    *I love the instant pot so much! I have made quinoa, chicken, chili, asparagus **MyBest.Kitchen** and yogurt in it so far. The only thing that didn't work great was the asparagus. I cooked it for 1 minute and it was still overdone. It is a timesaver and uses much less energy than my gas stove.*

    I am going to buy the Max. Because of your video and a video by Rose Red Homestead. She tested it out for canning raw chicken and other foods and used a scientific gauge to measure the heat in one jar in each batch and it passed the pressure canning test!

    Thanks for the info on the differences. I have so many IP that it is ridiculous to even think of getting either of those. If I was going to I would probably get the Evo Plus. I really love that new inner pot. Such a great advancement.

    Thank you so much! I was struggling to decide between these two. In the end it came between the ability to pressure can and the design of the pot inside the evo plus. Knowing that I can't get the bigger size and caning isn't usda approved yet on the max made my decision easier. Thank you again

    Thanks, Nili! Great review! I very nearly bought that plus for canning, but the size was not as large as I needed so, whew on that one! Based upon your review I would want the original plus over the Evo. I actually just broke one of my 6 qt. I will be in the market to replace that one pretty soon so I really appreciate the time and energy you put into this video.

      I've heard you can't use the air fryer lid for that model because of the handles it has. Has it been a problem for you? I have this model as well but I haven't considered an air frying lid for that reason. ( Maybe she covers it in this video, and it hasn't gotten to it yet)

    Great comparison. I still have the very first Instant Pot IP Duo and it still works very well. I have purchased so many Instant Pots for my family. Every Daughter and grandchild has one, except the youngest at 15 it's school, make up and boys. But once she goes off to college you can bet she will be leaving with an instant Pot in tow. I love watching your channel it is one of the very best! Oh I did purchase the instant pot Duo Crisp 11 -in-1 Air Fryer for my daughter on you recombination.

    I have an Instant Pot. Come here to your channel to get ideas or tips on cooking things. I should use it more but find being at home all day, I use my oven in the winter (helps heat the house) and grill outside in summer. I’m slowly getting use to the IP.

    I broke my instant pot lux mini and was thinking of replacing it with an upgrade one same size.
    I like the evo most because I can use it on stovetop. Sometimes you need higher temps to brown meats and I like the Handle.

    I’m about to receive my first Instant Pot. It’s a Duo Plus 6 qt. I’m really excited to use it!! It’s in the truck in the neighbourhood and on it’s way!
    Your right, since I ordered my pot on July 7th there have been three new instant pots added to the lineup!

    Thank you for your informative video. Can you set the Max to do either a 10 minute Pulse Release or 10 minute Natural Release? Most of my recipes call for a 10 minute delay before releasing pressure.

    Nili, you do the BEST reviews out there, thanks! I was good with my 2-qt cosori & (2) 3-qt ultras. I drooled for (I just call the blasted thing Evo) that handled pot/induction/sous vide, but not enough to buy a way too big for my needs 6 qt. Then your review of the CrispLid, more drooling & hopes to replace 3.7 qt air fryer. I went with the 6-qt Evo & CrispLid & very happy to replace air fryer - no more musical counter space & just cook pot-in-pot for smaller amounts. 💟 I hold out, but really don't expect either model to release 3-qt, too small for features is my gut feeling (boo!)
    Funny, the Evo completely disappeared from Amazon 11/ 24. I jumped the gun & bought @ Bed Bath & beyond, freaked out by the 'disappearance '. Evo back on Amazon 11/25 for $95! Then went back to $119 + coupon - missed that sale😢
    Great features on Duo+, if not for the lack of handled pot, I think I would have gone with the Duo+ for more added features. Thanks for the great comparison! Solidified my choice of Evo was good for my needs - grateful to you for that!

