Leftover Rice Pudding Ingredients • 1.5 cups milk • 0.5 cups milk • 1.5 cups cooked rice • 0.33 cup sugar • 4 black cardamon pods (green will also work) • Pinch of salt • Optional - 0.33 cup raisins • 1 egg, beaten • Cinnamon • 1 Tbsp butter • 0.5 tsp vanilla extract Steps 1. Add 1.5 cups milk to saucepan. Add rice, sugar, cardamon, and salt. 2. Heat over medium-low heat, stirring constantly for about 15 to 20 minutes. Mixture will thicken as rice absorbs the milk. 3. While mixture is heating, prepare remaining milk by adding beaten egg and mixing 4. When only a few minutes remaining, remove cardamon pods and add (optional) raisins. 5. Add a few tablespoons of the hot mixture to the cold milk-egg mixture and stir. This will prevent the egg from coagulating when added to the saucepan. 6. Add the tempered milk-egg mixture to the saucepan and stir. 7. Sprinkle in cinnamon, to taste. 8. Cook, stirring constantly, for final 2 minutes. 9. Remove from heat, stir in butter and vanilla. 10. Server warm or cold.

Mum used to put it in the oven to actually cook. When pudding was ready there would be this yummy skin on it. Must be different ways with rice pudding. Yours looks real good too.

Didn’t have the cardamon spice. In fact, I had to look up what it was🤪. It said you can substitute cinnamon, ginger, cloves or nutmeg. I decided to sprinkle in some of each. Tasted pretty good!😋

To be honest I have never used instant rice and have never cooked this from a raw state...I make this when I have leftover rice or intentionally cook more rice to have leftover. Can never hurt to give it a try.

Mike what is with the egg and vanilla with butter? is that an American thing? I say it in another American video. I baked it in the oven and every time its turned out stodgy. I s this where I'm going wrong, I need to pan cook and monitor it?
If I wasn't using cardamom and cinnamon for flavor I would go in with a tbsp of vanilla. Even with the cardamom and cinnamon there is no reason why you couldn't add vanilla

Leftover Rice Pudding
Ingredients
• 1.5 cups milk
