    ... when you go to open a jar and it was not sealed... you don't eat it. PERIOD. The End.

    I know this video is over a year old, but I just saw it and am so glad I did. I've been canning for decades the way granny taught me. I checked all my canned foods (Yes, the rings were on) and found a few false seals. Thank you for literally saving our lives. Just goes to show you....you are never too old to learn.

    Excellent advice! I learned how to can from my stepmom, and she was a stickler for cleanliness during canning. She also takes the rings off the jars and doesn't stack them on the shelves. She taught me what should be canned by water bath, like peaches and tomatoes, and what should be canned by pressure, like venison. It's too bad a lot of young people don't get taught these skills as much any more.

    This is so true! I've just started canning and I put a batch of Beef Stroganoff up to cool. After a day, I was able to remove the rings and support each jar by grasping only the lid - everything was sealed. As my pantry grew, I was admiring my supply when I put my finger on the lid of one of my Stroganoff jars ... I notice the center button was up. Curious ... I picked the jar up by the lid and it supported the jar, but still, the button on the lid was up. I carried it to the kitchen and when I put the jar down, the lid slid right off. Now that was a false seal! What happened was that during the canning, I overfilled that jar and some of the Stroganoff siphoned out and contaminated the rim of the class as it was under pressure and sealing. After a while, the debris on the jar's edge started to decay and that destroyed the vacuum but held the lid on kind of like a glue.

    Little late to this video, but this discussion happened between hubs and I this week. His mom and granny removed the rings, my mom and granny left them on. Both of us thought it was personal preference. After watching this, we will be removing the rings from now on. Learn something new every day. Thanks!

    When my Papaw and my Grandaddy built the pantry in their houses, the shelves for the canned goods were only tall enough for a quart jar. My father later built my mothers pantry the same way. I guess they knew the same thing you were talking about. I remember helping both of my grandmothers and my mother with the prep work for canning and the actual canning and they taught me the same way. Not a lot of boys got the benefit of learning to can and cook from their grandmothers and mother, but I loved it. My mother has taught all of her grandsons to cook also, so another round of boys will be able to feed themselves without going to McDonald's.

    Thank you for this. My grandfather has been canning all my life (34 years) and then some. It doesn't matter what he cans, you can guarantee 1/4 to 1/2 of it "just goes bad." He leaves rings on. He stacks things. He is careless with the cleaning and says "You're going to boil it so it doesn't matter." I don't eat any of it, and never wanted to do it. I figured canning was a great way to just waste half of whatever I wanted to put up, so I've been freezing things. What I have learned from your video and several others is that it isn't canning that is the problem, but carelessness :)
    I wanted to get into canning because I saw a video in my recommended feed about canning meats. I enjoy simple things like chicken and dumplings and beef stew. From what I am seeing, if I do things properly, there is no reason I can't can chicken in broth and have that part ready to go, or can some stew. All without having to worry about a large portion going bad.

    I am almost 60 years old and have canned for years and years. This is the most informational video I have ever seen. Thank you Patera, I really did not know not to leave the rings on or not to stack the jars. Again TY and no matter how old a person is there is still room for learning.

    I actually read the USDA guide to canning cover to cover when I was first learning how to make preserves and let me tell you you don't soon forget the section on botulism. It made me hypervigilant about making and maintaining a good seal and storing properly. Great video! Creators sometimes mention taking off the rings but no one has ever said don't stack your jars, that's good advice.

    I found canned Peaches in my Grand-father's house 7 years ago ( Exp date : Nov 1981).
    Those canned peaches were better than any I had eaten in my life; many years of soaking in cane sugar for the win.
    Delicious food for my Scotch whisky hang-0ver that morning !

    Wow, I have been canning for years now and have heard that you should never leave the rings on and never stack one directly on the top of the other but never really understood the reasons until your video. OMG!!!! I get it now! I vow here and now that I will NEVER, EVER do it again. I am canning a lot from my garden today and will employee these two basic but oh, so necessary techniques! Thank you for sacrificing your fencing time to educate us and help save us from harming the ones we love.

    So glad to see you embrace "doing it right" instead of following grandma's old ways. So many of the young bloggers//vloggers use sketchy methods and follow with 'well, it works for me'. Canning is a wonderful skill, but food safety should be a priority over 'easy'. THANK YOU.

