Top recipe! I made this for my father-in-law who is a traditional pie lover on his 60th birthday. Only difference is I added a little sprinkling of dried sage and chives to the pork stock then served it up with some homemade pickle and English mustard. He loved it so much he demanded that I walk the mother-in-law through the recipe. (I just gave her the link to your vid so you got full credit mate!) 👌👌👍👍

Congratulations for this brilliant video. I am an ex pat living in Florida USA who was missing traditional pork pies. I have to admit that I never missed much else about the UK but now I don't even have to miss the good old pork pie.
Pleased you enjoyed it. I live in Greece and really missed them so thought I'd put a video together. I guess its a bit much for someone who can walk out the door and buy one, but great for ex pats. If you give it a whirl let me know how you get on :)
I have attempted making pork pie previously to seeing this video, previous attempts were so so but hard going, mincing the meat, mincer forever clogging, using springform tins but, cooking the pies in the tins doesn’t quite work. Now your recipe and method are something very different and much easier to make and turn out fabulous, I have made 4 x4 batches of these now and given some to friends, their comments have been truly amazing, one lady who is quite an accomplished cook of the old school rates them as the best she and husband have had, especially the texture of the meat, so much so I have sent her the recipe. I have made them exactly as per your recipe and method, I can only agree with my my friends. :: better than any commercially made pie ::. Excellent Thank You
When I leave the UK eventually (it's my life's dream to move to somewhere in Scandinavia), this kind of food is what I'll miss most. People shit on British cuisine but it's the simple stuff like this that'll always remind me of home :)
Moved to the UK from Canada and I fucking LIVE for the food here man. People are just ignorant and it's a stereotype. Pork pie, pasties, sausage and mash, roast potato, cream tea, rhubarb and custard, sticky toffee pudding, mince pies, don't even get me started on curry. I'm sure some folks will say curry isn't British food, but what the west thinks of as curry is every bit British. Just the way "Chinese food" is from San Fransisco.
@@Dave-hu5hr you might not think of San Fran, but nonetheless that's where "Chinese food" was invented, in the way we understand that term in the west. Similarly, chicken tikka masala was invented in Scotland.
Hubby and I went to Scotland 2 years ago. We ate many meat pies everywhere we went and rated them. Some were ho hum, but others were so good I cried because it was all gone. In Michigan we like our pasties, the Cornish copper miners introduced them and they rock.
I didn't realise the Cornish made it to Michigan. I'd only heard about them migrating to Mexico to the silver mines. They introduced the Cornish pasty there, too, although I believe the version that the Mexicans adopted into their own cuisine is a lot more spicy than the original! Apparently the families of the Mexican and Cornish miners still have very close bonds even now.
I've already commented about the video...really good. I've made a few now but I am useless at putting the pastry into the tin. After much thought I have found a solution. Cut the pastry and place the round pastry over the pie tin. Then, gently press the pastry in the middle and then pour ceramic balls onto the pastry. The weight of the balls pushes the pastry evenly against the sides. Fill to the top, gently push down and then pour out the balls. Works like a dream.
Started making these today; but as my meat mixture, I am using ground deer(venison), a can of Grant's black pudding, and a can of Grant's haggis. I have a bit of gelatinous chicken stock that is flavoured with some coriander, turmeric, salt, and paprika My pastry is cooling in the fridge now, so I will be making the pies in a bit. If anyone is interested, I'll let y'all know how they turn out.
@@CulinaryExploration Just checked my dough, and I thought I'd let it cool a bit more, then I'll roll them out. We have the same spring forms that you use in the video, so hopefully, they will turn out like yours. I'll keep you posted!!!
@@CulinaryExploration Just got done baking them. We ended up with 4 spring forms, and one pie that my wife made. The ones in the spring forms got the jellied chicken stock, and put in the fridge for 48hrs. The one my wife made was my supper, with some piccalilli and a few pickled onions. I must say they were AWESOME!!! Not bad for a backwoods boy from South Carolina, if I do say so myself!!!
I live on the road and, one of the things I do to keep my meat lasting as long as possible is to make pies. Living a simple life, I have no fridge no oven (well, I do have a cast iron pot). One of the things I've been wanting to do for a while now, is make a decent pork pie (they don't sell them out here, Latvia). Looks like I've found the recipe! Thanks!!!
Hi - have made 4 medium sized pork pies today following your recipe. Have never made hot water crust pastry before - easy. Thank you for the inspiration. Couldn't wait for them to cool and fill with gelatine, had to eat one tonight. They are delicious. You made it all look so easy and it was. Happy New Year.
Brother, I’ve watched at least 20 pork pie vids to find the best one and yours is by far the easiest and simplest to follow, I’m making mine tomorrow with a twist, I’m cooking them in the smoker low n slow to add some flavour, my left over pork shoulder will also be smoked to make pulled pork, then I’ll make pork pies out of that too, can’t wait
Ok folks, I here in CHCH, NEW ZEALAND, make my pork pies in Texas muffin tins. I use pastry from supermarket, the savory one, same as I use for Bacon and egg pie. Cut base at .150mm. Cut top at .105mm. My pie mix is pork, some bacon, mace, sage, pepper. Cook as per, they release from tins very well. Fill with pork trotters boiled down, after they have semi cooled. They freeze well, and at the large muffin size make a lovely meal ,with vegetables, or yes on its own. Too me the filling is the TASTE, and I get 12 pies knocked out so easy. I boiled up 6 pig trotters today and will make 12 +++ pies tomorrow or next day. Cheers to ALL, and have a great New year's. This to all 29th December 2021.
Fantastic !!!!! It's good for a French to learn about traditional British cooking !!! I'm going to try this, it's a wonderful comfort food for this season !!! Thank U again !!!!
@ This is quite a way from traditional. Traditionally the pastry would definitely be lard not butter, the only seasoning would be salt and pepper and the pie would be hand raised, not using a springform. And obviously a syringe wouldn't have been used to get the jelly in lol. Looks really tasty and is definitely a pork pie, but why put traditional in the title?
Hi, I really enjoyed watching this video; awesome intro at start! Really well put together and showcasing a really humble but very delicious dish. A great watch, thank you 🙏🏻😋
As a pork pie aficionado I have to rate this video 9/10, very good you nailed it!. I tend to use 50/50 butter lard and also use 25% ground pork but that's just a preference.

