When I visit Japan, I really have always wanted to visit towns and places like these. I’m sure places Tokyo and Kyoto are beautiful and also want to go there but my favorite places are small towns like these with people like her. I will definitely give TORI-Ki a try when I visit. As a westerner the thought of eating chicken sashimi is definitely a barrier I'd need to overcome. That said, the dishes here look phenomenal! I wish Saki all the fortune and prosperity in the world, which she clearly deserves. It takes courage to open a restaurant with no experience and she looks to be nailing it! nicely done!
Same thing, the chicken we have at home is really not intended to be eaten as sashimi. It's not fresh enough, and I can't stand the smell until it's cooked. To make sashimi you need extra extra fresh chicken, and be sure of what quality you have or risk ending up in the hospital (salmonella, campylobacteria, etc.)... Not that easy on my end =$.
@@MyRealName I agree, but that's no reason to take just any chicken. Extra fresh chicken will always be more likely to be edible raw than chicken found in the supermarket. Between a chicken where you normally won't have any problems and a chicken where you are almost certain to have problems, the choice is quickly made... Afterwards you do what you want, it's your health not mine :).
Even the freshest cage free organic chicken couldn't(and shouldn't) be served like that where I live. Honestly though this seems like a very lovely restaurant and people are obviously not getting sick all the time from the food, so they're doing right with the ingredients they get. But yeah, the thought of chicken sashimi really does gross me out.
They probably just flash freeze the chickens the same way fish is processed for sushi, aged and flash frozen, thawed for use as raw sashimi. Direct from the water fish as you usually want to dry age the fish a day or two to help deepen the flavor.