    Thank you so much for this video!!!!! Have been waterbath canning for about 2 months, just got my pressure canner 3 days ago. Yesterday canned a bunch of pinto beans. Back when I canned my 1st batch of mixed berry jam I took the rings off. My husband contradicted me and said to leave them on. So Yesterday helping me he took all the quart and pint jars down to the long term storage. I was watching this video today and he listened in on it. So I told him I'm going to take them off. He admitted I was right the 1st time. Low and behold I found 1 of the pint jars to have a false seal!!! Thanks again this video helped so much!!

    I'm 84. Did wtr-bathing forany years---lasy was 1986. NOWi am beginning to really can, with pressure canner. Loving every moment, love seeing meats and meals in jars on my shelves
    Also dehydrating. Patera, I watch you every day and have learned so much. Your talks echo my thoughts. No one here to discuss these thoughts with so it's just me-- and I'm prepping a lot.

    I couldn't agree more. Also, keeping the rings on prevents you from washing the jars well before storing. Leaving the rings on also contributes to them rusting. Maybe you are short on rings because they are just too rusty. Have you ever checked the price of new rings? You might as well buy a new case of jars! My mom always stored the rings on metal clothes hangers that she would open up with pliers, then she could hang them to keep air circulation going helping them to stay rust free. Also make sure the rings are washed, rinsed and dried thoroughly before storing. If I have some rusty rings I reserve them for giveaways, always assuming I will not get the empty back. My kids are the worst violators of this 😎

    I was fortunate because the Mississippi extension service had a canning class. First thing I learned was not to rub my eye when making pepper jelly :)

      After buying my first jar of cranberry jalapeno jelly at a church fair last year, I totally understand NOT rubbing your eyes. Went down real easy and then came the after burn. Yummy jelly! It numbed my tongue quite nicely.

    Hi Patera! I have been watching your channel for over a year now. I came across this video and found it so helpful. Being new to canning this summer, I was stacking my jars AND leaving the rings on so I would not loose them. I watched this video and went to the basement right away and took the rings off every jar. 2 salsa jars were not sealed. I think you probably have a lot of new subscribers and I recommend you reposting this video or mentioning it.. Thank you for your dedication educating others. Makes me really miss my Grammy at times like this. Thanks again!

    I remember asking my mother in law why we had to take the rings off, she just said we didn't have enough and needed then for the next batch. Later I learned it was a safety issue. Hubby learned the hard way that you can't stack jars. It's also a great recommendation, in my opinion, to wash jars with bleach before storing them in the pantry long term.

    Patara thank you for the safety video. I lived in Alaska for 20 years and always always took off the rings on my Salmon and Moose meat jars. I couldn’t run the risk of making one of the family members sick. And I made my shelves for pints and some for quarts so I didn’t have to stack. Alaska also had great tips in there extension office for new canners. My mom and grandma taught me to can when I was a kid living in MO. Now being back in Mo.I haven’t canned as much as I did living in AK.
    But safety is number one.

    I'm 71 and this "Rings On... OR...Rings Off" discussion has been a long but no one ever shared WHY...I'm a logic person, give me a reason. Now I have to go thru my pantry and remove the rings...Thank you for sharing..

      What I got from this was the ring holds the lid in place (loosely-not air tight) even though it's" not sealed". Or the ring is actually causing pressure points which pop the seal.....Thus the food is going bad which you could eat before mold appears.
      I never knew this, nor have I canned before. I have bought the stuff to make jam first time so yeah great info.

      The directions that come with the canner will tell you to remove the bands after they've sealed and set over night. The bands can keep a false seal, if that happens you can potentially eat some very poisonous food.

      Opening the jar should make a loud popping sound when the seal breaks. If it doesn't, then you shouldn't eat it. This even applies to food from the store. Common sense really...

    I work for a place that sells canners and jars and this lady’s info is spot on. Please also know lids are single use only. Also can within your capabilities. Don’t start with canning meat or items that require more experience and experimentation. Thank you.

      So when will you know if you can move up to canning meats and such? I'm just starting to can due to the world situation and my overabundant garden, but would also like to be able to can my chicken when I butcher. So serious question. I've always dehydrated before but decided to not just count on that.

    Important topic. My grandfather died from bad canned food he ate at a church gathering. Left behind grandma and four children under 12 years old, including my mother. I was taught to respect food prep safety.

      I am very picky on who's canning I eat as well, after seeing how some people just don't seem to take the care needed in canning, Canning is very easy, but it must be done right, no skipping any steps, and if done right its safe.

      That's so sad. What a horrible thing for your family. When my Nana taught me jam making, the only canning she did, she always insisted on proper procedures and extreme cleanliness, mostly to avoid that sort of thing. She had been an RN and had seen things like that in the hospital when she was younger.