In most areas, they are served cold, but in Yorkshire, it's quite common for them to be served warm. Either way, they are great with a little English mustard!
@@stevebrown3559 Some 35 or so years ago I was on a business trip with my boss travelling from South East Essex to somewhere near Holmfirth , West Yorkshire. Our host took us to lunch in a large, busy pub five or ten minutes up the road- As we had a lot of travelling to do that day, and would be in the car for hours, I opted for a “light snack “ , pork pies where I come from are ( or were), generally small, served cold, with maybe a lettuce leaf and a dob of English mustard, “This would do me fine” I thought. A small time later, our waitress brought our food, handed me a large bowl, with all I can describe as a hot, “man-size “ pie, centred in it, brimming with mushy peas! , not at all what I was expecting! She then asked, “Would you like some nice mint sauce with that chuck “? I love mint sauce, but however, southern breeding was telling me I should only really have it on lamb, and all I could offer was, “Why not?, When in Rome, , , , “ The waitress ladled on an almost obscene amount of mint sauce, handed out our cutlery, and seeing through my bewilderment cheekily smiled and gave me a spoon, saying, “ You’ll get on better with that “ , , , , Until then, I’d never seen a hot pork pie in my life, but I can tell you it was AWESOME, it was stunning, it was delicious, it was beautiful, it was mind blowing, it was heaven! And I can tell you I’ve had nothing come close since. I’ve been running pubs myself for the past 25 years and mainly work in the kitchen, I’ve tried dozens of styles of pies to see if I can match what I had that day- absolutely nothing! I relate this story to all of my chefs, I tell friends and customers I was so impressed, - but all I get in return is the same gaze I probably gave the waitress at the time . Who’d have ever thought it, The very humble, but great British pork pie .
@@johntailing5283 Great story! It also proves what I was saying! Funny you should say about the mint sauce, because that was the thing that stood out when I Googled it last night. Gravy and and mushy peas seem okay with any hot pie, but the mint sauce made me go "hmmmm..." Like you, I'm not afraid to eat like the locals do, so I would have tried it! Fantastic video and brilliantly explained. Can't wait to try it. Normally i grind the meat, but i think the hand cut is a much better idea., though not sure about the fat from the belly. I might do a hybrid version with minced belly pork and hand diced shoulder if the fat is too much.

