and this is absolutely BS. some vegetables but especially fruits are just equal to eating sweets with the amount of fructosis or starch. also some vgetables are just so "empty"that you could just take a vitamine pill and have the way to go. please don't generalize everything. vegetables and fruits are not always great and healthy.
@@glasperle77while a cotton candy grape probably has equal to or maybe even more sugar than say a jolly rancher the nutritional value is different due to the varying vitamins and such in the piece of fruit fruit and veggies are also known for having water filled cells providing more hydrations than candy or whatever. Also even if it’s not “healthier” the act of eating a grape over a piece of candy is a step closer to not even wanting the candy and it tends to make us feel better about ourselves anyway.
@AUDHD_Mom I am with you. I put a little bit of honey in my salad dressing so I could eat salad, almost everyday. (I added fruits like grapes, oranges, apple, pear etc to my salad) . Salad helps to curb my sugar cravings. BMI improved. My skin is also better now without pimples.
I have Crohn's Disease and was diagnosed in 2022 and initially I REALLY missed so many foods that I knew were triggers, my mine ones are any kind of pepper so bell, chilli, sweet etc. Also in any form fresh, dried etc. It meant so many cuisines I love I could no longer eat, so a lot of south east Asian and mexican as they were my faves. Now I have absolutely zero desire to eat any because I know the excruciating pain I will be in if I do and it lasts days and sometimes weeks. It's just not worth it to me anymore. I say all that to tell you just how much I love your IBS friendly recipes! There are SO many over laps with IBS and IBD and you have really helped me be inspired again to cook and experiment in the kitchen again. I lost my live of cooking for a while because of my diagnosis. So Thank You! ❤❤❤

as someone who also has crohns, i would assume cucumbers don't cause flare ups to you, but for myself i cannot have the skin so i would def be careful with that if you plan on eating the whole cucumber!!
I have ARFID and you channel has been a lifesaver for getting more balance amidst a lot of my safe foods not being super nutritious, having ways to make the stuff I can comfortably eat that is more nutrient dense more enjoyable has been a great start to trying to be a bit healthier while working on recovery
I don’t even know you but I’m so proud of you! I’ve had other difficulties with eating and while I can’t truly get it I know food can be a complicated thing to struggle with. I’ve heard ARFID can be really challenging so I’m very happy you’re finding ways to get the nutrition you need 💕
Ahh I love this for you! I've also been very helped by this channel. I don't have arfid but I have generally been picky and very hesitant to try new things. But the adding instead of subtracting mindset has been so helpful to me and it's also helped encourage me to try so many new things :)

People with ARFID usually have a few safe foods that they feel comfortable eating and usually have extreme or moderate distress when having to eat things that aren’t their safe foods
yummy. My family is from Hungary and the traditional way we've always made this is super similar! It's essentially the exact same recipe, but instead of Korean chilli powder you use sweet paprika! Just thought I'd share if there's anyone out here who wants to try but isn't the biggest fan of spicey stuff :3

Recipe for those who want it: Cucumber Salt Gochugaru (1/2-1 Tbsp) Rice vinegar (2 Tbsp) Sugar (1 tsp) Sesame oil (she didn’t say a measurement but it looked like between 1 tsp and 1 Tbsp) Minced garlic Sesame seeds Green onion 1. Slice cucumber 2. Add salt to cucumber and let sit for 10-15 mins 3. Drain water from cucumber 4. Add all the seasonings and mix thoroughly!

Sad hugs. Did you guys know that you can treat IBS with dietary changes or talk therapy? Both cures have equal success rates!? Before the pandemic i was sliding towards awful IBS symptoms all the time and only eating foods on the FOADMAP list. Something about lockdown and staying at home helped calm my mind and get over it all…and my body followed, i guess? Everything IBS disappeared one day 3 years ago.
Oi muchim! You can also add a little bit of fresh ginger to soothe your stomach. It’s not as common but a local Korean restaurant prepares it that way and it’s so good.
I do wish creators would at least let their viewers know where they are getting these recipes from. If people knew it was oi muchim it would open up lots of other cool inspiration from Korean cooking. But sadly I think many creators choose to not say the name of the recipe in hopes that their audience thinks they came up with it all on their own

Cucumbers have always been my favourite food! And I’m a very picky eater haha, I mostly like sweet things and grew up being allowed to eat whatever I wanted which was a Lot of chocolate and sweets. But my mom always knew the quickest way to get me and my brother to stop playing and come eat dinner, was to shout “cucumber is ready!” and we would come and devour a cucumber each before dinner 😂😂😂 it tastes good, it’s quenches thirst, AND something I’ve realised over time is it is very good for pairing with high glycemic index foods if they usually make you feel sick, because it slows down the digestion. So it’s actually a really suitable addition to a chocoholic’s diet haha

@@moiouimoi3858You can soak whole cucumbers in a saltwater brine for a couple of days if you want to soften the texture. In New York we have "half sour pickles" which are cucumbers soaked in saltwater with garlic, dill, and spices for a couple of days but then moved to the fridge to prevent them from actually pickling. You get the texture of pickles and the flavor of whatever you put in the brine but without the sourness of pickling.
My family would often just eat cucumbers in seasoned rice vinegar. When I was living in Japan it was such a quick and easy veggie option for tired nights after work.

