Highly recommend getting dried chickpeas and doing them in the instant pot if you're a chickpea fiend like me. Just cover them in water and cook on high pressure for 50 minutes and you're good!

Yes, and kidney beans are so much better homemade, too. It's so much easier to grab from the fridge than have to open a can when you're doing 10 things at once already while cooking. Plus it's in the fridge... the first place you go to look for food. If you open it and see beans, rice, veggies...bamm.. don't even have to think about it. You get to spend the extra time cutting cilantro or whatever else you're using.

I save left over salsa jars, as they have a large lid on them. I cook beans in my slow cooker ( I don't own an instapot), then I transfer them to the salsa jars and premeasure them for the recipes I want to use in the future. It makes it so much easier when it's time to cook with them. If I dont' have room for more salsa jars in my freezer, I use freezer bags and also pre measure.

Hey I’m so glad you got Kale, Rose! 😂 It is literally my youth elixir. I’m 50 but people think I’m in 30s at most. Besides going vegan years ago, my skin and health got a huge boost after kale smoothies. Mostly kale, then flax seeds and water and avocado and pineapple. Can’t stop won’t stop on the kale. So full of vital nutrients for cellular repair.

Thank you for making your content regarding budget vegan eating. My budget is “watching every penny” in US. I received a gift card from Amazon for Christmas and bought spices, lentils, seeds that were cheaper online than in local grocery store. The gift was for “a treat” but can’t indulge right now. I checked every price! Time consuming but I have no choice now…

Apparently the food bank needs here are up about 400 % :( I really am careful, with feeding my family of 4, to not buy too much at once, use up what we have, first, and yeah, I just cringe at the prices when we get groceries.

I saw a tik tok where someone in the U.S bought carrots that were grown in Canada. They paid $0.88 for the bag. They're easily $4 or $5+ in Canada. How do they get cheaper crossing the border when they're grown here? It's insane.

You mean just the conversion of what Rose paid, right?
I know grocery prices in Germany are especially cheap, even within Europe, but I don't think this would cost more than 60€ here.
The biggest price point would probably be the toilet paper or the organic celery. A 20 pack of 3 ply toilet paper at the drugstore here is 7.45€ (used to be like 4.95€ pre-Covid 😭), but really the rest wouldn't be that much.

that was sooo $$! But I'm a cheapskate & proud of it. Btw, have you heard of pav bhaji? An Indian dish of spiced veggie mash with vegan butter and rolls. I resisted because my son's gluten-free, but realized it'd be a great baked potato topper. It's very delicious & economical because you can put whatever veggies you want in there. Incl, chickpeas. Just buy the spice mix at your local Desi store and you're in business.

I feel like I need to check what organic celery and the kale as well as the heart of palm would be here in Germany, but I honestly feel like this would be 50-60€ here. A 20 pack of 3 ply toilet paper is 7.45€ (used to be 4.95€ pre-Covid 😭), the cans of chickpeas and tomatoes would be like 4-5€, broccoli and tomatoes 5-6€, the paprika really varies, the all colour pack is usually cheaper than all red paprika and both can still be very expensive if not on sale, but a pack like that is like 2-2.5€ regularly, the cucumber can be as low as 50 cent, more like 1€ if you buy organic, a pack of frozen unorganic peas is less then 2€ for 1kg, edamame I dont usually buy, but I reckon two of those might be 4-5€. Bouillon cube Knorr name brand without sale maybe 2€ max?
And these prices are when you pay regular, I honestly buy frozen broccoli and only get regular one when it's on sale. Or red paprika (which is more expensive than the mixed ones) is something I'll look out for in sales.

I would suggest you not to buy and eat vegatables that are not in season, like zucchini, bell peppers and tomatoes now in Winter for example. They are forced to grow, even if they are sold as 'organic'. They are not so good for your health and skin. Besides, if hummus is so expensive and canned chickpeas are not, why don't you prepare your own hummus? I am sure it would taste much better and it would be healthier for sure.