I've got four of these moulds knocking around at home (loose bottom rather than springform, but I think they'll work too). I'm going to have a crack at this recipe tomorrow.
Thanks for using metric! I hate having to use imperial measurements. Thanks for the video and recipe, too, I might have to make this, I do love a nice pork pie 😋
Agreed. It's time for the world to stop accepting movies that use the Imperial system. Time we killed it forever. Pork pie looks divine - perfect for a picnic.
It's so easy to make a good pork pie. Better quality and better taste than anything you'd buy. And if you pack the meat into the case you don't need a ton of jelly.
Made these and wanted to love them more than you could possibly know. I generally love pies. I even tried them cold, as I hear that's the proper way. But good god were they bland. So I tried English mustard, Branston pickle, and even HP Sauce. Every bite as bad as the last. I finally warmed the sucker up. And it became edible! Not good, mind you, but edible. It tasted like a really bland sausage inside some high-quality chicken pot pie crust. Apologies for griping. But I had to balance out the comments so any other Yank viewers could be forewarned that you may need a British palate to enjoy this one.
I have made thousands of pork pies we used hot water crust pork fillet salt pepper and nutmeg. I Should have added some of our pork pies went to Lambeth place for one of the old archbishops of Canterbury'
Instead of using flour for rolling out, Rachel Allen recommends rolling between 2 layers of Cling-film. A bit more 'faffy', but keeps the proportions right 🙂

Excellent Thank You
That's fantastic Terry, I'm pleased you are enjoying the pork pies!
It's always nice to see that the chef is cute.
So much good food in the UK. No idea why people don't get that. Sad for them
@@curtmacquarrie I never think of San Francisco when I have an egg fried rice lol.. But when I think of San Francisco I think 'safety word'.
@@Dave-hu5hr you might not think of San Fran, but nonetheless that's where "Chinese food" was invented, in the way we understand that term in the west. Similarly, chicken tikka masala was invented in Scotland.
I don't know why people shit on British food !!!! It's a SHAME cause you have a lot of wonderful recipes !!!!
Oh my, that looks incredible. I'm hungry now...
Cheers!

Cheers for commenting again! Pleased you found a work around for the pastry, sounds like a great solution ! happy baking :)

I made it with a little ground juniper berries to spice... SO good
Started making these today; but as my meat mixture, I am using ground deer(venison), a can of Grant's black pudding, and a can of Grant's haggis. I have a bit of gelatinous chicken stock that is flavoured with some coriander, turmeric, salt, and paprika My pastry is cooling in the fridge now, so I will be making the pies in a bit. If anyone is interested, I'll let y'all know how they turn out.
I'm definitely interested, that's a mix and a half!

"Sit atop anything"? Is that supposed to mean something like "it will go well with anything" or does it have some other meaning I'm not getting?

Awesome, let me know how you get on!
I bought a few store bought pies and they were tasteless, the whole family loved em, especially the fennel seed ones
Thank you very much for that recipe. The pork pie looks delicious. I'll try to make it next weekend. Greetings from Germany Stefan
Awesome, let me know what you think :)
Great recipe ! Absolutely thrilled with the result !
A fabulous pork pie and your method is so much easier and more logical than so many others. I am inspired !

It's good for a French to learn about traditional British cooking !!! I'm going to try this, it's a wonderful comfort food for this season !!!

All that's missing is an eye-watering dollop of Colemans. Great vid!
End result looked great. Thanks for showing the method to use the spring form!
You and I clearly have different definitions of the word ‘easy’.
🤷♀️
And 'traditional'. I believe it should be lard not butter in the pastry.
The hardest part is waiting 24-48hrs but damn
@ This is quite a way from traditional. Traditionally the pastry would definitely be lard not butter, the only seasoning would be salt and pepper and the pie would be hand raised, not using a springform. And obviously a syringe wouldn't have been used to get the jelly in lol. Looks really tasty and is definitely a pork pie, but why put traditional in the title?
Unliked this video so I could like it again. That looks top notch

Mine are in the oven as Impost. Cannot wait for Sunday 😊. We live in Texas this will be the perfect all year round treat in this weather.
Wait 48 hours, not in my house! That pie would be eaten up in minutes, it looks delicious!