    When I first started canning 40 yrs ago, I learned real quick not to leave the rings on. They rusted so bad that I couldn't get the ring to unscrew. Now, I take them off, wash all my jars with warm water, dry them, then store them. I also learned to put vinegar in the pot of boiling water or the pressure canner to keep the film off of the jar.

    Great information. Been canning for over 50 years. Thankful, never lost a jar of food. You must research and learn. Never get too old to learn and listen. Have always done as you are showing, but never knew why it was best to put something (boxes/cardboard) etc. between the tops and bottoms of jars, had just always done it. Somewhere along the line someone learned to do it, just didn't pass the reason along to me. I do it for convenience in stacking my canned goods and it helped me in storage space, now I know I am also keeping everyone safer. Thanks girl.

      The point wasn't that it's best to put something between the tops and bottoms of jars but if you're short on space and need to stack, then put them in the boxes that you bought the jars in and stack the boxes themselves. Hope that makes sense?

    Wiping the rim of the jar with a clean towel soaked with a little vinegar, double checking for the correct amount of “head space” & removing any and all air bubbles within the jar contents is what I learned to do when I first started. Getting creative with where to put everything was the next thing. Filled my apt dishwasher (I never used it to wash dishes/water costs $) with beef stew that I had canned. I also filled all three closets, and I have two storage units - I do not ever want to fight over food with someone at a grocery store. That’s silly. I saw what people do to one another just for toilet paper. No need for that. Hard pass.

    After years of collecting jars and using original boxes I have made dozens of crates to stack our canned goods. Lot of scrap wood used so cost was kept down. Learn quart, pint and half gallon jars all differ in size between large mouth (My favorite) and small mouth, and between manufacturers. I have a mixture of Ball, Kerr and Atlas.

    FYI...I’m a 3rd generation canner...and I took an extensive canning class...we learned water bath...these ladies were thorough...no cell phones in class...I washed my hands so many times...got a cute apron at the end😇...canning rocks...I may go canning this weekend

    I have just started canning this past growing season (yes I am homesteader) . I grew up on a farm but was never around canning foods.. I watch how to videos , you tube ect.. learned last year when canning potatoes never leave the skins on no matter how well you clean them.. same with carrots. I was lucky the lids bowed after couple of days.. (was thrown out) I learned from that mistake with out getting sick.. I Did not know about the rings and stacking them.. Thank you, you might of saved my life or family members life.

    THANK YOU! I did not know about this----yes, I leave the rings on; yes, I stack jars; and I keep them in the canning boxes. Uh oh! I've been doing it ALL wrong. Seems like my husband just got a new job to do---building me some canning shelves. Like you said, if you're going to do all this work, might as well do it right.

    Thank you thank you thank you!! I will definitely follow this rule! I've always wondered how you can know for sure if there is something growing in your cans. Now I know, just allow the lids to be able to pop off enough so that air gets in and the stuff grows in plain sight. EXCELLENT info!

    I am SO GLAD I saw this! My first time canning, ever. Strawberry Jam. Six jam jars. I stopped in the middle of this video, & took the rings off. The lid on one one of my jars, just slid off as soon as l took off the band!!! I immediately put it in my fridge ( it had been right at 24 hours). I would’ve never known, had l not removed the band. False seal!!!

    Thank you for this information - grew up with canned goods and I'm sure everything was stored with rings on. I have done the same, but NO MORE. It's too easy to just remove the rings, rather than take that chance. Love your channel!

    I just did my first canning session ever two nights ago. As I went to put the jars in the pantry I stood for a moment wondering how to arrange them. I'm so glad I saw this before I amassed a collection of spoiled food.

    I absolutely agree whit this information! I have had two jars do this as well, both times were after Ball changed the lids and the way you use them during canning. I was so upset when I found out why this happened to my food. I believe Ball let those of us canners down by not letting the change be know in an more up front way. With that being said I still use their products and will continue to do so. I always try to follow all safety guidelines when canning and always read up on the procedures even though I have canned for years! I want to make sure what I am doing is as safe as possible!

    My wife and I found some plastic canning jar storage boxes at Walmart last night. You put the jars in them ( 12 jars per box.) and they are taller than the jars for stacking. Almost see through so you can make out what is in them.We found pint and quart, but did not see half gallon. Have not used them yet, but the wife bought them for something else. This video made me think about them.Great teaching video Patara, thanks

      Mike Griffin I bought one of those as well, it works great to take camping. I don't have to wrap each jar individually. Glad to hear they are at Wal-Mart

      JarBoxes are GREAT! They're better than trying to put the filled jars in the original boxes for the jars. They're very sturdy. Walmart has them at the lowest prices, unless they're on sale somewhere. As far as I know, they're only(?) available in quart and pint sizes. Not sure what people who can in pint and a half or half pints would do. They're great. I'm slowly buying more to transfer some my jars into them.

