  • We visited the stew specialty restaurant "Gin no To" located near the Higashi-Ginza Kabuki-za Theater in Higashi-Ginza.
    This restaurant is a long-established business founded in 1955 and is well known among those in the know.
    The building that used to be a pawn shop before World War II was taken over, and the Showa-style facade is impressive.
    Inside the store, the large safe door from those days is still there, giving the store a mysterious and unique atmosphere.
    When I was a young man, I was always called to the "Silver Tower" for lunch by the bigwigs at Dentsu, my business partner at the time.
    It was also around that time that I learned the taste of tan stew and the immorality of daytime beer.
    This time, Coco had the beef stew set with gratin and I had the tan stew, which I always ordered.
    Tan stew, which was a hidden menu item back then, was now added to the default menu.
    Since then, many people have been asking for tan stew that is not on the menu, so I guess there is no longer any point in having it as a hidden menu item.
    I felt nostalgic when I tasted it for the first time in a long time, and I also felt a fresh sense of deliciousness that I had forgotten.
    Unlike the rich Western-style stews, it is a unique flavor that can be called a light Japanese stew.
    Like the "ma" in Kabuki, there is a depth of flavor that changes when the hot stew is eaten after a little time.
    In addition, the modest seasoning and the slightly fragrant octagonal cinnamon-like spices enhance the ingredients.
    It is a taste of Japanese gentleness and profundity.
    It is a somewhat soothing stew.

      ビーフシチューみたいな濃いめの料理は白飯がよく合うので、ご飯🍚がすすみました😆

    隠し味に味噌を使ってるので、その焦げた香りが八角の香りに似てるのかもしれないですね。
    お野菜は全て別調理してるのでシチューの風味を邪魔しない…手間をかけてますよね。

      独特の風味は隠し味にあったんですね。
      確かにお野菜の食感もしっかりしていて、溶け込まずちゃんと共存してるんですよね。
      ほんと、癖になる味です。