I, Nephi, having been born of goodly parents, therefore I was taught somewhat in all the learning of my father; and having seen many afflictions in the course of my days, nevertheless, having been highly favored of the Lord in all my days; yea, having had a great knowledge of the goodness and the mysteries of God, therefore I make a record of my proceedings in my days. Yea, I make a record in the language of my father, which consists of the learning of the Jews and the language of the Egyptians.
And I know that the record which I make is true; and I make it with mine own hand; and I make it according to my knowledge". 1 Nephi 1-3
Hello friends, I am a member of The Church of Jesus Christ of Latter-Day Saints. The verses above are the first three verses in The Book of Mormon. I know this probably isn't the most ideal place to talk about religion but I really do want you to know that God loves you. You may not love Him or care about Him at all, but He still will continue to love you. You are a beloved son or daughter of God. He knows you personally and He truly and deeply desires for your happiness. He loves everyone who has every lived on this earth, with a perfect equal love regardless of their race, gender, ethnicity, faith and values and beliefs. The Lord loves you more than you can think or comprehend. "He inviteth them all to come unto him and partake of his goodness; and he denieth none that come unto him, black and white, bond and free, male and female; and he remembereth the heathen; and all are alike unto God, both Jew and Gentile" 2 Nephi. He is our loving, caring Heavenly Father. We are literally His children and creations. When we were in the womb, he knew about us" Jerimiah 4:5. He knitted us and we were created in His image.
I testify to you that you and I are not a mistake. He knows the very moment when we stand and when we sit. He is familiar with all our ways and knows us personally who we are. The hairs on our very head are numbered. God loved us so much, He sent His Only Begotten Son for us, that we may be able to return and dwell in the presence of God again. The Lord has not forgotten about us even when it feels like He has. He will never forsake us. When we are happy, He and His angels rejoice alongside us. When we are sad, He heals us and lifts us up from our trials. He has always been there for us. He has always been our loving, compassionate Heavenly Father and God. Will we always be His children and people?
I testify to you that God lives and that Jesus is the Christ. Both love you exceedingly and rejoice when you are happy. They both love you so much. They love you with a love unfeigned. They will never ever stop doing good unto you. I know that The Book of Mormon is true. "And when ye shall receive these things, I would exhort you that ye would ask God, the Eternal Father, in the name of Christ, if these things are not true; and if ye shall ask with a sincere heart, with real intent, having faith in Christ, he will manifest the truth of it unto you, by the power of the Holy Ghost". Moroni 10:4 I promise and testify to you, that if you will read The Book of Mormon, ponder on its message and ask God if it is not true, you will come to know of its truthfulness, whether its true or not true.
Remember my friends that God loves you with all his heart, might mind, soul and strength. He wants you to be happy. He knows what you are going through and dealing with right now. He desires for you to return back to Him. Unfortunately, He has been misrepresented and seen as a cruel and angry God who anticipates for us to slip and writes down every mistake we make waiting to punish us by those who do not know or know Him fully.
My friends, God has stored many opportunities and blessings for you. He is incredibly eager and desires with all His heart to bless you abundantly. He wants you to live with Him again. He only wants the best for you and your well being. He wants to experience everlasting joy and indescribable happiness in this life and in the life to come. He wants you to partake of His goodness and come and follow Him. The Lord does not care how early or late you decide to come unto Him. I testify to you that if you have strayed and wondered off the path that there is hope in Jesus Christ, The Savior of the world. The Lord accepts those who come unto Him whether your early, late or just in time who desire to change. The Lord will accept you wholeheartedly and forgive you if you are willing to change. The Lord will welcome you and will always be ready to embrace you with open arms. The Lord will lift us up in our trials and use us to bless the lives of those around us if we are willing to change.
If you desire to learn more, you are always welcome to visit comeuntochrist.org. There you will learn more about The Church of Jesus Christ and our core beliefs and values. If you have taken the time to read The Book of Mormon and this comment, thank you. It takes a huge leap of faith and a lot of courage to muster enough faith to read in the Book of Mormon and to believe in something in a personage that you may never see in this lifetime. Although we may not be able to see God and Jesus Christ in this life, I testify to you that they are real. They do truly exist. I promise you that if you will pray to know of their existence, you will come to know whether they exist or have been made up.
You are my friends. The Lord loves you and despite all our weaknesses and shortcomings, he still loves us and will forgive us if we will humble ourselves before Him and diligently seek correction and do whatever is needed to repent.
Remember that The Lord is always available to talk to through prayer 24/7. No question sounds too silly for Him. James wrote, "If any of you lack wisdom, let him ask of God, that giveth to all men liberally, and upbraideth not; and it shall be given him" James 1:5. If you must know whether or not something is true or evil and deceptive, you can always pray to God. He will help you know what the truth is and what is not the truth. He will never be too busy to talk to. He will give you strength you need to overcome and conquer your temptations and will give you the strength you need to endure through your trials and afflictions. Paul said that The Lord will not give you temptations that you cannot resist, but that in your temptations, He will provide a way for you to resist, overcome and conquer them. He will provide a way. He wants to bless you and reward you abundantly. The Lord knows you and will not forget you. You are loved. You are utterly amazing. You have incredible potential. You are not forgotten or ever will be forsaken. You are special. You are unique. You are one of a kind. You have been reserved for this time and The Lord needs you on His side.
It simply would not be the same without you.
Thank you for your time.

