You requested this one after I showed a glimpse of it during the New York deli coleslaw video:ua-cam.com/video/lI7k1yewQc4/v-deo.html so here it is. Often the cucumber skins will be removed and the slices or chunks are thicker. Regardless of the shape, the flavor of this salad is spot on. The ingredients are in the written description. As always, thanks for liking and sharing our videos.
I'm one of those that requested this & I thank you so much for taking the time to make this for us! 💜🥒🥗
You can also use a cheese slicer intead of a mandolin, for the thin slices :)
Throw some light oil on that board. It will soak it right up
This is just a plate of pickles. You made sweet pickles. How/why is this a salad that you eat?
Cheese slicer is not sharp enough
I made this for my Brooklyn born hubby. My homegrown cucumbers, onions and dill. He almost had tears in his eyes. He said “I feel like I’m on Flatbush Ave. again.” Thanks for the recipe.
❤
Aww, this is great!!! What a compliment. 🥰
I feel like I’m in Sheepshead Bay again… 1970 😊
Love James your taste tester!
Thank you for rescuing those of us who have moved away from the metro area and despaired of ever finding NY-quality deli salads. Now we can homebrew them.
Who knew a cucumber salad video would make me cry! My father (may he rest in peace) used to make this salad especially for me. I miss him so much 😢 but seeing this father and son bonding over good food is a tender, lovely moment in the middle of a chaotic and often cruel world. Hoping you will continue to make beautiful memories and delicious food (!!!) for all the days to come. And thank you. ❤
I enjoyed a similar experience with my father when he was as with us. Wonderful memory you shared. 🥰
@@jennifertridle8677 thank you 😊! It was kind of you to say so.

Dads expression when James is taste testing is lovely, proud dad. Definitely trying this.
I love how he gives safety lessons in cutting and not just doing the recipe. New subscriber.
Welcome to his channel. He's got such great content. I've learned a lot from him.
Too much talking
@@susansterchi4269 lighten up!!😂 most of us enjoy his commentary!!
Hey Jim! I find that taking a 1 gallon zip lock bag and putting everyhthing in it to marinade, and squeezing the air out before closing it works better than the baking dish overnight in the fridge. It also puts everything in contact with the marinade and takes up less space inside your fridge. This is also easier to transport in a cooler to the beach or a pic nic. Good stuff.😋
it does work but the only problem is the micro plastics in the bag leaching into the food.i assume the vinegar may make it even worse.
@@pattiannepascual Considering that litterally everything you buy at the supermarket is wrapped in plastic, I am not going to worry about 1 more.
Good idea to put everything into Zip Lock bag! Just for one night it's OK! And "leftovers" (if any) will go to the dish after dinner...
@@JimMorrison-m8x
I've been doing the same Ziploc bag trick for at least 10 or 15 years now !
No mess to clean up 🧽 either
That's what I do as well any time I marinade something.
My grandma used to make "cucumbers and onions" Equal parts vinegar sugar and water. We absolutely loved them and all of us kids still make them to this day
Same here! 😋
Me too! But she (and now i) peel, take out seeds and dice the cucumbers. I also add dill.
Same in my family!
Instead of water we use oil and lots of salt.
Mine did to
Delis also used to offer German/Jewish "Gesundheit" (health) salad. It was a mixture of sliced summer vegetables (cabbage, bell peppers, celery, radishes, carrots, cucumbers, onion) that was dressed with a dressing of vinegar, oil, sugar, salt, and garlic powder; and then packed into a big jar or a crock. Each of the peoples of central and eastern Europe (Germans, Poles, Hungarians, Russians) have their own variation of this salad.
Wow, Health salad is a blast from the past. Where did you buy this salad?
@@silkscreenart5515 -- I bought "health salad" from a little Jewish delicatessen in a nearby city -- Weintraub's --which (alas) is now closed. But on UA-cam there's a video that's titled "Depression Era Jew Salad Recipe" which tells you how to make it.
@@kevinbyrne4538 Thank you!
I am so relieved to know that I'm not the only one who can't pour out of a Pyrex measuring cup. The struggle is real and so are you. I love this channel!!
Me too.
Seriously, why do they even put a spout on those? LOL
Add me to your list of Pyrex Pirates incapable of pouring without spilling from Pyrex measuring bowls. Pyrex needs to get someone from NASA or Boeing to redesign that pouring spout.
