    Kale Pesto →
    -1/2 cup toasted nuts or seeds of choice
    -1 bunch kale or other greens or herbs (spinach, parsley, cilantro, etc.)
    -1/2 cup olive oil
    -1/4 cup nutritional yeast
    -juice of 1 lemon (optional)
    -salt and pepper, to taste
    Blend all ingredients in a food processor. If using a hearty green like kale, chard, or collards, I recommend blanching them for about 1 minute and then rinsing with cold water before blending.

    Props for commiting to learning more about sustainability! I have been intentionally trying to live a lower impact lifestyle for the past few years and I think it's so important!! And fun, too :) . I think a huge tip for minimizing waste in the kitchen is just getting accustomed to using the freezer- I'm not sure why I never did this before, but when making a big batch of soup or beans, etc. just freeze half straight away and when you want it, thaw it out- reduces the frequency of times that the last portion of food gets too old and little funky.

    My favorite no food waste tip, which I'm sure everyone knows....but veggie broth. I save the onion nub, carrot peels, broccoli stems etc in the freezer. Once the bag is full, I use it to make broth.

    This was a great video! My favorite tricks for reducing food waste are going through my pantry and fridge and writing down everything that I have and planning meals around that, I also really love scavenging for the clearance items at Kroger and other stores, seems like they always have a ton of produce to choose from, cleaning out your fridge regularly helps too! Then we don't forget something in the back somewhere. The fried rice looked amazing, I am definitely going to put that on my meal list soon. Thank you! 💚🌎💙

    I was very confused as to what zhoug was and why I’ve never heard of it in all my years as a native in the Middle East... until I watched you make it and screamed MA’BOOCH! 😂
    It has multiple names in Arabic. I’m my part of the region, it’s ma’booch, but Yemenis call it sahawig. I believe Zhoug is Hebrew, which rarely any of us speak.

    We love the Trader Joe’s Zhongshan sauce so much I decided to make my own. It was really good but not as good as TJ’s! I have found the best way to keep cilantro fresh is to put it in a jar with water as soon as you get it home. DO NOT WASH! I keep the jar on my kitchen window sill. Wash it just before using.

      Hi couldn't help but notice that your name is Indian. As a fellow Indian, Iam so happy that there are more of us going for vegan lifestyle. I turned vegetarian around 15 years ago. Now Im trying to be vegan but it's so difficult to find vegan substitutes here in India, specially for cheese and curd. Could you suggest me some good options? Thank you :)

      @@ira6605 Yeah! I live in the United States, but whenever I'm in India I usually go for dal, chana, soya chunks, and seeds and nuts for protein. Plenty of sabzi and curries can also be made vegan by cooking with oil instead of ghee, and coconut milk instead of curd or cream. The flavor may change a little, but I prefer that taste :)

      @@ajayvasisht4182 Ohh coconut milk is a good option for bringing in that creamy feel I guess! Have you tried nutritional yeast as a cheese substitute? I see everyone use it in vegan videos and it's kind of expensive here so wanted to confirm before I buy it 😅

    Also- where did you get your double ended measuring spoon? My MIL has one that is TSP and TBS and it’s my favorite but I can’t find a metal one like hers! :)

    Such great ideas to try out ^_^
    In our house we freeze any veg that are getting to the end of their lifespand. When we have enough I take them all, put them in a pot and cook them down with some spices and herbs to make a veggie sauce. I then pour that in to jars and store them for later cooking. It's a nice addition to a regular tomato sauce for pasta and lasagne, plus it adds more veggies to a dish :)
    Also, carrot peels, leftover onion, bottoms of celery and herb stalks gets frozen for broth making.

    Ooh the Zhoug sounds absolutely perfect for the cilantro that is currently wilting in my fridge :P Yeah I'm in the camp of it usually tastes like soap, but I bought it for another recipe. So I might repurpose it into this (minus the garlic, unfortunately, because I am allergic), to maybe use on sandwiches.

    Buying frozen veggies for stir fries tends to be cheaper, even if you buy organic, especially at Kroger. It also reduces waste as long as you have freezer space.

    I find fried rice, stir-fry's, soups, casseroles and pasta dishes are all great ways to use up leftovers. I also use up any vegetables that need using up and/or toss in any frozen vegetables.
    I freeze vegetable peels and trimmings to later turn into broth. It gives it great flavor and a lot of the vitamins are in the peels.

    You should try making a lentil\bean stew into meatballs\burger patties! I do this all the time when I have a leftover stew with great flavors but don't want to have the same thing again.

    I love making pesto with whatever nuts and herbs I have at home - cashews with a good amount of garlic manage the astringent quality that pine nuts seem to have - but even as a cilantro and chilli fiend, this is the first time I've heard of zhoug! Thanks for the introduction to it :D Joke's on my boyfriend for making fun of me for freezing our cilantro stems last month :')

    Zhoug is basically impossible to pronounce in English lol. It's got that Kh sound as in CHannukah, z-KH-oug. none the less everything looks amazing as usual