I only heard of pork pies from watching "Are You Being Served?" as a kid. I never knew they were served cold.
In most areas, they are served cold, but in Yorkshire, it's quite common for them to be served warm. Either way, they are great with a little English mustard!

Some 35 or so years ago I was on a business trip with my boss travelling from South East Essex to somewhere near Holmfirth , West Yorkshire.
Our host took us to lunch in a large, busy pub five or ten minutes up the road-
As we had a lot of travelling to do that day, and would be in the car for hours, I opted for a “light snack “ , pork pies where I come from are ( or were), generally small, served cold, with maybe a lettuce leaf and a dob of English mustard, “This would do me fine” I thought.
A small time later, our waitress brought our food, handed me a large bowl, with all I can describe as a hot, “man-size “ pie, centred in it, brimming with mushy peas! , not at all what I was expecting!
She then asked, “Would you like some nice mint sauce with that chuck “?
I love mint sauce, but however, southern breeding was telling me I should only really have it on lamb, and all I could offer was, “Why not?, When in Rome, , , , “
The waitress ladled on an almost obscene amount of mint sauce, handed out our cutlery, and seeing through my bewilderment cheekily smiled and gave me a spoon, saying, “ You’ll get on better with that “ , , , ,
Until then, I’d never seen a hot pork pie in my life, but I can tell you it was AWESOME, it was stunning, it was delicious, it was beautiful, it was mind blowing, it was heaven!
Who’d have ever thought it,
The very humble, but great British pork pie .
I live in the US now, and Americans really have trouble believing some of the foods - and food stories - from back home.

I could wax lyrical about that day for the rest of my life, , , !
Curious what you say about the US and food though, I’ve heard you can get aerosol cheese over there?🤮

Pork Pie, with Cheese & Chutney, Glass of Burgundy,,, Sheer Bliss
That's the business of a pork pie!😍
Expat here in Germany a good soild recipe👌
Made these and wanted to love them more than you could possibly know. I generally love pies. I even tried them cold, as I hear that's the proper way. But good god were they bland. So I tried English mustard, Branston pickle, and even HP Sauce. Every bite as bad as the last.
I finally warmed the sucker up. And it became edible! Not good, mind you, but edible. It tasted like a really bland sausage inside some high-quality chicken pot pie crust.
Apologies for griping. But I had to balance out the comments so any other Yank viewers could be forewarned that you may need a British palate to enjoy this one.
Wow! Looks wonderful but I think you make this look easier than it is in reality.
I have made thousands of pork pies we used hot water crust pork fillet salt pepper and nutmeg. I Should have added some of our pork pies went to Lambeth place for one of the old archbishops of Canterbury'
Easy to follow and nicely presented mate... well done.
Love me a proper porky pie (or 3) so I shall be making this at some point ;)
Awesome, let me know what you think, and cheers for the feedback :)
I'd have one of those with a beer.
And some pickled onions and English mustard.
@@hobmoor2042 Sounds great.
Followed your recipe. Perfect
You've made that look very easy! I'll be having a go soon ...
Great, let me know how you get on!
Lovely. Good quality video.
I'm trying this. Thanks 😊
You’re welcome 😊
Instead of using flour for rolling out, Rachel Allen recommends rolling between 2 layers of Cling-film. A bit more 'faffy', but keeps the proportions right 🙂
I'm making Pork Pie for dinner...we eat in 48 hours 😂
😂 😂 👏
That will surely improve the overall perception of the end result. Two days worth of fasting allways does. :)
Is it ready yet 🤪🤪