    I am new to canning and having a blast. I am so glad I saw this video and double checked all of myself jars, nothing double stacked or with rims on that have been through the sealing process. Either water bathed or pressure canned. I had several because I wanted to give them as gifts. Fortunately they were just canned a few days ago. Mistake fixed and I thank you so much!

    If you can push down on the center of the top and it pops, it is not sealed.

    Good information. After cooling, I remove the rings and clean & dry the threads, jars, and rings. In most cases i do put the rings back on very loosely, I do not crank them down at all, usually leaving a space from the lid. They can be spun off with 2 fingers easy. I do not yet have a dedicated space or cabinet to store my jars just yet and I worry about accidently popping off a lid. And I never stack them even with cardboard, etc.

    Good advice !! Been canning for 30+ years and have had a handful of false seals like that. Yuck! But no one has ever gotten sick from our home canned food. Praise God.

    You are one smart little cookie. My grand grandparents did it the same way that you did. The lids are only to cover it when opened and put in a refrigerator. You know what your talking about. Thanks

    OMG. I loved this video! I grew up with the lid on or off discussions from grandmas and moms. My mom had her shelves in the cellar built just the right height for quart jars so there was never any stacking. Not sure if she knew this or just space saving.

      I took a couple of wire clothes hangers and bent them into big rings. Made a small bent hook out of one end to attach it back around to complete the circle and left the big hook already in the hanger to use to hang the wire ring to my canning storage shelves. When I take rings off of jars before storing them, I wash them and then open the circle by unhooking the small hook I made, string the canning rings onto my clothes hanger and close the circle again.
      I have different hangers for each size of ring, so when I need wide mouth rings they are hanging separated from the regular mouth rings.
      It is so simple and makes storing the canning rings so easy.

    You have taught me something I DID NOT KNOW!! I had to pause the video, go remove my rings and unstack jars. Additionally, I found 3 jars of Cajun beans that had not remained sealed.....saved us a trip to the Doc. Been canning for 10 yrs, learned something new!!

    Great info.I've been canning for over fifty years and only had ten bad jars.When I first started I boiled poke,put it in jars and closed it up.No pressure or water bath.If course rings on too.All ten hard of poke blee up.What a mess the other jar was tomatoes and the rim was chipped.

    I like to hear the lids pop as they seal... sometimes even before they come out of the pressure cooker... wait 24 hours to take the bands off.. check the seals... wipe the jars down and recheck the seals :-)

      Thanks for the detailed advice on when to take the bands off. I have been canning for a long time and never heard that you should take the rings off. Canning is a wonderful past time but if not done right can be very dangerous. I always try to err on the side of safety.

      I also want to hear the lids pop when I break the seal to open them, so I can hear the pressure rushing into the jar. No pop when I open, the can was not sealed proper.

    Perfectly on-point video! Also on the subject of safety, for those who have the mindset that their family has done x, y, or z for a hundred years "and nobody's died yet", be aware the symptoms of botulism poisoning and stroke are very similar. In years past, botulism deaths were likely to be misdiagnosed as stroke.

    Love the kick ass rant videos, but these real life practical how to videos are really where it's at. We need to learn the skills! At 57, I really just thought I am too old and my brain is too tired to learn something new. Because of all the produce we rescue, my viewers always ask if I can, and I didn't until a week ago because I feared it. Now I LOVE IT!

    Great video and also keep in mind.................... manufacturing flaws in the lids. Since ball changed the rings from rubber to plastic a few years ago the failures seems to have went up among people who do their own canning.

    Thanks for that! I have been guilty of not taking off the rings on my jars! From now on I’m always going to remove the rings! Just as an aside, botulism is an anaerobic organism, that means it can grow without air in a perfectly sealed jar, it is tasteless and odourless! The only way to ensure you don’t have botulism is following safe canning procedures!

    Thanks for great information. I" canned and helped can thousands of jars of food and always read all the instructions and followed them. One of the older canning books I own even says that if you have a jar go bad with botulism to bury it six feet deep. I thank you for showing that jar of tomatoes. I think people just wouldn't have believed it other wise. Thank God your a country girl.