Hey Jim. When I make cucumber salad (or other marinated dishes) I just put everything in a zipped food storage bag. I flip it back and forth to coat everything and turn it once or twice during its resting time. ❤️😎
Definitely going to try your recipe.
Love this idea to save space in the fridge too!
Zip loc bag is the way to go!
brilliant!! automatic sstorage as well
I avoid putting food in plastic (just me, but Google) covering it is okay as long as the plastic wrap isn't touching the food).
Micro plastics, especially with vinegar.
Greetings from Spain. I learned a similar recipe from an Ukrainian here. One trick is to soak the whole cucumbers in water overnight, in the fridge. It is so to get crispy cucumber slices rather than soft.
Mmm! Oh yes! -perfect texture!
Interesting to know this trick. I like the crisp in the cucumbers and always get disappointed when cutting them and they’re not crisp.
Am absolutely loving your NY salad series! Our Italian-American family lived in Brentwood many years ago but German deli food was a staple in our house. My sister and I are now 60-something Long Island expats (I live outside of Washington DC and she lives in St. Louis Park, MN.) Needless to say we are both thrilled that you are sharing these wonderfully authentic recipes. THANK YOU SO MUCH!!!
❤Howdy, "Brentwood"! My wife, Son, and I live in Lindenhurst, NY. During the Summer months, when our cucumbers are exploding, we all take a hard in preparing our versions of cucumbers salad. Sometimes we incorporate a small dose of pickling spices or some of the ingredients typically found in pickling spice. Like you, the Ball and Chain and I are 60+, and the Boy's 30+ years old. 😊
My family makes it just like yours, but they drain “most” of the liquid the next day and add approx 1 cup of sour cream. Delicious.
Your version sounds good too!
Will try. Thnx!
Oh snap! I’m trying that!
Don't skimp on the sour cream! We add paprika as well.
@@samuelcsukor5268 I have to write all this down...
I do the same, but use yogurt instead.
My favorite part is when James does the taste test! ❤
James has such a mature personality for his age! This recipe is right up my alley, I'm definitely gonna try it
James is a channel bonus! Love the palate and the candor - totally trust that kid’s opinion!
Amazing that so many cultures have a variation of this recipe. In Denmark we call it agurkeslat, typically doesn't have onion and uses a lot more sugar. But I tried this version yesterday, and I really liked it. Normally I don't care for uncooked onion, but the pickling process makes it very enjoyable.
My grandma was making this 60+ years ago. Both my mom and I love to make it and now my son's and grandsons love it as well. Peace ✌and love ❤from Canada🇨🇦
German here - that's just the way my mom used to make it, just with way less sugar. But apart from that, cucumber, onions, vinegar, salt and pepper. Great as a side to stewed dishes like Rouladen, the tartness cutting through the rich sauce.
Hungarian recipe is the same with way less sugar.
What is ‘way less’ sugar for your recipe? I’d like to try both ways.
My all Italian mom used to make this for my all German dad. No sugar at all tho. (And yes, when they married in 1957;it was considered scandalous.)
@@robrobertson8427 A tablespoon at most. More a teaspoon, just to counter the acidity a bit.
I agree on the less sugar. I don't remember it ever being so sweet. I guess back in the late sixties, early seventies, they were not as crazy with the sugar. People were a lot thinner back then, This could be part of the reason.
My mom used to make this a lot through the summers with our home grown cucumbers. It's addictive. She made another cucumber salad with sour cream and onion......salt and pepper. I think that was all, all I know is it was delicious!
And lemon juice!!!
@@lindabaldridge4438 Yes!! Forgot the lemon juice. Yummy right?
I tried this and put it on a hot dog. It was fantastic and didn't need anything else. Give it a try!
I love "pickled" anything (i.e. sugar/vinegar and let it soak) so I know I'm going to love this :) So simple and easy, too!
I really appreciate your east coast style deli recipes. I love east coast delis, but I'm stuck on the west coast. I enjoy any opportunity to duplicate the taste without buying a plane ticket. 👍
I’m from the South, and in the summertime, we always had big jars of sliced cucumbers and Vidalia sweet onions in the fridge. The ‘dressing/marinade’ was vinegar, sugar (not nearly as much as you used though), black pepper, salt and water. This was a constant during the Summer, and always my favorite.
