    Every time I watch your dad, he reminds me of my grandmother cooking in the kitchen. She passed away in 2019 and sadly a lot of her Chinese recipes passed away with her. Lately, I've been missing her and her home cooking. I know your dad's cooking will not replace my grandmother's cooking, but the recipes he cooks is very similar to hers. Thank you to you and your family for being so generous with sharing family recipes.

    I've made this several times now. Not once did my dish fail, but it keeps getting better. Probably because I may have missed a small detail while watching the video. My husband of nearly 50 years now just told me that he'd be a very happy man if I made this once a week or two. Thank you so much for all of your lessons and recipes.     I made this dish tonight and everyone loved it. The balance of the sweet and spicy sauce allowed everyone finished their rice. I don’t normally enjoy cooking as I’m not very good at it. Thanks to Dad Lau for making me feel like a Chef 👩‍🍳 tonight.

    I made this tonight with all the ingredients including the optional wine. Hugely positive response from the family, even my kids. Amazing sauce. I used two small Thai dried peppers which was the perfect amount of heat.

    Mr. Lau is the best at teaching us non experienced lovers of Chinese cuisine. Also, African American families, Greek American families. Asian American families, Italian American families etc etc etc must watch your channel. We are all the SAME! food unites families. We should celebrate our commonalities, not our differences.       My mother always believed someone in the family should learn to be a good cook cause nothing brings family together more than good food. It's a shame we currently rely so much on eating out and no longer indulge in family get togethers besides on Thanksgiving.
      We don't have much time here (reality check due to Covid), enjoy family time more and work second.

    Thank you so much for including so many ways this dish can be tweaked to accommodate dietary and other restrictions. I am disabled and sometimes I can't cook much of anything.     I've been vegetarian since 1972. I do cook with both thin Chinese and fat Italian eggplants. When cooked properly they're luscious. They're central to Italian and middle eastern dishes, as well. I use liquids to stretch a touch of oil, instead of lots of oil, and finish with Kadoya sesame oil. Eggplants are like sponges, but you don't need to do that. Thanks to Chef Lau, I now have a more predictable way to get them tender but not mushy... after all these years. I'd never thought about deliberately arranging them in the steamer in a certain way.
    The only issue I've always had with Chinese food is the sodium content. I don't think most "mainstream" people realize that rice is supposed to be at the center of the meal, not a small accompaniment to the other dishes. So really, if you eat Chinese style, there wouldn't be as much sodium in your meal and rice is very nutritious! Restaurants here only serve you a tiny bowl of rice, because non Chinese customers think rice is just a small accompaniment, and they think they're being served rice to stretch the profit margin of the restaurant. But rice is central to a meal. And also, when salt is added in the kitchen, it goes through chemical changes with the plants, unlike the salt some people just dump on their food at the table. Some of the sodium ions in NaCl replace the calcium ions in the plant ingredients, actually becoming part of the plants. The stuff dumped on food at the table doesn't do that, and is more harmful to your organs. There are also low sodium products you can buy, like my sodium reduced tamari... or you can just reduce the amounts of your added ingredients, because isn't that one of the purposes of home cooking... to make it your own, to your tastes and needs?

    I am glad to see you steam the eggplant first so that it is not oily. My way of making it, which I tasted at a Hong Kong restaurant frequented by seniors. I steamed and seasoned it like steam fish! I bring it to potluck parties and it is always gone quickly. The only oil i put is sesame oil drizzles before serving.

    Thank you for this recipe! I had never thought of steaming eggplant in the microwave. I steamed one eggplant (thicker variety) for 6 minutes in the microwave and it was perfect. I feel like I can finally cook some Chinese dishes properly because of your channel. 🥳

    I love this recipe. My background is Indian but always interested in Asian food.
    This is what I noticed 1. He is filtering the corn starch when pouring the sauce which is good strategy so it will be thin when sautéing and will become thick eventually. If you add full corn starch without filtering, it will be muddy! 2. In the commentary, he is saying vinegar in the sauce but not in the video! 3. Instead of red chilly, I sauté Gochujang chilly paste along with garlic and ginger and it is so flavorful

    Omgawd! I love this channel and your family vibe is so beautiful , love your little boys noises !!!! he is so danged darling the way you pass him around is so loveing! He snagged Mamma Laus glasses on one of the vids and it made me crack up! I eat a keto life style , LOVE TO COOK and i watch your Daddy cook so i can convert your recipes as best i can. I am lucky to have an Asian market and the owner is so helpful to me when i go in and tell him what dish i want to make or convert!     Fun to hear your dad say Yuxiang “fish fragrant” in Cantonese. As a western guy, i try to stick to the Sichuan version as shown by Chef Wang Gang but I would love to try your dad’s food. It looks delicious. Different master, different method, so true.
