Iam a tamilian from chennai traditionally my grand mom , my mom , my mil , myself we prepare dosai (dosa ) in cast iron pan , which is most tastier compared to cooking in non stick pan , dosa s are prepared in cast iron pan in all restaurants ( if you check their kitchen u can check ) they are more durable and can easily maintained quite healthy (iron rich (iron salt ))( but pls don’t add tamarind pulp and when u are cooking curry/sambar in cast /iron kadai ( it adviced not add tamrind pulp/ extract while cooking curries in cast iron ) ( u can add it after transferring to steel container )
Please also guide about the foods that can be made in cast iron utensils, also whether the food made in cast iron can be placed in same utensil for long time.

I cook veg with tomato's but first cook the vegetables a little in cast iron then at end add tomatoes on top of vegetable and keep lid for minutes. After cooking I switch off gas then only mix the vegetables and add salt and remove it in steel utensils immediately. If you add salt earlier it will make food dark
