappointed with the pork & beans I canned last year. Your's look delicious (& I trust that you're telling the truth when you say they taste good) I don't have an insta-pot. Is there anything I need to know to use a pressure canner instead? Can I double the recipe so I have a canner full?

      That was our test run to see if we liked them well enough to do a big batch, and we did. So, yes, I will be maybe even tripling the recipe and canning lots of pints in my regular Presto pressure canner, and so can you!

    I wanted to make ham and bean soup with my ham bone and can it. Is it possible to do this or does the USDA NOT recommend it? BTW....there are numerous videos of folks using various ham and bean soup recipes to can but I trust your videos because you always reference guidelines.

      The USDA gives quite a bit of leeway for canning your own recipes for soup. The basic rule is to not make them too thick. If you just use the ham bone and not a lot of ham since it is a cured meat, and keep the ratio to about half solids and half liquid, you should be OK.

    Would baking this with a ham bone be safe? I know ham itself isn’t considered safe but if the bone is picked clean….would that be ok?

    Shouldnt this video be taken down since the manufacturer has said IP Max is not safe for pressure canning? I own two based in your test of the IP Max, but further tests by independent labs has shown it to be unsafe. The size is the main issue. Too small to guarantee heat up and cool down times are correct to meet USDA and temp displayed isnt necessarily the temp inside the pot, its the progammed temp. 😢

      Hi Anna Net from Australia! Please do not use water bath to can this recipe--it would not be safe. You can make some and freeze it if you have a freezer. Thanks for joining us from so far away!

    So I hear all the time about cured meats and not cooking them, which I never do. However, couldn't you use uncured bacon or uncured pork? Just curious. I did see a USDA baked beans recipe that used bacon in it. The recipe said line the bottom of your dutch oven with bacon.

    I have cooked beans in the IP and they turned out great, with no presoak. I have not tried any of the baked bean recipes yet in the IP. I saw this and asked myself could you do a baked bean IP recipe and then pressure can it?

      Baked beans can be quite a thick mixture, which could cause problems with heat transfer into the center of the jar. It is best to use a tested recipe so that doesn't happen.

    hello, I'm making this recipe in my new presto digital canner. What temperature did you bake the bean at in the oven? Also were they refrigerated and canned the next day. Where the beans warm when you added them to the jars?

    Can you not avoid all the soaking and cooking in an oven by just pressure cooking the beans and molasses sauce together and then canning? Do you really need to add vinegar? Thanks for mentioning about not canning bacon or ham, I really was hoping to add small cubes of a cottage butt or bacon in with my beans. 😢

    Pam, Question-- what is the amount of Salt Pork? And could we sub the same amount of bacon? Getting salt pork here is nearly impossible here. Also, what's your thought about using a crockpot on high for cooking the beans vs. the oven?

      It was a cubed half-inch and yes, I think you could use bacon instead. If you prefer the crockpot, that will work just fine.

      If you can find a tested recipe or one that is very similar to how you do it. I don't know what ingredients you use, so I can't say for sure.
