    A real scotch pie is one of the best-tasting things on the planet. My mom used to put peas on top...two ice cream scoopers of mashed potatoes...and dinner was served. Ice cream scooper for mash so everyone gets the same amount...I still do it. Thanks, Mom!

      My Mum used to do this for me after I was diagnosed with Type I diabetes when I was two-and-a-half, the scoop she used held exactly 2 ounces of mashed potato.

    Hi Paul, you are da man. I make lots of Chicken Mushroom pies and Beef pies, the 5” diameter hand held pies. That is what we ate in South Africa. Been living in Hunteville, Texas for the past 30 years.

    It must be 50 years since I last had a proper bakers Scotch Pie, my gran lived in Newcastle, but I never knew them with anything other than mutton in them!

    Tip: next time you tie the not, put a double twist in the first part of making a knot. It won't slip and you don't need 2 people to make a knot. You make a second double twist in the twine to finish the knot.

      Look up a surgeons knot. Super fast and doesn’t slip. Used to tie off important parts quickly. Knit is made with a fore finger.

    I was always given to understand that a Scotch pie was made with mutton.. Indeed, I've tried many such, but I must defer to the champ! Paul's version does look delicious though. Right up my street, perfect with mash, peas and perhaps a bit more of that lamb gravy. Happy New Year everyone! 🥮🌟👍

    Pretty awesome to see this! Really nicely produced video - makes me want to visit Scotland and attend one of those games just so I can get a Scotch pie. If I'm being honest thought I do have two criticisms - while you have Andrew Chisholm in your kitchen you should find a way to make him more a part of the baking process than just having him hold a string and if you're talking about trying the pies with Andrew you probably should have a shot of actually tasting them or we might think something went wrong...

    Wrapping the pie in parchment seems to have inhibited the browning of the case. I would prefer to cool the pastry longer to have a more rigid case which can then be egg washed and browned.

    If you want a nice crispier top crust , sprinkle lightly with a quality sea salt . I use Maldons . Warmest regards Chef Ray o7.

    You cannot beat a mutton pie, I only get the chance when I holiday back where I grew up in the South of New Zealand very few of the hot crust left any more, mainly all puff, miss the fat dripping down my chin.

      I haven't had mutton since I was a kid. To be honest I can't remember what it tastes like. Nowadays I don't think you can even get it here in Australia.

    I'll give it a try when I can source some lard that doesn't taste weird. Might whack the crust in the dehydrator or a really low oven for a while to cure a little faster than 3 days.

    Needs to have about 10 minutes in the over at the end without the parchment paper to dry it up a bit and give it some crispness in my opinion

    I've been a professional baker for 40+ years and that dough was NOT completely cooked. Talk about a soggy bottom, they didn't eat it on camera because it was raw and gummy.

      I totally agree , was my thoughts too , when he removed the baking parchment I thought that ain't cooked right , should of cooked it without the parchment , I've also worked on Tv cooking , And it's not as easy as it looks with the camera's pointing . I've got to make 50 next week for a function , Just hope mine turn out well . 🤥🤥 Good video Paul . Can't be perfect every time mate.👨‍🍳👨‍🍳

    Growing up in the 60's in England a Scotch Pie was mutton , never ever had one made with beef.
    Invented in England and perfected by the Scots ? I think not 🤣

    The Scottish pie maker is not impressed by Paul’s pastry case form! The end result is not a Scotch pie, the pastry doesn’t look cooked and it’s dripping in grease. It doesn’t get my vote!

      Agreed. I think that it looked pale and squishy. I think unwrapping it for the last several minutes and giving the sides of egg wash also might work.

    This reminds me of pork pies. Shortcrust pastry is not as easy to make as made out here and the pork pie has more stages with the bone jelly layer being before the meat filling. Seems like a cross between the pork pie and a Cornish pasty.

    Crust looks under baked
    I would have blind baked the shell on the glass ramekin , maybe black pepper or cayenne in the filling

    I had to rewind the video to make sure I’d heard the Scottish baker correctly…’beef’? I’ve never heard of a scotch pie being made of beef. Why is it called a scotch pie if it’s not made with lamb? It’s just a beef/steak pie.

    The top of the pie is way too brown (bordering on burnt) and the bottom crust is a greasy, sloppy, underbaked mess-you should have paid more attention to Andrew's technique.
