Thanks, always enjoy Rice Pudding so glad for this recipe. Before you add the egg yokes how long should you wait after taking it off the stove to slowly add it to the eggs? Wouldn't want to ruin it after all the time to cook on the stove. Like the addition of the 2 egg yokes and also the butter. I haven't seen this on any other recipes I followed in the past. Like the old saying goes, you should learn something new everyday. I always struggled separating eggs using the 2 half shells. I once saw on a video, an easier way for me, to put the whole egg in a small bowl and put a tablespoon in an just scoop out to yoke. Thought I would mention this, if it could help others. Thanks for all of the recipes you share and your calm and reassuring delivery method.
Thank you so much for these nice comments. I love learning new things every day too! As for adding the egg yolks, you can temper them in immediately after taking it off the heat. The only reason I turn it off while tempering is so the pudding doesn’t burn while separating the eggs :)

Followed your recipe but added raisins , 3 cups of milk and 1 cup of coconut milk and subbed sugar for 6 packets of sweet n low 😮it’s soooo good thanks so much
WOW! This was a cinch to make and the taste, flavor, and creaminess is out of this world dee-licious! The written directions advise to cover with a lid when reducing the heat and simmering for 20-25 minutes whereas in the video it cooked uncovered. I decided to cover and let it cook undisturbed like regular rice and it cooked perfectly without scorching. Finally with the egg yolk addition, butter and vanilla I was happily rewarded with the best rice pudding ever, thanks so much for sharing this gift 🎉❤😊
Just made this recipe, now cooling in the fridge. I added a couple pieces of Star Anise to give it an Indian flare (jar found in the dry spice Isle). Still a bit warm and already delish! Thank you!!!

Years back, working as a nanny, the children’s grandmother ate this every single morning for breakfast. Of course, she made her own! 💞 I appreciate that you show the difference in the rice, too. I was going to try a recipe with similar proportions, but the cooking method was three times as long. I love the idea of allowing the rice to swell unassisted. Thanks so much for the video! I'm gonna but my rice NOW lol.
This recipe is foolproof and I have made it four times since this video, so I know. The type of rice is key. Do not use long grain. That said, the ARBORIO rice I bought was very expensive (it came with a fancy brand name in a clear plastic container) so I looked for a similar looking rice in a bag. Bingo...for 1/3 the price i found "medium grain" ( which looked almost exactly like the Arborio) in a bag and worked just as well.
this comes at a perfect time! i haven't had rice pudding in years, and for some reason it caught my eye at the store on the weekend.... but the price and bad ingredients weren't worth it for me. I'm going to try this for sure!!.. I might add the cinnamon right in to the whole batch, and maybe some raisins ! Thanks as always paul!

you really need to add some type of dried fruit or fresh blueberries and a sprinkle of crushed walnuts or pistachios . The problem is I eat it all when made

Please everyone , trust this recipe. I'll never try another recipe. IMPORTANT: the ITALIAN STYLE / ARBORIO is key.

My Mother’s rice pudding is baked in a water bath and has a lightly browned top. It is the best ever and not packed with rice.
Another great way to make rice pudding. I definitely don’t like when it’s too packed with rice :)
