    One of the best videos on seasoning both tawas and kadhais and both iron and cast iron - with differences and restrictions clearly mentioned. You also have a vast collection of iron and cast iron utensils and come across as authentic and knowledgeable! Do you have any similar videos on clay pot cooking and seasoning? Also, any recommendations on cookware - iron/cast iron, steel? Thank you!

      Pure iron you can get from any artisans, they are very reasonably priced. You can find them in melas/ craft fares. I have been using Rock brand cast iron kadais and tawas. They are good

    Very well explained. Which kadai to use for cooking sabzi, curry cast iron or pure iron. When i went to shop to buy pure iron kadai. They asked me to use it for frying purpose only or making fried rice types. For palya, sabzi they advised cast iron. Cast iron is expensive when compared to pure iron. Can we use pure iron kadai ( which is not very heavy in weight) for south indian cooking like lemon rice, Puliyogare, vangibath?

    Hi mam gud evening thanks for the vudeo. In the video u have mentioned that dnt use the tamarind tomato. But in sambar, rasam, puli kulambu we have to add the above items. So what should we do

      Avoid cooking sambar, rasam etc in iron. Use stainless steel or stone pot

      Yes 👍🏻 as long as you do not add any souring agent like tomato, curd or lemon

    Mam do we have to remove the dish to another container after cooking.
    Because I saw that the rust easily forms again within half a day and seeps into the dish when the dish continues to sit in the same cast iron vessel

    Hi..can v make chapati or bhakri on the pure iron tava ?
    If yes then after using it v should oil it and keep ?

      Yes absolutely! But make sure you don’t make dosai in it. Just use it for roti/ bhakri etc., Oiling is not req if you wipe the tava well , see to that it is completely dry and then store it.

      Stainless steel is the safest . You can also use Earthen or stone pots

    Yes I have some doubts with the iron tawa. That one you cooked the dosa on does not look like the same iron tawa .iron tawa burns the doea in my experience. How often should you have to season an iron dosa tawa or is it not suitable for making . Tell the truths

      Repeat the seasoninv. Apply thick layer of sesame oil

    In pure Iron kadai some of the foods change into dark color, but the taste is pretty good. Why so? What to do to avoid changing color?

      I have shared that in the last part of the video. It is due to the iron content present in the kadai and vegetable. Not harmful

    The heat on the cast iron dosa tawa doesn't spread evenly, only the center part gets so much heat and dosa got burnt so what to do?

    Hello.. even after washing and oiling pure iron kadai when I wipe it with a cloth it gives orange residue

      After washing, immediately, wipe and then place it on the flame. Add few drops of sesame and with kitchen tissue, wipe it. Store it as is for next use

    U said not to use tomatoes in pure iron kadai. But we use tomatoes for every curry.

      Not advisable as it might impart a metallic taste. If it has a very thick coating of oil, it might not leave the after taste. But better to avoid