    Rose red Homestead ..That woman with the gadget is a scientist and I trust her with her knowledge; she did an extensive evaluation of the Max and has deemed it safe for canning..if we are waiting for USDA to complete we will wait forever, the funds just are not there for research on every appliance that come down the road..I have ordered mine and waiting for it to come from China..haven’t been able to find the Max around here.

I love the upgrades with the size, the handles, the flat bottom for the stove, the improved release valve, the auto seal and the simplicity of the front buttons!     The Max is wonderful! I am canning (low-acid) with it while I type and I can tell you that it has not failed, even for a moment, to maintain the proper temperature and pressure. Canning is the biggest plus to me. Stove top pressure canning can be stressful but the Max is not stressful at all!

      Here is an independent test on the canning capabilities of the Instant Pot Max. It passes the temperature tests for pressure canning.     I've watched several of your videos and they've all been very informative. I'm trying to decide between the IP Duo Plus and the IP Max. The Duo Plus (NOT EVO) is currently on sale in my area. The Max is currently about $70 (CAD) more. I do like the auto venting feature as well as the touch screen. If I was to do any canning in the Max it would be Salsa so fairly acidic. I also really like the custom sauté setting.
    This will be my first Instant Pot and I'm unsure whether or not I should splurge and go for the Max or just get the Duo Plus for now and watch for future releases from IP. Any advice you can give from your experience with these appliances would be greatly appreciated.

    I think the max pressure is mainly for canning. Since Rosered Homestead did such awesome testing on it and showed her methods and results, I use it all the time. I want to learn to do with high acid foods, but I think pressure brings too much heat for high acid foods. I wish I knew how to water bath can in it though.,

    I bought the max in a nano-second, having my ultra quit me in the middle of cooking three artichokes! Have yet to use it, but will do soon. I have gone through the original model, the plus, and now will use the Max. When my Ultra died, I felt like I lost a leg...I use it almost daily, and now, I cannot get along without it. I do love the simplicity of the original though!

    Thank u for your quick response. I researched the IP’s bc I have never used one. The only reason I got the max is it said it had an extra safety feature. I am scared to try mine 🥴 I don’t know how much it will help me if it takes a long to reach the air pressure temp. I am not home very long each day. i am going to rewatch your videos. Do u have a direct line, ha!

    The sous vide function on the Duo Evo Plus I have runs about three degrees low. I called them to find out how to calibrate it, and they did not have a good answer. Someone was supposed to return my cal, and it hasn't happened.
    I like the flat-bottom pot, and the handles, especially for the 10-quart size. The cord is not removable, and that kinda sucks. Supposedly it has a "real" steaming option (no pressure) that I haven't tried yet. The lid rests more toward the back, which is kinda convenient. I wish it had an automatic release option, and I wish "keep warm" defaulted to "off."
    I wish the sous vide had an "after" setting and the timer kept running. Would be nice if it optionally went to 130ºF and stayed on, as a hold temperature, but its temperature is wrong anyway. I still find it more convenient to use for sous vide than my Anova, though, because it's already in the kitchen.
    My impression is this company is "moving too fast" and "doing too much" for its own good.

    It all depends on your needs. I have an old pressure cooker( Nesco) over 15 years old that is my go to. I bought the Instapot Max for canning and it is great for me since I tend to do small batches. It has been scientifically tested and exceeds the requirements. I love it and have had no problems so far.

    I’m thinking of getting the evo duo plus because its an 8 qt. , has a flat bottom to inner pot and being able to put it on the stovetop. I don’t really want to spend that much money but just don’t think I’d be happy with the other models.

    Hello Nili. Thank you for your informative review of both machines. You were right on spot with each one. I recently purchased the 6 qt. Evo Duo Plus, that I love and also own the IP Max. The only drawback, for me, with the Max is the steam release. There really is no "manual" control for it. Even when I've set it for "pulse release", it can be messy and needed to cover the vent with a kitchen towel to keep food from spewing all over. Most of the time, I just leave it on natural release to avoid that altogether. But, on the other hand, the IP Max does have some great features too. The Duo Evo Plus permits you to have complete manual steam release control, and really love the design of the new inner pot. How fantastic is that! Also, I am giving away my IP 6 qt. Ultra for the very same reasons that you've stated in your video. Keep up the great work for us.

