When my (Scottish) Grandma had to go into surgery back when I was in University, she made enough Scots meat pies for my Grandpa to cover her stay in the hospital. He burns water. She left him clear written instructions on how to warm them up. Well one afternoon, he called me and asked me to come over and watch the hockey game (we live in Canada) and said that my Uncle Sandy was coming too. Long story short, Sandy, Poppa and I ate all of the pies in one evening and Sandy and I had to take him out for supper for the next week LOL.

I'm 54 now, my Nanna showed me how to make these at 7yrs old, from the age of 13, she and I were making them together as they went into the mens lunch packs. We'd make the pastry on a Saturday, make the pies on a Sunday, for my dad and 6 brothers,, 45 pies!! I know 7 x 5 is 35, but we all liked them lol. I still make them to this day, exactly the same as she taught me. I'm currently teaching my 7ry old granddaughter the same method. It was so lovely to stumble on your video :) xx

I just love to listen to this gentleman talk. So soothing, who would have thought that a cooking video could be soothing?
Tip for separating fat from stock without having to spoon it out. Pour it all into a watertight jar or container and turn it upside down in the fridge until the fat solidifies. Then turn it right side up again and the broth can be poured freely without taking along the fat, and you can save or dispose of the fat as you like.
Or just leave the stock in the measuring cup, and put in the fridge till the fat is solid. Press down on the fat until it breaks, and then take the pieces out. Saves washing another container.

I made this last week. I said I would. It was by far the best crust I ever made. Some “chef” said to just use store bought pie crust bcs it’s easier and the results are the same. Pfft~The tip you gave of putting it on the bottom rack was a winner too. Thanks !

@@hongtse6723 I did use less! I ran out of shortening, haha. Almost the same. 90g..oh wait, you’re asking if you need it, yes you do need the butter and shortening if you want this traditional kind of crust. There are other crust recipes using grated cold butter and such. Look it up. Cheers

My Scottish family makes minced beef and onion filling, thickened with old fashioned rolled oats, ground or toasted, with an equal volume of ACP vinegar, that is repeatedly simmered until a light crust is formed on the bottom of our cast iron pan, then scraped from the bottom of the pan and covered with water again, until the oatmeal is the same color as the meat, three or four times until ready for final additions of salt, pepper and beef flavorings.
I use 2 ounces of oatmeal to 2 ounces of vinegar for a pound or half kilo of 10% fat ground sirloin. Kids and adults love the hearty taste with mashed potatoes and mashed (sweeds/rutabegas). This filling also makes great hot sandwiches in any kind of bread, and a cold filling for small pies cooked as you do. Thanks for your wonderful tips and tricks!

Have just been teaching my 8 year old Grandson to make Scotch Pies cos his Nana Scotland is coming to stay and it will be her birthday. it is *now*, traditional English (and American) food is great though.
As a yorkshireman, I can say that at face value, our food is quite plain. But its that wonderful feeling you get of absolute contentment while eating it. You just feel warm and at home. Almost like you are just sat in a lovely room, with a roaring fire. Relaxed and comfortable.
Thats what I'd say defines british food. Uncomplicated, and comforting.
Our food might be kinda boring but it is loaded with fat so its still pretty tasty
@@pacman10182 BRITISH, since this is a SCOTCH pie ;) Theres many good foods from the UK its just they went out of fashioned due to their ingredients sounding ewww yet people are happy to eat chemicals and processed food which has made up names!
Went to the UK a few years ago. I was blown away by the cuisine. The pies, the SALMON, the pastries, the lamb, the local produce, and yes even the haggis was delicious. Edit: I bet these pies would be good with a Beef-Pork-Lamb or a Beef-Pork-Veal mix. Or even a ground sausage mix. The sky is the limit, boys!

What a joy to listen to his calm concise way that he explains things,. I could listen to him every day. I was imagining my dads' Scots grandmother making meat pies, which makes sense as she ended up in Canada where they do meat pies too. What a charming comment! I get 'homesick' for places I've visited and loved too, I know exactly what you mean. Whenever I make Russian pickle soup and serve it with dark rye bread I think of making it in the kitchen of my holiday apartment in Berlin. So I make it often in winter just to bring back the feeling of being in Germany. Same goes for Japanese food. Can't wait to travel again. I miss the world! :D
@@revengenerd1 I think the homesick feeling is more about the presenters voice, attitude and the fact that it's a pie.... I don't think the fact this is a scotch pie matters too much and even if it did the English have been making them for a thousand years and more..

I first encountered these pies many years ago whilst hiking in Scotland. However, the crenelated edges were much higher on the pies I found in the shops. I asked a Glasgow born friend of mine why the edges were so tall and he told me it was to fill with baked beans on top of the pie, which is how he ate them as a kid.

Found my way here after going down a pot pie rabbit hole. It's like watching my old uncle Reg in the kitchen. The only difference is he'd punctuate statements with a rattle of his scotch glass, and usually by the end of cooking the scotch had made his accent so thick that only the family could understand him. lmao

Oh John, the most impressive thing for me is people who make REALLY GOOD pastry from scratch. Whether it's sweet or savoury, if you can knock it out of the park then your recipe is already 85% there. Great pastry is how I know I'm dealing with a really good cook. They make it look really easy and it isn't. Same goes with making croissants from scratch. Deeply impressive. Thank you for this video, such fun and so helpful.

You can make a DELICIOUS beef pot pie with chuck roast, potatoes, onions, peas and carrots, gravy mix and packaged pie crust. I just put a roast in a crock pot with 1 chopped onion and 4 cups of water and cook on high until tender.(about 3 hours) after about 3 hours I wash 3 medium potatoes and add them to the pot. Cook for 1 hour. When the roast is tender, I turn off the crock and take out the potatoes to let them cool down enough to handle. Meanwhile, I prepare the gravy. (I've also used a jar of gravy.) I transfer the roast to a large mixing bowl and using 2 forks, I shred it, add gravy. Peel and cut potatoes before adding to meat mixture. Mix gently so as not to break up the potatoes. Add peas and carrots. Stir gently. Bake bottom pie crust for 10 mins before adding mixture so that it doesn't turn gooey. Pour mixture into pie crust. Cover with top crust. Crimp edges. Bake at 355° for 30- 40 minutes or until crust is lightly browned. Delicious every time!

I worked in a commercial bakery in the 80s in Canada that acquired the contract to make Marks and Spencer pork pies. I made the pastry which used the same boiling water emulsion you use here. It made a crust like no other. Brings back memories. I still use this method for certain baked products. Thank you for the recipe. Nice touch with the sticks to help people who aren't that experienced get the thickness right. Upvoted! I sent you 3 quid for a coffee or tea!

What I do with the fat is pore it in a jug of cold water and let it cool solid then use it and mix seeds in to feed the birds I make fat balls so nothing goes to waste and the birds scoff the lot and love it. Looking forward to making your pies.

I think your videos are extremely good, practical, easy to follow and it’s good wholesome food. I am now 80+ but remember well sitting at the kitchen table whilst my grandmother worked her magic, and gave loved cooking and baking ever since. The sad thing I find, is that today these skills are not taught in schools as we were.Well done sir, you are a master if your craft and I congratulate you. I’m ordering your books !.
