My mom used to make gaji namul when we were growing up (her parents were from Korea but she was born here). I have made it for years as well. This is the first time I’ve seen or heard of it anywhere else. However, we use vinegar instead of fish sauce (just enough vinegar mixed with the soy sauce to make it a little tangy).
Made this today for my family, I added some green chillies too to the mixture, it was gone in a few minutes and everyone wanted seconds and there was none. It was very good. Thank you for such a easy and so delicious recipe . Love from India :)

Hi guys, I wanted to tell you that I tried this with a few changes and it was delicious! I used a common aubergine/eggplant instead of a Korean one. Onion and garlic give me heartburn so I used 1tsp finely chopped ginger * I only needed 1 teaspoon of (dark) soy sauce for 1 eggplant I don't know if it made a difference but I used a tiny pinch of asafoetida/hing because I've read that it's used in Indian cooking that doesn't use onion and garlic and we had some at home. (I've been wanting to use finely chopped anchovies to replace fish sauce and make recipes even healthier but didn't have either.) I added in 1 to 2 finely sliced radishes because I had some and thought the zingyness would go nicely. *A lot of people with heartburn or other gastrointestinal problems can find that onion and garlic and tomatoes can give them problems. A lot of the time though, if you leave out foods that give you problems, you can find that after a while (days/months/years) you can eat some of them again in smaller amounts. That's all. I haven't been eating healthily for days because I couldn't find an uncomplicated and healthy dish. Thank you for the tasty food, realistic and easy to follow videos and your warm personality Maangchi.
I do have the same gastrointestinal problems that you have. The trick I do is that I use home-fermented garlic and onion. They seem to be kinder to my stomach when they are fermented than fresh OR I saute them and then I add them to dishes. Same thing for green onion (It is called spring onion in some countries) it hurts my stomach when they are fresh, but not when they are sauteed.
I tried it yesterday and guess what! My husband and I loved it! Now, I am addicted in watching and learning simple stuffs! Next one is the bokchoy side dish!

Aaah! Bliss. I took care to tear, not cut, the steamed eggplant, making sure that a greater surface was exposed to the seasoning. Used four pods of garlic, not three, taking a hint from Grandmama's broad hint! It worked. With Chow Mein, it was totally mind-blowing.

I made this dish for the second time, definitely do NOT want to over steam the eggplants, 5mins is enough. Because I can’t have rare garlic, I left the garlic out and added extra chopped shallots. Came back to revisit this recipe after finishing two bowls of steamed eggplsnts inspired by this recipe. Ran out of garlic and no pepper flakes. I heated vege oil then slightly fried the scallions before adding sesame seeds and oil. Also added a bit of salt and chicken powder along with seasoning sauce. Loved it.
I cooked this for my friends and they were very disappointed...because I cooked not enough for them to eat! The first thing in the table that were eaten in few minutes! Thank you! It is really delicious and easy!
Yes, steaming eggplant is very important. If it's cooked too long, it will turn out too mushy and if it's not steamed enough, the texture is not delicious. Keep checking it while steaming it. Use a wooden skewer to poke it. If it goes through smoothly, it's great. Happy cooking!

I liked it so much I purchased 2 Japanese Eggplant plants to be planted in my small garden at work. ;)I cant wait to make it again!! This is my favorite type of dish. In our city were we are, we actually have an Asian store, it's my favorite store, they have all types of interesting Asian foods Korea and Japan etc. and they have exactly that kind of eggplant. I came to United States many years ago, I was not born in United States, i was born in Kazakhstan, and where I was born at people are related to Mongolians, but kind of similar to Korean people on the type of dishes they eat there could be differents on foods some really similar to Korean
I love the flavors you cook with...I used to work at a University (Canada) and I learned some basic Korean dishes from some Korean students, like Japchae and Bolgogi and of course Kim Chi....my favorite is BiBimBap! Love your accent....keep cooking!

This side dish is really delicious. We , the Indians prepare a similar kind of dish where we just do a few alterations..like we use roasted eggplants and mustard oil which provides really strong flavour!

This is my favorite type of dish. In our city were we are, we actually have an Asian store, it's my favorite store, they have all types of interesting Asian foods Korea and Japan etc. and they have exactly that kind of eggplant. I came to United States many years ago, I was not born in United States, i was born in Kazakhstan, and where I was born at people are related to Mongolians, but kind of similar to Korean people on the type of dishes they eat there could be differents on foods some really similar to Korean

I love the flavors you cook with...I used to work at a University (Canada) and I learned some basic Korean dishes from some Korean students, like Japchae and Bolgogi and of course Kim Chi....my favorite is BiBimBap! Love your accent....keep cooking!