      With the Max you can always manually release the steam with the touch screen control. At any point just tap until you get to the quick release icon.

      @@IndigoNili For some reason the the touch screen will occasionally refuse to respond to vent command. The icon won't shift to QR and the valve won't open leading to overcooked food.

    Evo's flat bottom pot + induction = dual joy + warp speed. Starting nearly every recipe on an 1800 watt NuWave portable induction now then transferring hot to IP. Cuts the time to pressure especially with soup and chili, saves wear on the IP heating element and keeps the IP clean especially when sauteing. Cooking time is the same just faster IP pre-heat.

    Great review! Got the Instant Pot Max as a gift last summer. Absolutely love it! Being able to set the type of steam release up front and then just walk away is a terrific option. Am looking to buy a second Max as a back up.

      @@randnandc With the other models the user needs to be present at the exact moment of completion of cooking to manually release the pressurized steam if the recipe calls for quick release. Actually the MAX falls short in not allowing the user to program a delayed quick steam release as called for in many recipes, typically two to fifteen minutes after the cooking cycle completes.

      @@mmesmer6447 Hi! Im also a pressure cooking newbie and just received the Max as a gift. Had no idea about pressure needing to be immediately released with some recipes. Was planning on making basic meals like stews, chuck roasts, ribs, shredded chicken for tacos, maybe a whole rotisserie chicken. Would I need to immediately release for any of those? And could I just use the basic IP recipes found on youtube while using the Max? Thank you for any help you might offer!

    I just got my IP Max. I have a Duo as well. I got it for the canning. My understanding from IP is that prior to the pandemic they had sent the IP Max to McGill Uni to test for the USDA approval process, but Covid got in the way. I have been canning most of my adult life, and I bought a pressure canner about six months ago. I wanted to can soups and low acid veggies, but at 74, and 5'2", when I put that huge heavy thing on my stove, I had to stand on my tip toes to use it. I really was hoping the Max would allow small batch canning, which is perfect for me.

    I have the ultra 6 qt. Knowing we will be getting another one(grand kids and i). This vid is really helping. Im smart, thats what i keep telling myself. But when it comes to this type of stuff and even tho there are instructions to read as to make comparisons between one and the other, it hurts my brain which then causes my brain to wander into nothingness. I go duh for a while. But you spit this stuff out as if it second nature in a language i can compute. I wouldnt be surprise if you have a PHD in instant potting. The best comparison review on this matter i have ever seen, and beleave me i have seen many... You have a nak for this...are you a college grad home maker? I give a hint into the mind of most men as of why we don't read instructions. (Epilepsy) We need pictures not a bunch of words!!! My oldest granddaughter is amazed by you. And thank you for that..

    One import new feature of the Evo Plus it that not only can you put the heavy bottom pot on the stove it has a flat bottom and not convexed like the others and that is a big plus for me. I have to agree that a touch screen is nice but, the less that can go wrong the better when it comes to electronics. On the downside, at this point, the air fryer lid will NOT fit the Evo Plus.

    I have, & love, the Duo Evo Plus. I’m wanting to proof & bake bread but all the recipes are for other Instant Pots & say to use the yogurt button to proof so how do I use the new proof button? Now I’m wanting a Max too 🙄

      Put your dough in a bowl, (ceramic or stainless steel, something that conducts heat well is best I think) and put the bowl in a water bath that goes about halfway up the sides of the bowl in sous vide mode, and set to the proof temp you want. You can go as low as 78F ( and as high as 203F) . Cover the bowl with an aluminum foil hat or cover t
      so the water doesn't condense off the lid and drop down onto the dough (although there's not a lot of condensation to tell the truth at say 78-90F. )Works great.