Besides being a great cook, you are a great poppa ❤️
I also thought James was in his teens and I feel kind of bad cuz I initially thought he was a typical teenage sneaker head but that’s definitely not the case. Thank you mom and dad for all you do. On another note my great grandfather always said to use a cutting glove when using a mandolin. He was a time traveler
I can't believe how much James has grown up!! 😊
Finally! A UA-camr who knows what a kitchen steel is! 🥳🧡
Most know
@@daveklein2826 Not the ones I've seen.
Because you haven't seen it means nothing.... Every good cook knows and uses a steel
@@daveklein2826 No, it means everything. I'm going by the evidence that I have. I'm just going to believe what some random person says on the internet.
And we should believe your lies?😂😂😂😂😂😂😂😂
Im making this now. New Yorker deli's are acrually 1/8th sugar 😂😂
I always made my Mom's German with paprika water 1/4 cup sugar sour cream in the end. Just tasted it. It's still warm but I can tell will be good tomorrow. THANKS!
I remember seeing James mow down a shrimp dish you made and it was hilarious seeing him dive into it. Hearing him eating the salad with the crunch and desire to finish it was nice to see. I love this salad as well but I also like dill.
So glad you showed us this recipe. It's so expensive to eat out now that we're trying to learn how to make what we like at home. And, this is something that we really like.
I salt the onions and cucumbers while in a strainer for an hour to release excess
moisture. Mix 'em all in a plastic zip lock, And sometimes 1/2 tsp celery salt. Serve in a
bowl, not a dish. Sweet and sour freezing cucumbers,
we call them.
Love this! For years, I’ve been making cucumber salad for my mother, trying to approximate the way her German grandmother made it 70+ years ago. Your video immediately showed me what I’ve been missing. (I’ve been using only a spoonful of sugar and slicing the cucumbers way too thick.) We’re from DC so I had no idea this was a NY Deli specialty.) Can’t wait to make your version for my mom!
JAMES: You absolutely have plenty of charisma! You’re such a handsome young man and your enthusiasm for your Dad’s cooking is so endearing! Please keep appearing in the videos whenever you can! I did think you were a teenager and had no idea that you’re so young!
I like to make this and add fresh garden tomatoes-wonderful! 😋
Thank you for posting this! I really enjoy all your NYC deli recipes and methods. Keep it up! Now please teach us the NYC deli secret brine for great corned beef :)
Strange I grew up on a dirt farm in eastern ks, I made it this way and I had never heard of new york style deli cuke salad!! lol I love my sugar in hot wilted salad with green onions and lettuce too!

I think James is great. Doesn't look tired at all. I will have to try this soon.

How's that for an answer lol 😂
I grew up eating my mom's cucumber salad. This is the exact way she made it. I make it now and it is one of my favorite summer salads. It's fast, easy ,refreshing, and inexpensive.
Thank you for doing this salad. I am from the south and we make one that is similar, but I have always wanted to do one like this! Keep the videos coming!!
I love your videos. The food is always great. Your style is like having a friend showing you how to cook something. And you have a wonderful family. Thank you so much for doing what you do.
Ditto!!… well said….
Yeah- the glass measuring cups have a very poor pour spout. lol😂 This looks soooo good!
My mom made this but drained off the vinegar solution and then stirred in sour cream. Delicious.
This reminds me of a dish my dad made in the summer when his garden was full of cucumbers. He filled a large mason jar with sliced cucumbers and onions which he then covered with a mixture of equal parts sugar and white vinegar till the liquid covered the veggies. Lots of black pepper and a little salt. As the level of veggies decreased he would just add more cucumbers and onions till he felt it was time to start a new batch. He called it “pickled cucumbers” because they weren’t pickles exactly. It’s was delicious.
Yes, this is how my German Grandma made her cuke salad. She'd use a paring knife, while holding the cuke and got those slices THIN without a mandolin. :o)
My granny cheated. She used onion, cucumber, tomatoes and soaked it all in italian dressing. She said it had all the herbs, sugar, and vinegar you need.
That’s it, cucumber, tomato and onion salad the best❤
Mine did too!😂
That's how I do it, but I add a little extra vinegar and water.
