Good God! Someone that can actually speak and cook and that has camera presence! I always thought that I was good at making dough but this is on another level. I'm going to try this, definetly. Well done!
I made the sausage roll’s for Christmas Eve, and they could not be faulted. So, Big Thanks, from me, to Gill, for sharing this recipe, and his method in making these.
Your ruff puff pastry look so much simpler than what I learned at school. I have always been scared to try it, but I think I'll try yours. Sausage rolls are one of my favorite things to eat.
Nice recipe I tried it and it worked really well I've been making sausage for a long long long time I'm 64 years old I had my own Deli and catering business and your recipe is very good and I definitely will use it again thank you

Yup. You can use phyllo pastry to, as long as you spray the pastry sheets with a plant sprayer of water, 6 inches away, to stop them drying out as you work with the dough
Wow, Love the pork mix...I was able to use up a load of frozen leg of pork, as it had been trimmed of fat, added my own pork dripping! The pastry took me way back to my cookery (domestic science class, at school in the mid 50's) Thank you Gill .
Just made these for my grandsons birthday&OMG the family loved the recipe you showed on here.i wasn't sure about using fennel seed sprinkled on top so I done half & half .what a winner with both 👍🏻😀.. I just subscribed to your channel & love what l'm seeing..Happy cooking.
You are so freaking talented!!! I would love to have you as a neighbor. I live on Cape Cod in New England, and there are several houses that have wonderful people living here. One is a scalloper, one is an oysterman, one a lobsterman, and one a fisherman who catches flounder, cod, haddock, striped bass etc. One gal grows microgreens in a greenhouse for local restaurants. One owns a pie shop...where she sells both sweet and savory pies. One has a small farm and produces organic fruits and vegetables as well as organic free range eggs. Theres a fellow who owns a local food store and he brings butter, cream, spices, and things like cream of mushroom soup. He always brings a box or two of food for our pantry. Even the day old bread to make bread crumbs ! Sometimes he will bring 10 lbs of ground beef or pork. This is a tourist area where the population swells 20x or more for 8 to 12 weeks in the summer..The winter is just deadly quiet. In the winter, we meet on Wednesdays, to cook enough for everyone, then we share. Our local church has a massive commercial kitchen that we use. It is really a great social thing that we all do. We show up, and spend most of the day on Wednesdays together. Some might throw in the ovens a few dump cakes, or cobblers, made using the frozen berries gathered from the farm in the summer. Or, the kids might work on sugar cookies, and decorating them. There's always plenty of food, so after we all eat, then we make up some containers for each of us to take home, and we also make up some to drop by to some elderly neighbors. It gets us all out of the house in the Winter. Particularly when there is a huge snowfall. An Amish lady started this some 60 years ago. There's very few Amish people in the area here so it was wonderful for her to meet and befriend others. My grandmother was one of her closest friends. She rolled out her homemade pie crust until she was 95 years old. She canned jellie's, jams, and applesauce. She made incredible sticky rolls and breads. Anyway, this has been a long standing tradition here. I know my neighbors would go crazy trying to recruit you if you lived near us. Anyway, you absolutely rock !!!!
I would have one tip here and that is roll out the sides of the pastry before final assembly so you end up with half thickness of the pastry where the edges fold together so you end up with uniform pastry thickness.
Watching this on this cold evening in the Netherlands while having my pork and apple curry and drooling over the piping hot gorgeous sausage rolls out the oven!! Oh my word! Thank you so much! Am a subscriber!! 🥰🌷🌷
I wish making the pastry was that easy! I think you have a very cold kitchen Gill ;-) I worked really quickly with fridge cold butter and iced water but still the butter had softened toward the last few "turns" and things started to get messy! I think another time, I would let the pastry chill in the fridge for half an hour before another turn and roll. That said, a brilliant tutorial and one other UA-cam chefs and bakers could learn from! Thank you Gill 😀
I used the recipe featured in the Gill Meller River Cottage video above when I made sausage rolls for tea today. They were really easy to make and were absolutely delicious!
OMG! I miss a good sausage roll! Haven’t had one since I was in London 20 years ago. I live in Sacramento California. I’m going to give this recipe a try knowing the flour is going to be a little tricky because we don’t have the same flour here. I also miss a good scone. And fish and chips! Americans don’t know what they’re missing! (I also yearn, crave for an Aussie meat pie!)
David Lang I've just moved back to Canada from being in the U.K. And I am soooo missing the fish and chips in Fife, Scotland, and the amazing sausage rolls in St Andrews, the Cmberland sausage of Yorkshire especially from the wee farm shop in Barkisland, oh and the Cornish pastries and all the cake from the wonderful tea shops. Oh could go on and on. Living in a tiny town in the Rockies and there is none of this here! I'm so trying to survive.
S M I commiserate. Yes I forgot to add Cornish pasties to the list! And scones, real scones not the pieces of bricks they sell at Starbucks. Oh for a good chippy!
S M oh I’ve tried many times but I think it’s the flour we have in the US. When I’ve made scones in Vancouver or Sydney, Australia I was getting better results. So I think Canada and Australia has flour that’s different from the US. Or I’m just not a good cook!
Was interesting to see you make the pastry so quickly. when I was taught to make it at school, we would rub in a third of the fat then roll out and dot fat in to then fold to form the layers. this would take much longer. cant wait to try this recipe!!
Richard, I too remember having to spend ages making a proper 'puff pastry' at school, and I always made a mess of it. 😳 The 'rough puff pastry' method is definitely easier. 😊
I made these! Using Richmond sausages (cos I hate them and was given them during lockdown).. I added all your spices. And made the pastry, though it didn't flake. Added too much Fennel on top, but they were well nice and very filling. Lot of effort though..
I just came across this video by accident a week ago and ended up making this not once but twice already in 3 days! I have a cheat date every 6 days and these HIT THE SPOT! Thank you Chef Meller!