    What glass lid size can be used with the inner pot when used on stovetop? Instant Pot separately sells a glass lid. 2nd question, can you use a regular inner pot (without handles) with the Duo Evo Plus?

      9" lid for a 6qt instant pot and 10" for an 8qt pot. No, you can only use the inner pot with handles in the Evo

    I absolutely love everything about the Instant Pot MAX but I do not trust it's canning feature. I have already used it's sous vide feature and really love it for extra flavourful meats. You can saute your meat before or after sous vide. You can even sous vide meat from a frozen state and then saute it.

    Hi! I have a question, I got the Duo Evo Plus last month. Just wondering if you can hear a slight hiss on yours where the inner pot handles stick out? I returned my first one because of this. Got the replacement one 2 weeks ago and it is making a slight sssssssss sound where the handles stick out. It comes to pressure and there’s no steam leaks or condensation and it cooks fine. I’m just wondering if that slight ssssssss sound is from the new design where the handles stick out of the side of the IP. The model is so new I’m not finding lots of answers online. Hope you can help. Happy holidays!

    I notice that after u reviewed the Max I never see u use it in the recent videos. I bought the Max yesterday after watching your comparison vidoe. I stayed up late watching your more recent videos and do t see u using the max. Now I dont know if I should keep it. I definitely want to cook steel cut oats, rice pudding, soups, and chili. Also, can I brown meat in it then cook with veggies in the same pot? If not, which do u recommend? I dont know anyone that has an instant pot. Any help would be appreciated it. I would like to buy the correct one before the sale ends. Thank u. Btw, so glad I found your videos.

      The main reason I don't use the Max in video (especially using the max pressure setting) is because it's not the most common Instant Pot model. I like to make videos for the most people so I choose to use my other models that are more common. I really love the functionality of the Max. My biggest complaint (mentioned in this video) is the amount of time it takes to come to pressure. Beyond that I absolutely love it... especially the touch screen and the automated steam release.       Just use pressure setting for 1 min or slow cook for desired time, of course pip.

    USDA Apparently does not give ‘approvals’ for ANY canner. The only thing that Instant Pot should get is a versified certification of their device’s ability to attain pressure. That is not done by USDA.

    So I didn't know that should be a tray for the ice and have just been dumping ice in that little bowl in the lid and it does speed up slow release quite a bit. I think this is brilliant and I wish my other models had this as well.
    My favorite pressure cooker for the past five years or so has been a Breville (which was way ahead of IP when it was released) just died so instead of paying to fix it I bought the Max. Aside from missing the ceramic inner pot which I much prefer, the Max seems to actually surpass the awesomeness of Breville. Now I have both of the pots you feature (and a few others as well.) So thanks for doing the video. Has the USDA approve the canning feature? From the stuff that came in the box I'm not seeing anything saying it's not actually approved. Finally I agree that the hybrid of these two would be pretty close to perfect. Although now there is Pro Plus Smart that looks pretty awesome... But I got the Max this time because I found it for only $59 so I couldn't justify the price difference, otherwise I probably would have gotten the Pro Plus Smart instead.

    I need to steam 2 hours which wasn’t a problem with other instant pots, or veggies, just added 2 cups of water and never took care of the water evaporating , how can You do this with the max since it has no Steam button ? You have to have another just to be able to steam ? Thanks

      The steam button is just a pressure cook setting. Use the pressure cook button instead and it will do the same thing

    I heard the duo evo plus has steam mode that doesn’t require pressure to cook, that the other instant pots don’t have. Other pots require pressure to steam. Is that true? Thanks for the awesome comparison!

