    I just made this for Valentine's day and added espresso powder, Mascarpone cheese and dusted the top with shaved dark chocolate to make a makeshift Tiramisu Rice Pudding. It was amazing!

    Cubans call it arroz con leche and we make it with a bit of lime peel, evaporated milk, condensed milk, and cinnamon sticks! So delicious and love seeing cultural varieties.

    Great recipe. My (italian) grandma likes to cook the the rice on the milk with some sticks of cinnamon and whole cloves, turns out great too.

      Same, except my grandmother added raisins to the milk as it was cooking so they become plump, sweet, and delicious. I'm not really a fan of raisins, but cooking them really makes all the difference.

    Woot! I feel vindicated! I've been secretly using the one-pot method to make rice pudding for years. Always thought it was because I'm lazy (I am!). Now it is an official, chef-approved method and I don't have to hide my little secret any more! Thanks, John! 😊

    In Sweden we eat rice pudding as a dessert on our smörgåsbord of Christmas food. it's super yummy with a sweet Strawberry sauce! However we cook it differently. We use short grain rice and instead of boiling the rice before adding the milk we just pour in the milk and let the rice boil in it. :) it is also a Christmas tradition that you put a almond in the saucepan and whoever gets it is supposed to marry with in a year.

    I am quite the fan of rice pudding...typically make the stove-top variety with leftover rice. Nutmeg is our spice of choice. Thank you for this!!!

    I've never seen Rice Pudding made this way .
    My Mother would makes it with Condensed milk, Evaporated Milk, Whole Milk, cinnamon sticks, lime zest ,Real Vanilla,Sugar and Valencia Rice

    I've never seen a recipe like this one. I'm from Mexico and at home my mom and my aunts never made rice pudding with egg and butter and it was always cook with milk. However I'm curious and I'm going to make it following your recipe. Greetings!

    If you use brown rice and cut down on the sugar, you get something that's more enjoyable as a hot breakfast item. It's good when you get tired of oatmeal and want something simple and filling but not heavy like bacon and eggs.

    Thank you Chief I was wanting a recipe so I could make my own! I am one of those odd people that does crave rice pudding. I normally enjoy it in the morning as side to breakfast or paired with some strawberries.

    Wow this is VERY similar to the Danish festive dishes Risengrød & Ris a la Mande. The first of which you serve hot for dinner with a sprinkling of cinnamon sugar, topped with butter and served with a low alcohol beer called Hvidtøl. The second is the dessert edition, which has cream instead of milk, almonds, vanilla and is served cold with a hot cherry sauce on top. Usually a whole almond is hidden in the whole portion of the latter, and the one who is lucky enough to get it, gets a small present. This looked like a great variation, I need to try it! Great recipe!

    That looks yummy! I've never made it with egg before, mine thickens up from the rice's own starch. I also throw in a cinnamon stick & 1 star anise, plus evaporated milk & heavy cream. I really like this because it seems the time to make it is considerably shorter!

    Oh, IDK. I've been craving this lately. But yeah, not sure I'd get it at a restaurant, because they tend to make it in really big batches and it's just not as good as something you'd make at home.

    Never heard of using more than one pot but maybe that's just the cuban way. And eating the scorched bottom is the best part! We fight over it.

    Man, I want to try this one soon! I have tried making rice pudding through an online recipe I found a couple of years back but it never turned out the way I wanted (including the texture). So I am going to give this one a whirl! It looks already like it's leagues better than the one I have done so many times too many.

    try using 1c coconut milk and 1/3 cup whole milk. its SO good.

    Yummy! I love rice pudding. When I make mine, I soak some raisins in a little rum, then add them in the pudding. The alcohol gets cooked off and a nice kick of flavor is left behind

    I am one of the rare people that CRAVES rice pudding! there is a Greek restaurant 20 minutes away that I go to and they always have it!( and baklava)

    Well, this sure beats my makeshift rice pudding of using old takeout rice, throwing in milk and cream as well as cinnamon, vanilla and nutmeg and stirring until the consistency is what I like.
    I'll definitely have to give this recipe a go!

    I like mine with a splash of coconut milk and top it with some caramelized diced pineapple. Sometimes I also use Rum extract for extra flavour.

    Cooks Illustrated had a thing on egg tempering this past month in which they determined that it's moisture that prevents eggs from going scrambled: if they're wet enough, the proteins can't cross-link into a scramble.

      yet my mother and grandmother always added milk to scramble them and they turned out wonderfully! Pluss eggs are about 90% water anyway.

    i did this before but added everything to the pot all at once so that the rice would absorb the milk and sugar and not just water

    Use whole milk and condensed milk instead of sugar for better flavor! When you cook the rice, add a couple of sticks of cinnamon to the rice for additional flavor. So easy!!

    Rice pudding makes me think of my school roommate who made spaghetti pudding out of leftover pasta. She did. It was surprisingly good. Why not? She was the Martin Luther King of her starchy pudding.

    Wow i never thought id find a single video to disagree with chef john so much on but i love rice pudding! I actually have sought it on restaurant menus, i love raisins (tho the crasins sound interesting,) and i think it tastes so much better warm rather than cold.

    And for the few people who don't like the thin "skin" forming on top of the pudding while it is cooling of which becomes sticky and a little annoying you can just use a cold bain marie (a bow filed with cold water and some ice) and just cool the hot rise in the pan. This will prevent it from forming and you will have to wait even less to enjoy it!

    I would like to dispute the claim that people do not claim rice pudding. I have on many occasions and know what restaurant will have it on what day. I've, also, made it myself many times when the craving hits. I love it THAT much.
