I made it today. It's in Crockpot right now. The changes I made: I cut the chicken up & browned it in a skillet first....added the salt, pepper, onion, & garlic. Browning the chicken improves both the looks & flavor of the chicken. I know tossing it raw into the Crockpot saves time & dirtying a skillet.....but we're retired & have a dishwasher....so. 😀😀 I rinsed out the soup can by pouring the chicken broth in it first. I used a wild rice mixture. And closer to done time, I'm going to add broccoli as well as cheese. I think it's going to be DELICIOUS !!! PS...it's good!
You did what I am going to do as well, but I’m also going to saute some slice baby bellas with the onion, chicken and garlic. Also may add a dollop of sour cream when serving. Thank you for the recipe! Delicious!👍❤️
I like crockpot, simple recipes ,l don't like to dirty a lot of pots and pans,l have to keep it simple,as l have back problems and can't get into too much cooking, and dish washing.
When my father (r.i.p.), discovered and bought a crock pot, he always made stuff like this. Chicken and rice dishes were his favorite to make. He made different sauces to combine with rice and chicken and adored his crockpot. He is gone now (r.i.p.). But this brings him and his cooking memories back. Thank you.
Great looking recipe and very budget minded. One suggestion; as an old grocery store meat department employee, you should never use the cutting edge of your knife to scrape ingredients off your cutting board. Instead, use the back edge to scrape ingredients off the cutting board. This will keep your cutting edge sharp longer. And with a sharp knife, you use less force to cut, reducing the chance of cutting yourself.
I just made this tonight and it turned out well. I didn’t have brown rice. I had basmati, and what I did to compensate for the potential mushiness was just cut down on the cook time about 30 minutes. I was a little worried about the chicken not cooking through enough, but it was no issue and the rice came out fine. What I did different, though, is I added a can of cream of celery along with the cream of chicken. It didn’t come out too creamy and maintained that casserole texture. This was a super easy recipe to put together. Cheers.
I actually love her videos . No BS, no fake chit chat, no overly complicated recipes. And I’ve always been leery of throwing raw chicken in the crockpot, afraid it wouldn’t cook properly. No any more! Gonna try it out soon.👍🏼👍🏼
Finally, a recipe that is made for brown rice! I try to stick to eating whole grains as much as possible, and it frustrates me that recipes like this use white rice. Thank you so much! 🙂
You can use brown for white anytime. Brown rice takes longer to cook, that's all. For example, when I do a stir fry; I start the brown rice separately, 20-30 minutes earlier, and add it in while still a bit watery.
You can also add mushrooms....made it very tasty, too. The broccoli was great when I added it about an hour before done time. Great time saver, while I do laundry and change bedsheets. A cucumber and tomato and onion salad goes great with it, too. Yum.❤
Looks very similar to an oven recipe my mom used to make. The biggest differences that I noticed (apart from oven vs. crock pot), she used cream of mushroom soup instead of cream of chicken, she added paprika alongside the salt and pepper, and she didn't have cheese. I'd wager that some combination of this recipe and mom's would be amazing. EDIT: Not saying that this recipe doesn't look amazing, itself!
Sounds yummy! I hear people say all the time to shred your own cheese but honestly for over 40 years I've cooked with packaged shredded cheese and have never had a problem with it melting.
I used to think like you until I started shredding my cheese. 😂 It’s just so much better than the pre shredded stuff. It’s creamier and much more flavorful, and it really only takes a few minutes.
One of my favorite childhood dishes was my grandmother’s chicken and rice! One of the first things that I learned to cook! I’m happy to find a crockpot version of one of my favorite things !
Hi Kerry, new subscriber! With price of groceries continuing to rise, low budget meals are very helpful. Thank you for your ideas and videos. Have a wonderful day! 😋🙌🇹🇯🇨🇦
How timely. I was searching for a recipe like this the other day. I really prefer to have one that someone has made than just the recipe in a book. My family and I love it. Thanks.
This recipe is absolutely delicious! I made it with two cans of cream of chicken and cooked the rice in my rice cooker. I added the cooked rice in the last 30 minutes and the cheese at the same time. Amazing taste! I am already craving it again!

Almost every Sunday mom would make chicken and rice in the oven. Dhe used full chicken. Have been thinking of making it in crock pot her way but never have. She always used cream of mushroom.
I'm a single man living alone who has mediocre (at best) cooking talents. I'm glad I found your video. I'll check out more. Thank you! Thanks for the heads up on the shredded cheese. I honestly would've just bought pre-shredded cheese. Now, while I head out to get my ingredients, I'm also going to buy a shredder.

Get the whole thing cut the top off, core it, peal it, chunk it and add it towards the end. Then plant the top of the pineapple in dirt and keep it watered and maybe you will end up with a neat plant. 🙂
I have a trick I want to share with you I have a lot of family members who hate onion they don't buy they use it well my trick I learn 50 years ago is after you cut, dice or shred onion take a table spoon of salted butter and put in micro safe bowl and cover with plastic wrap and nuke for 40 seconds or till translucent and they won't know it's in there I do this with all my casserole dishes and they eat it up and ask me for recipe now I do ask everyone I prepare this for if they have an allergy to it😊
As a single man who cooks for himself, and likes to cook, I'm always looking for different ideas to try, and this looks, and sounds very simple, convenient, and delicious! Only thing is I am sensitive to cream, so, Idk about including the cream of chicken soup.
Good morning from Cape Cod ⛵ I love coming home after a hard day to a beautifully done crock pot meal. That really looks delicious, thank you for your hard work ✌️🇺🇲
At what point during the cooking process did you add the white rice? I also do not like brown rice, and prefer white rice, but I fear if I added the white rice at the beginning then it might get mushy.
I love chicken and yellow rice but hate all the cooking. Will try this without cheese but with the mushrooms and veggies I use. I love crockpot meals and want more recepies with pasta and rice.
You can convert almost any casserole recipe into a crockpot recipe you just might need a little more liquid. I love doing it that way because I don't have to cook the pasta and rice separately. That's one of the great things about this recipe you can change it up any way you want and it's still going to taste great. You could even use a vegetable broth if you wanted but I'd use a really strong vegetable broth to kick up the flavor and you can add more spices like paprika, garlic powder, black pepper and if you're doing all vegetables I bet coriander would be nice.
This recipe looks great. I've been looking for crockpot recipes so I don't have to use the oven so much during the hot summer months. Can't wait to try it!

Except we used a can of cheese soup and we chop up a head of broccoli which practically dissolves in the cooking. I also like to add some garlic.
Im going to try this tomorrow. Im diabetic and brown rice is better for mel its all about portions. Ill put a little bit of Ranch dressing on the side and just dip my fork into it... I do that with any sauces i have, and i taste it in every bite. Low cal and inexpensive ❤
As for the cheese I found if you rinse the shredded cheese before cooking it actually melts so much better. I was shocked. I understand they put some kind of starch on it to keep it from clumping and sticking together in the package
I understand pre shredded also contains preservatives used due to air in the bag. I have a handy easy to clean shredder. I prefer to do my own. We already have too many chemicals in the food we eat.