      Yes, I believe that's true. I haven't experimented with it yet though!

      judy kay Slowey-Sly I don’t know if Indigo has had a machine die but I have. I bought my first Instant Pot in Dec 2016. Last year I gave it to my best friend so she could play around with it and the second time she used it she said it gave her an error message that meant that she had to contact the company. Since it was my machine she told me about it. I told her I gave it to her because I had many other IP machines and I didnt need it anymore. I wanted her to learn how to use it because it is so easy to use. She really didn’t like what she did do in it before it died. She gave it back to me and I plugged it in and it gave me the same error message. Basically it needed some type of new electronics in it and I wasn’t going to send it back. It wasn’t under warranty anymore. So I think that it took about 2 years for it to die. I kept all the good parts like the inner pot, the sealing ring and the accessories I gave her so now i have extras. Anyway, I wanted to answer your question even though I’m not Nili.

      My 1st IP just died. Had it for 5 1/2 yrs. It would’ve lasted longer but the cord separated and exposed the inner wires at the base. I used it 1-2x a day, 3-5x week to make brown rice, farro, various beans and soups. I just purchased the Max.

    How do the pots compare to one another?
    Comments and q’s:
    Evo: I love the handles
    Evo: I love that it is a more solid and much easier to cook and wash than on my former Ultra Mini “stainless” pot.
    Evo: I like that it can be used on stove top, but can it be used on grill on a fire pit/camp fire?
    Evo: It’s heavy, especially compared to my former Ultra mini “stainless” and non-stick pots.
    Evo: it’s huge pot.
    Max: Is the pot a real stainless that cooks and easier like in the Evo or is more like the cheap “stainless” in the Ultra pots?
    Max: Is the pot as heavy as the Evo pot or the weight of a 6 qt Ultra or one of the older styles?

    The USDA does not “approve” or “certify” any type of home pressure canning devices and never has. So don’t hold your breath waiting for your favorite pressure canner to be “approved”. There are some companies that market their product with misleading fancy looking seals on the packaging that include the acronym USDA, which probably tricks a lot of customers into believing that their product has undergone some kind of government testing and certification, but if you read the tiny print on the package you will see those companies are only making the claim that their product will perform according to USDA published guidelines.

    Nili, great comparison review. Did you just get your hair colored, or is it my imagination? I just read yesterday that permanent hair coloring has been linked to breast cancer. Just thought I 'd mention this. As always, great video.

      @@IndigoNili Good to know. I permed and dyed my for a lot of years to thicken it up. When I had to have a quarter sized skin cancer removed from my scalp, I quit. I've also had Non-Hodgkin Lymphoma. I know that chemicals can play a big part in causing cancers, so I can't help but wonder just how much of a part they had in my cancers. Just like people to be able to make an informed decision😊. Even though a "causal link" isn't a one-hundred percent guaranteed link, it is enough to make me decide to stop something that I have control over and that isn't necessary. Hope you didn't mind me posting about this. Wasn't trying to be a busy-body, just wanted to help those lovely children of yours keep their great mom around for a long time😊, and perhaps help someone else who might read this along the way.     DUO EVO PLUS IS PROBABLY MY BEST CHOICE.. IT'S HAS A TRACK RECORD AS TO THE MAX....I DON'T NEED OR THINK THE IMPROVED MAX IS WORTH THE MONEY OR FOR WHAT I NEED IT FOR.....I'M HAPPY WITH WHAT I HAVE...NEW AND IMPROVED IS NOT NECESSARILY BETTER...

    I have the Max and chose it for canning mostly after watching the video from Rosered Homestead about it. She has tested it for the temperature inside the jars with a logger she bought and the Max exceeded the 240F so she was very pleased. See it here

    i think that the steam release thingy is dangerous because of children and accidents,what if a child just happen to be near that pressure release when it goes off on it own? i mean that is scarey,yes its convenient but i dont like that but i ordered a duo evo plus,did i make a mistake? omg i hope not,wish i would have found this video before the 16th ; (

    I returned the Max. I took about 20 minutes to pressurize and start the count down and they call that instant!
