Vegetable stir fry - How to prepare in four easy steps (with in-depth explanation)

  • Vegetable stir-fry is a quick and easy Chinese dish.

    Ingredients A (vegetables)
    100 g broccoli
    100 g cauliflower
    100 g carrot
    100 g snow peas
    100 g capsicums
    Ingredients B (Seasonings)
    1 teaspoon salt
    3/4 teaspoon sugar
    Dash ground white pepper
    1 tablespoon oyster sauce
    1/4 teaspoon cornflour
    2 tablespoons water
    1 tablespoon chopped garlic
    1 tablespoon vegetable oil
    Instructions
    Prepping the vegetables
    1. Cut the broccoli and cauliflower into florets.
    2. Peel and cut the carrots into wedges.
    3. Remove the stings of the snow peas.
    4. Cut the capsicums into triangular pieces
    5. Blanch the vegetables. Drained and set aside.
    Stir-frying
    1. Heat up the vegetable oil in the wok.
    2. Saute the garlic until fragrant over low heat.
    3. Add the salt, sugar, ground white pepper, oyster sauce, cornflour and water. Cook until the sauce becomes translucent.
    4. Add the blanched vegetables. Stir-fried over high heat until it turns fragrant.
    5. Dish out and serve.

    That is brilliant! I'm 77 - l make mostly Asian food - but my stirfries often turn into veg casseroles before the veg are cooked. I never knew about blanching! But it makes perfect sense when you think of the restaurant stirfries. So thank you again!

      I'm 75 and I am a lover of Chinese food, and determined to learn how to cook it. I never knew about blanching either ! But it all makes sense now. I can't wait to try it out. They never give you amounts !! like a proper recipe. If you want to make a batch of the sauce for later recipes, you still need to have some idea of the proportions of the ingredients that go into it. I always seem to over do the oyster sauce or the soy sauce, and consequently end up destroying the dish (last time it was as salty as anything) and i followed that particular recipe to the letter with my measurements ? so now, I'm still none the wiser.He explained it very well, but proportions would have been helpful.

    Blanch vegetables -‐
    Boil water three times of vegetables
    Cook for threw minutes
    Add snowpeas for 1 minute
    Set aside
    Prepping the sauce
    Oyster sauce
    Pepper
    Corn flower
    Go over ingredients
    Stir fry --
    Chop garlic
    Add stir fry sauce
    Add the vegetables to the wok
    Stir for 1/2 minute

    I like that you mentioned that the home stove will not be hot enough to produce Wok Hei. At the place where I worked, we had a lovely Chinese family who brought their pets to our clinic for health care. They had a restaurant on the Northside of our city. One day, when all was quiet they came in for so medication for their dogs and I told them I was trying to learn to cook Asian food, but couldn't seem to get that singed flavor like we would get in a restaurant. They were very honest with me and said that home stoves were not hot enough to get the Wok Hei flavor, which is the breath of the wok, just like you said. They told me when they cook at home, they don't get that flavor, either and I felt better, but was disappointed. I wished I had a home wok burner until I saw a video where the Asian woman did have a real wok burner and it was in a separate place with a powerful hood over it. I thought if she wasn't careful, that wok hood was going to suck her up right out of her kitchen and she'd get stuck in the hood! Thankfully, that didn't happen, but she was a tiny lady and knew how to cook on a real wok burner and wok. The hood was so powerful that it was also very loud, but if it wasn't there, there would have been nowhere for the steam and smoke from the wok to go, but all over the house. I really enjoyed your video and have subscribed to your channel. Thank you for taking the time to show how to cook stir-fried vegetables. Now, I will look for your channel and see what else you are teaching us. 😀

    I just made a vegetable stir fry. I added roasted, salted cashew news on the top and also incorporated some pieces of steamed tofu into the dish. I steamed the tofu on top of the rice after it had been boiling for a while. Very satisfying!

    When I was a kid back in the early 90's, I dislike eating vegetables. Things changed when my neighbor (who is a Cantonese) cooks like you Sir. Now I must have vegetables everyday.     Read it first, went away and did some stir-frying, with a smaller-than-desirable wok, and an incomplete understanding of blanching, got soggy, wilted vegetables somewhere between raw and partly-steamed, with no taste, and then returned to the video, spotted all my mistakes, corrected many of them (not all! haven't got a high-intensity wok burner yet), and stir-fried veg. is blissful! Thank you for the careful and complete guide to stir-frying.

      It’s actually more a "method" than a recipe because you can change the vegetables to what you have on hand. For the sauce, you could add chopped ginger, or soy sauce if you don't have oyster sauce. Keep to the basics but substitute if you have to. Shiitake mushrooms, Bok Choi, bean sprouts, whatever you have.

      If you don't know how to cook vegetables where they aren't mush...then you shouldn't be in a kitchen. You don't know what blanching is?