that recipe for rough puff pastry took me right back to when I was first married in the sixties when you were unable to bye flaky pastry in the shops and I used to make it all by hand, its a good recipe and all ways worked for me. Thank you for that.
I've made these several times - easier than you think. Taste amazing - never had sausage rolls like this. Truly worth the effort and after making them a few times, they can be knocked up quite quickly. Excellent recipe and presentation style.
RECIPE CORRECTION: Ok, I just did a half batch to test the recipe. Came out good, but I spotted an error. The video instructions are fine (use enough water to ...), but whoever transcribed it on the River Cottage website (and all the sites that copy it) seems to have gotten the water amount wrong. 4 tbsp ice water (60 gr) is too little, by almost half, for 350 gr flour and 175 gr butter. I used the equivalent of 90 just now (45 for a half batch), and 100-120 is probably closer to ideal ... 60 is flat out wrong, IMO. Probably an arithmetic error in scaling the original. Oh, and the salt (I use med kosher) should be 1 full tsp per 350 gr flour ... not just a measly pinch. Oh and a TIP: if you lack fresh bread crumbs you can buzz a flour tortilla in your food processor to make your own. I make tortillas regularly, so I havent needed to buy bread crumbs since college.
@Scott Smith TBH, I have no idea, because I dont own Gill's book (Hugh's yes, Gill's no ... not yet anyway). My OP was in response to the recipe in the video (I took notes), which I double checked against the linked website when I encountered the error I mentioned.
BTW, i've since made the recipe several times more, and i'd like to reiterate that the Garam Masala is purely optional, so if you dont have any handy and dont feel like making your own (recipe upon request), feel free to skip it. Personally, I love Indian cuisine and I'm modestly well versed in it (both northern and southern), but the Garam Masala seems a tad out of place in this particular dish, esp given the title that leads people to expect it to taste like familiar style sausage. I tend to omit it, or replace with a mix of ground fennel and a little extra cayenne and garlic, to better match the italian sausage profile, but to each their own.
Thanks for the recipe, i am use to making it with toasted fenal seeds, dill and sweet parika in the pork seasoning mix and spring onions rather than chives, for breadcrumbs we use german rye bread. This is how my Oma taught me but i will give your recipe a try the crunchy fenal seeds sound really appealing to me and i wonder how plain breadcrumbs will change the flavour. Thank you fo the video take care and God bless.
for those who want the recipe...I went the River Cottage site. join the site. typed in sausage rolls and there it was. I was able to print it too. Hope this helps.
here is a recipe for ruff puff - i took it from their website
175g unsalted butter, chilled and cut into small cubes
350g plain flour
A good pinch of salt
About 3-4 tbsp iced water, to mix
Egg wash (beaten egg mixed with a splash of milk), to glaze
Fennel seeds and flaky sea salt, to finish
Thank you very much!
Thank you!
Thank you.
Thank you so much
Cheers mate

Oh and a TIP: if you lack fresh bread crumbs you can buzz a flour tortilla in your food processor to make your own. I make tortillas regularly, so I havent needed to buy bread crumbs since college.
Nice. Thanks for the heads up my friend
How much meat do you use for that recipe?
@@RovingPunster Good man for writing up receipe. Much appreciated!!
Looks delish! Trying this today!
I seriously cannot wait to try this recipe. I love the idea of the "rough puff" pastry.
Looks amazing! Thank you for the step by step with the homemade pastry! I'm gonna try! 😁
Thank-you Gill, looks like a smashing and easy recipe and one that I hope to try out. 🙂
for those who want the recipe...I went the River Cottage site. join the site. typed in sausage rolls and there it was. I was able to print it too. Hope this helps.
I love making these. I think they are better cold!