I am working on my relationship with food, I have a lot of different diagnoses that makes food a really hard subject. I struggle because of my depression to actually make food and because od the fact that I am neurodivergent I have a lot of problems with foods and texture and stuff like that. I also life in an assisted living facility from social services and have a really small budget for food.. I would lovee to see a recipe that is easy to make (maybe in the microwave) and uses cheap but still relatively fair ingredients!! Glad this is a trend; growing up, my parents always stocked the fridge with cheaper veggies like cucumber, tomatoes, iceberg lettuce so cucumbers were always a side for breakfast sandwiches, curries and rice, ramen noodles, etc. as an adult, I love the freshness that cucumbers add to any meal

(Context: I was raised by a vegan which gave me some really weird eating habits) once on a road trip for some reason I got it in my head that a great lunch would just be a whole cucumber. Just stopping at a supermarket and buying and entire cucumber and taking bites out of it. I probably got through like half of it which honestly still impresses me, given I was like ten.
My mom is Korean, but she was born & raised in Japan until she was a teenager. She makes cucumber salad two ways - Japanese Sunomono or Korean Oi-Munchim. Both are so tasty & call for similar ingredients with just one difference. It's hard to pick a favorite, so it just depends on what I'm in the mood for - either slightly spicy with Korean gochugaru or slightly salty with Japanese shoyu (aka soy sauce).
Now Logan is even motivating others to share their cucumber recipes (again). Hopefully there will be more people posting more cucumber recipes. (Cucumbers are currently very cheap here. :D)
I also love cucumber with spinach, olive garden Italian dressing and a pinch garlic salt, with shredded Parmesan. It's so simple but so good! I want that now lol

Here's a cucumber recipe from my country, Bulgaria! It's called tarator and it's a really refreshing cold soup we eat in the summer. You mince or chop a cucumber into small cubes (at home we prefer it minced, others prefer cubed). You add sour yoghurt (you'll most likely know of Greek yoghurt, though Greek yoghurt is a bit sweeter). You can add sunflower oil or olive oil, salt, dill, some people also add walnuts and mix them all up. Finally, once mixed well, you add cold water and enjoy! At home we usually use the same container the yoghurt came in for the water - and so, if you use 2 yoghurt containers, you'll fill them both with water and pour into the soup. It's really easy to make and it's really refreshing and filling!
@@Pinksweatshirt Yes and no. Tzatziki doesn't have water, it's just a salad, while tarator has water! In my country, we call our version of tzatziki "snezhanka"! Not surprising that Greece and us have similar foods, otherwise, we are neighbouring countries that are part of the same general cuisine with minimal differences. I will say that Bulgarian yoghurt is more sour than Greek yoghurt due to the fermentation process. Generally, though, you'll find the similar meals all throughout the Balkans and Middle East!
Adding about a teaspoon or two of fish sauce will make this so much better. It's one of my mom's secret tips for making these pickled (?) cucumbers taste great!

My fav way to have Cucumbers is what I call "Cucumber Salad": Thinly sliced cucumber, thin slices of green (&/or red, orange, yellow) peppers, and thin slices of Roma Tomatoes. Place into a bowl, and gently toss with Italian dressing (Reg or Creamy, both are good). Bon Appetite!! ❤ 🥰

I've always enjoyed pickled cucumber. Either put it in the jar of remaining vinegar once you've finished your pickled onions or put it in malt vinegar. So good. I'll definitely have to try this way as well.

Try different homegrown pickling cukes or even Armenian striped (a C. melo not C. sativus) which have FAR DIFFERENT texture/mouth feel. The English cucumbers and garden variety sold commonly ARE FAR FROM THE BEST CULTIVARS...and are sold...much like the single banana variety offered BECAUSE they can be harvested PREMATURELY and TRANSPORTED with little discolouration SO THEY LOOK GOOD. Taste, texture, mouth feel and other factors are far less important....if you eat only those fruits and veg which are "commonly available" in stores....you have not yet TRULY TASTED a cucumber. Homegrown cucumbers are exponentially superior to the bland and insipid varieties offered in commerce.
@DanceintheRaine666 so my issue is the melon-ist texture (I have the same issue with watermelon and other melons). I'm not sure how much of that is inherent to the cucumber.

