Great video! Thank you so much for the instructions. You did a really clear and thorough job of teaching us how to use our instant Pot for canning. I used to can all my vegetables for the year in a great big huge pressure cooker , but now that I'm unable to have a huge garden anymore, I'm only canning a few jars at a time, so using the instant pot is a new experience for me. Thank you for this video. I was able to can for the first time today using my Instant Pot Max and some fresh green beans that I got on sale. It feels really good to finally be able to do this. Thank you again.
Remember, this doesn't have to be a long chore. A lot of these steps can be done sitting down watching television. My own grandmother would sit and llisten to the radio and later the television whilst she snapped beans and filled jars.

For anyone reading, you can only can in the instantpot Max, it has a canning button. It safely reaches 240-250 for canning duration. I believe you can do jelly in other types.

Did you sterilize your jars first? I just got the IP max last night and haven’t used it yet. The instruction book says you should. Also, I’m at 213 ft. altitude, do I leave it at zero because the lowest it 2,000 ft. and do I set it at low or max pressure. Sorry, I want to be safe. Thank you.

I bought an Instant Pot Max last year because I wanted to use it for canning but I have always been nervous to try green beans. Thank you for your very informative video. I noticed that you used the “keep warm” function. Is that necessary? Would it cool down faster if that option was not selected?
I turn it off when I use my Max.
I did my first canning yesterday. I did 4 half pints of ground beef in my new IP Max. What I’ve found is the “manual” is practically useless for canning.

It was very frustrating how changing altitude wasn’t explained better. I’m at 30 ft. I finally gave up and left it at zero. Thank you for you covering that!
I use my IP Max all the time for meats: make sure your settings are correct (feet not meters, Fahrenheit not Celsius), put in water up to 1/4 of the jars. Remember, if you use hot broth with your meat use hot water in the canner (if raw packing without broth, cold jars use cold water in the canner). Put the lid on, then tap Canning, high pressure (15psi), 75 minutes, natural release. I do not crank the rings, just finger tight-rings are only to hold the lids in place, if they are too tight steam cannot escape and you get siphoning.

So when you filled the jars with water you said it was 140° at most... so my question is.... is that right because i didnt see any steam at all when you poured the water in. Am i wrong? What temp should the water be?
I said at most, my water was about 120 degrees out of my tap.
My pressure pot stops every time and the code flashes Altitude. I'm 30 ft above sea level and I have the altitude on 0. I need help

I have the Instant Pot Ultra 6 qt pressure cooker. Assuming this will work fine for canning my vegetables as well. I hear the 1/2 tsp canning salt for a pint container, but you mention vinegar in the bottom of the Instant Pot as well, how much should I use?
Only the Max has the canning function I believe.

@@tonya2me yes, 1-2 is enough. I don't put any in , as my jars come out clear and my pot. It must be because of our water. I do put lemon juice in at times instead. It helps get rid of lingering odors.You will need to take the gasket out and soak it in a mild bleech water and air dry. Over time it can holds smells. I even put mine out in the sun. I need to get a six pack of gaskets to rotate. I also wipe the lid well where the gasket sits. Make sure the gasket is seated well again.
The Instandpot Pro has the canning feture aswell
I always believed that when you can air is purged out of the jar when it heats up. The air is replaced with saturated steam. When it cools it seals with full vacuum. Do you have any issues with sealing? Are you concerned about trapping air in the jar?
Can you do this process with a regular instant pot? I don't have the max but I do have some farm fresh beans that I need to can before they go bad.
No, you need the canning function button that the Max has.
I have a question? I put the altitude on 30 ft as we are by the coast and everything was working fine until the countdown. It got down to 10 minutes then stopped started flashing and code was ALT so do I start completely over and put 0 altitude? I have 4 jars of green beans
Do you have the Max? I do, and there is nowhere on it to set to 30'. On the Max if you are below 2000' you leave altitude on zero. Only the Max has the canning function, which safely reaches and sustains the correct temperature.
Why do you soak them is it necessary?

You cannot use a regular instant pot. The Max is designed to can as well as other features.
Do you need to choose a pressure setting on the Max?
There are two pressures to choose between High and Low, low is 6 psi suitable for canning blueberries for example. High will be for the low acid foods (vegetables and meats). See the USDA’s guidelines for the particulars of what can and what cannot be canned.
I am at 867 altitude, what ft do I put mine on?
I have a max and it only goes down to 2000 ft on their dial, so I just use that.Im at 600 feet. I might have to contact the customer service. So far all I've canned at Max pressure, has sealed and stayed above 240 F , usually 245-248 F . I always use natural venting option and I turn off the Keep Warm button as I don't want it keeping warm. The machine is not plugged in until the lid is put on. Then it will say OFF, then set for canning.
Just found a video that said if you are below 600 m then you don't need to change the attitude setting, leave on zero. Why they didn't put that in the book I don't know.

I have done it and it works. However, I do not recommend it. Temperature is proportional to pressure. The regular Instant Pot pressurizes to 70,000 Pa or 10.15 psi. I'm at 320 feet (basically sea level, 14.7 psi). So 10.15 + 14.7 = 24.85 psi. Water boils at 238.5 F at this pressure. That's pretty close to the magical botulism spore kill temperature of 240 F so to compensate, I extended the soak time from 75 minutes to 90 minutes. However, and the reason that pressure canning is not endorsed in the regular Instant Pot is that this would not be safe at a higher altitude because you would not be able to get to a high enough temperature.
Do you have to remove the rings? If so why ?
I would remove them to double check the seal and make sure it is on there tight, also clean anything off if jars overflowed or any residue built up there, then go ahead and replace rings but not too tight at that point, to ensure it isn't the only thing holding on the seal.
