    I have loads of finger eggplant in my garden that need harvesting today: will make this dish tonight! Are you on the road? You must miss your kitchen!! But truly admirable, the dishes you can create in a hotel room!!

      Use less chili bean paste or substitute part or all with soybean paste without chili. The taste is slightly different, though.

      You can omit the wine for most Chinese recipes unless ir is mentioned that wine is the main ingredient. It will not affect much of the taste.

    Instead of deep frying I think it can be done in a airfrier as well. Less oil same taste.!!

      You can omit the wine if you want to make it non-alcoholic.

    Don't worry about the oil (fat). Fat - oil, butter, etc - doesn't make you fat ... sugar and refined carbos do.

    I've never heard of adding vinegar to the eggplant while salting. Interesting. What is the purpose of the vinegar?

      It's to preserve the purplish color of the eggplant, not so much about the taste.