I am working on my relationship with food, I have a lot of different diagnoses that makes food a really hard subject. I struggle because of my depression to actually make food and because od the fact that I am neurodivergent I have a lot of problems with foods and texture and stuff like that. I also life in an assisted living facility from social services and have a really small budget for food..
I would lovee to see a recipe that is easy to make (maybe in the microwave) and uses cheap but still relatively fair ingredients!!

Glad this is a trend; growing up, my parents always stocked the fridge with cheaper veggies like cucumber, tomatoes, iceberg lettuce so cucumbers were always a side for breakfast sandwiches, curries and rice, ramen noodles, etc. as an adult, I love the freshness that cucumbers add to any meal

(Context: I was raised by a vegan which gave me some really weird eating habits) once on a road trip for some reason I got it in my head that a great lunch would just be a whole cucumber. Just stopping at a supermarket and buying and entire cucumber and taking bites out of it. I probably got through like half of it which honestly still impresses me, given I was like ten.
Sometimes, cucumbers be hitting different. You probably needed the water too.

My mom is Korean, but she was born & raised in Japan until she was a teenager. She makes cucumber salad two ways - Japanese Sunomono or Korean Oi-Munchim. Both are so tasty & call for similar ingredients with just one difference. It's hard to pick a favorite, so it just depends on what I'm in the mood for - either slightly spicy with Korean gochugaru or slightly salty with Japanese shoyu (aka soy sauce).
Korean cucumber salad is one of my all time favorite snacks now

I also love cucumber with spinach, olive garden Italian dressing and a pinch garlic salt, with shredded Parmesan. It's so simple but so good! I want that now lol

i love cucumbers so much. sometimes i just this recipe doubled for an afternoon snack and by god it really does refresh you. on a soul level.
Here's a cucumber recipe from my country, Bulgaria! It's called tarator and it's a really refreshing cold soup we eat in the summer. You mince or chop a cucumber into small cubes (at home we prefer it minced, others prefer cubed). You add sour yoghurt (you'll most likely know of Greek yoghurt, though Greek yoghurt is a bit sweeter). You can add sunflower oil or olive oil, salt, dill, some people also add walnuts and mix them all up. Finally, once mixed well, you add cold water and enjoy! At home we usually use the same container the yoghurt came in for the water - and so, if you use 2 yoghurt containers, you'll fill them both with water and pour into the soup. It's really easy to make and it's really refreshing and filling!

@@Pinksweatshirt Yes and no. Tzatziki doesn't have water, it's just a salad, while tarator has water! In my country, we call our version of tzatziki "snezhanka"! Not surprising that Greece and us have similar foods, otherwise, we are neighbouring countries that are part of the same general cuisine with minimal differences.
I will say that Bulgarian yoghurt is more sour than Greek yoghurt due to the fermentation process. Generally, though, you'll find the similar meals all throughout the Balkans and Middle East!

Adding about a teaspoon or two of fish sauce will make this so much better. It's one of my mom's secret tips for making these pickled (?) cucumbers taste great!

My fav way to have Cucumbers is what I call "Cucumber Salad": Thinly sliced cucumber, thin slices of green (&/or red, orange, yellow) peppers, and thin slices of Roma Tomatoes. Place into a bowl, and gently toss with Italian dressing (Reg or Creamy, both are good).

I've always enjoyed pickled cucumber. Either put it in the jar of remaining vinegar once you've finished your pickled onions or put it in malt vinegar. So good. I'll definitely have to try this way as well.

Honestly this look so good i wish i didn't gag over the texture of raw cucumbers
Try different homegrown pickling cukes or even Armenian striped (a C. melo not C. sativus) which have FAR DIFFERENT texture/mouth feel.
The English cucumbers and garden variety sold commonly ARE FAR FROM THE BEST CULTIVARS...and are sold...much like the single banana variety offered BECAUSE they can be harvested PREMATURELY and TRANSPORTED with little discolouration SO THEY LOOK GOOD. Taste, texture, mouth feel and other factors are far less important....if you eat only those fruits and veg which are "commonly available" in stores....you have not yet TRULY TASTED a cucumber.
Homegrown cucumbers are exponentially superior to the bland and insipid varieties offered in commerce.
Also the marination process IMPROVES the texture.
@DanceintheRaine666 so my issue is the melon-ist texture (I have the same issue with watermelon and other melons). I'm not sure how much of that is inherent to the cucumber.
