    Heres my how to make a chicken and mushroom pie video, Chicken and mushroom pie is a classic recipe and this one is a belter. This recipe will also double as a leftover turkey recipe, so have a go and let me know what you think in the comment box below.

    4 x pies
    Ingredients
    500g Button Mushrooms
    ½ left over chicken
    1/4 x Leeks
    500ml Béchamel
    ½ Onion
    1 tsp Nutmeg
    250 Extra mature cheddar
    500g Puff Pastry

    thanks for the mushroom trick. i've cooked in a couple dozen, or so, restaurants, hotels, etc. over 45 years and this is a first.

    I did not have puff pastry and I made the filling and spread it on soft tortillas. I wrapped them in a roll, cut them diagonally and baked them in a glass tray, for a few minutes, sprinkled with grated cheese. I will also make the recipe with puff pastry, according to the instructions. It will definitely be wonderful!

    I cooked a chicken and leek pie a few days ago, and didn't have any cream. I was trying to think what I could use instead, without making a special trip to the shop. I thought milk, but probably too thin, then I thought why not thicken the milk with some flour. Then it came to me ... a small batch of Béchamel sauce. I was quite happy to see my decision justified in this video.

    I would use a Knorr chicken stock pot to season the pie filling.

    Mate, I'm sitting here watching this with a bag of crisps in my hand and my stomach is telling me: "Why are you eating crisps when you could have a slice of that pie?" So I'm telling you mate, please open up a restaurant in London. I would gladly fly in from Sweden to have a bite.

    Why cut a circle for the base? Why can't you just lay one whole piece of pastry into the ring so the base is just part of the pie? Confused!

    I have a lot of glass marbles, the kind children play with. Can they be used as a cheapskate replacement for baking beans?
    Can I use actual beans? If I do, can I reuse the beans (for example, kidney beans) for cooking, or are they now inedible? Yes, I am a cheapskate.

      If you haven't got the answer elsewhere, I would not use glass - it's not heatsafe. You can use any kind of dry bean, then cool & store for the next pie! (My blind bean jar is 2 decades old)

    That pastry when it first came out of the oven was the damn money shot 😩, and then when you pulled it out of the mold... dear god that looks amazing... and then you cut the damn thing in half and that when I gave up and commenced with the usual rant. Fantastic looking pie is all I can say, that one is going into the list of things i'll be making after having left over chicken. As usual chef, top notch. keep at it 👍🏼
    6 pounds is very reasonable

    You make it fun and I dry toast mushrooms and then sometimes I take the leftovers and run them througn my coffee mill and make a delicious umami mushroom powder to enhance soups and sauces.

    I did this recipe last week for my wife and myself. I cooked it as one large pie, It was amazing. What was left over we had cold next day at work.

    I have been making pot pies for years in a remekin. Definitely not optimal. I think I'd like to try it using one of these rings. Anyone have a good guess on the height and diameterof the ring hs uses here?