Sounds amazeballs. Add some heat with pepper and im licking the plate
@@kevinmelanson3282 Pepper flakes, the kind you'd put on pizza.
This is almost exactly how I make frozen pickles. I add green pepper and sometimes I use apple cider vinegar. Love these.
i shudder every time i see a mandoline, flashbacks!
As a person who cut the end of her thumb off on a mandoline while working at a restaurant, class, pay attention, please.
Good advice...I cut off the tip of my middle finger on a mandolin. Bought NoCry cut resistant gloves before using it again...
😮 i hope you are ok
I cut the side of my thumb off using one, and I never used it again!!!! I had flashbacks watching him use it in the video!😳😳😳
I had a similar experience. I cut off the side of the tip of my right ring finger. Had to go to ER since it wouldn't stop bleeding. When I got back home, I couldn't find the part that was cut off.
One of the best salads. Born and raised in California, brought up with this delicious salad. Brought my daughter up on it. Passing it on to the next generation.
I LOVE this channel so much! The boy said citrus because his sophisticated palate nailed the sweet and acidic tones.
I loved the "... It is good on burgers. I forgot about that." Haha. Love this channel, great recipes and makes me smile!
kinda scary
i think we have always thought "the taste tester" is older because he is so well spoken and personable.(takes after Both parents!) i love this Cuc Salad!. i love to try new recipes. my fam, UNFORTUNATLY are boring and only my 20-year-old Cuc Salad recipe based loosely on a Japanese restaurant nearby will do for them. oh well more Sip and Feast for me!!!
I’ve been eating cucumber salad this way for 67 years. My grandmother, my mother and myself all make it this way. It never lasts very long in my house. I could probably make this 4 times a week. Thank you for the great video.🙂
I'll be 72 next August (I look forwards), and my mom would make Cucumber Salad for us back in the day. Don't think she put dill in it, or black/white pepper, but I always liked it. I liked the spinach she put on the table too. I was the odd child. LOL
James is darling! How nice that he taste tests the recipes!
Other way - v thin slices of cucumber, salt a lot, then press all with a fork - put aside for an hour and the water comes out, pour out (the excessive salt will also pour out). The rest is the basically the same but but add sour cream (which replaces the water) . Yummy!
I take a few strips of skin off then thinly slice the cucumber. thinly sliced sweet onion and the dressing is a lot of kosher salt, pepper sunflower oil and red wine vinegar with the oil going on first then mixed then the vinegar. No sugar no dill and the salad is delicious. Its always in great demand. I only add dill to a cucumber sour cream salad
I make this "quick pickle" cucumber salad which is similar:
Cucumber Salad
1 cucumber
1/2 a small onion
1/8 to 1/4 cup sugar
1/4 cup red wine vinegar
1/4 to 1/2 teaspoon dried dill
Peel cucumber and cut into thin slices.
Peel onion and cut into thin slices and combine with cucumber.
Bring to a boil the remaining ingredients and then pour over cucumber and onion.
Chill.
Did you not add any salt?
nope, no salt

Same. And my grandmother was Swedish. We used to call it “Wilted Cucumber Salad”.
64 years old here, born and raised i a Jewish and German neighbourhood in Chicago (in London now) and my mother made this. Also did cucumbers with sour cream somehow. Looks refreshing!
I made it. It’s amazing, it’s going to impress the right people at my summer bbq’s so thank you for sharing. Kiddo is right too - probably never going to have to buy another jar of pickles for burgers again 👍
Great video. I love how real James is. He is not like oohh this is the best thing I ever ate on everything.
Hi, I'd made this salad tonight and it was so good. I'd added hardboiled eggs, and avocado with apple cider vinegar and some sugar.
Thanks for the video.
when using a mandolin, wear a fillet glove. They are cut resistant, and dishwasher friendly.
Slice the cucumbers like you did, add them to a jar sterilized with boiling water & emptied, make a mix of vinegar & sugar, 1:1, cold, just keep mixing, it will dissolve... Add salt & pepper to taste, and pour over the jars, lock them up & keep them for at least 2 days in the fridge before tasting... Holds for a very, very long time :)
Can you keep the vinegar/sugar mixture for a repeat recipe?
@@OceanFrontVilla3 Hey Snowbird... Not really, as the water from the cucumbers dilute the solution, so the next batch won't taste as strong as the first one. Also, with the added water, you'll be in risk of microbacterial growths in later batches. So, start fresh every time you make it :) Doesn't take long, ingredients are cheap, and it lasts a pretty long time (at least 3 months) Have fun & enjoy :)
Hi. I am confused by the ratio. One to one vinegar and sugar? Something cold? One to one vinegar and water? Sugar vinegar to water equal parts? How much sugar to vinegar to water? 😊
@@marioncrocker1208
Equal amount of vinegar and sugar. So for example, one cup of vinegar and one cup of sugar, both at room temperature.
@@marioncrocker1208 You sterilize the jar with boiling water, then empty it. Equal parts vinegar & sugar, cold, stirred together, until it dissolves. Salt & pepper to taste added. Not much. Add the vinegar/sugar mix over your thinly cut slices of cucumber in the jar, seal it & leave it in the fridge for at least a couple of days. I hope this helps, otherwise feel free to ask. Kindly, Jimmy 😃
My dad made sliced cukes with part water, part taragon vinegar, salt and pepper. Put in a bowling fridge and makes a great snack
Just picked my homegrown cucumbers and onions and made this for my Brooklyn born husband 🩷
Been making cucumber salad dinner I was a kid with cukes out of the garden. I love my mandolin now, but I used an old fashioned box grater for cucumbers for many decades. Works great for cukes on the slice side and no where near as scary to use.
Not from New York but I love the simplicity of Cucumber salad
My Hubby made this exact recipe last night - I can not tell you How AMAZING this recipe is - this is now our new favorite Cucumber Salad Recipe 💜💜💜
I used to live in New York City and I miss some of my favorite foods. Love all your videos. Thank you for sharing all these recipes. Can't wait to try them.
James is very poised and articulate for a 12 yr old. Very impressive. Nice recipes too! Really enjoy your channel.
It's all the good food, love and support from his dad that does it. How could any son be disrespectful to a father like that?
For an Asian take on this, try the Japanese Sunomono salad. The key differences are squeezing out excess water after salting the super thinly cucs, the use of rice vinegar in place of white vinegar, and using something Asian like ginger root or sesame seeds in place of the dill.
Your channel is informative and entertaining. Thanks very much!
alternative for better taste: add salt sugar vinegar to the cucumbers and mix. After 1 hour rest press between hands to let it loose some cucumber juice. You can add flavors like fresh dill or crushed minced garlic, but basically you are done. Same ingredients but as no water is added the flavors will be more concentrated.
Made this for a large group of friends with home grown cucumbers and onions. Everyone loved the salad and asked for the recipe. Thanks for sharing.
Oh man it’s that time of year so nice!
My dad, who was from NJ, used to make this salad. And I loved it when I was kid (still do).
I grew up eating this in Maryland. It's an Eastern Shore favorite. In my twenties, I began making a creamy version that my family loves!
I'm a Michigan farm boy. Thisds is also how we make our cucumber salad. Very, very good.
I had a cucumber salad in Germany 36 years ago and it was so good. I’ve been looking for a recipe ever since.
This salad is delicious! 10 thumbs up!
This is fabulous! When you poured the warm dressing over the cucumbers I was afraid they would become too soft. I see by the crunch of your famous and very handsome taste tester that they were crunchy. I make refrigerator pickles which are delish. I love cucumbers in that sweet vinegar with onion. Thank you Sip and Feast Family!!!!😋
My sister-in-law just called me asking for her mom's wilted cucumber recipe, and this showed up in my feed. Apple know everything about me, LOL. She doesn't use dill, though. A family favorite.
My grandmother used to pickle mini sized veggies all the time. She'd even use tiny onion bulbs, broccoli, cauliflower, little peppers, and one of my good friends used to make dill pickled green beans.
I just love seeing this boy eat with such an healthy appetite and appreciating good homemade food.

AND..... you can drain the liquid once the marinating is done and ADD SOUR CREAM. Cold on a hot day the creamy sour crunch is divine!
Thank you for this. I made it for my wife today. She had me add a few slices of red bell pepper to a seporate container of it to try that way and she said the red pepper made it even better.
I grew up on eating these Deli salads in Brooklyn. Mom would buy them all the time after work, delicious!
