Thank you for these tips 🥳 I’m half Ukrainian so I grew up with this. We also make it from chicken carcass. My mom put the broth in a cake pan in the fridge and served it cold in squares and we sprinkled it with vinegar! This is my favourite way to eat it although I now use apple cider vinegar.

I get butcher bones with lots of joint cartilage. And make it so dank, dark, gelatinous, fatty. Don’t filter out nothing. It’s gnarly goodness and I add it to every soup or scrambled eggs. I especially enjoy adding it to freeze dried camping meal bags. Such a great addition.

In Poland we eat the “broth” cold 😊 My husband (🇺🇸) can’t understand:))) We usually chop up meat, celery, and some carrots lay them in small bowls, and cover them with the broth (fridge overnight). We eat it on a plate, sprinkle lemon juice on it, and add horseradish. Is that not weird? Ps. I know it is not carnivor but, man, delish!

I've heard of people making weekly bone broth and I thought WTH? THIS is how you make weekly bone broth!!! I had the roasting step but I've always been told to blanch them first which makes the whole process a giant PITA! I bet the blanch step is for conventional bones to 'leach out impurities'. I'm on a mission to find grassfed bones now because that looks amazing! I love how 'creamy' it looks at the end. That is a full win - thank you!!

    • @StevenSteph
      @StevenSteph  Місяць тому +8

I’ve never blanched…and mine is always thick and delicious! I now make it and freeze it in silicone cupcake molds and store in a giant ziplock in the freezer. I don’t keep any in the fridge now-it’s so convenient to reheat a few cubes as needed 😀
      Also try this soup:
Bone broth, any old leftover meat in the fridge (ham/steak/sausage/ground beef-whatever you’ve got) and cube or shred and add chopped eggs, top with pork rinds and then if you do dairy, top with cheese and stick under the broiler to let it melt and brown! It’s like French onion soup and the pork rinds make the cheese float and crisp! Yum! I dont do dairy often but on occasion I do in this soup! 😆

LOL I’ve never eaten a chicken foot…but I have since found where to buy them and I always add them to my bone broth now. I strain the bones so whatever collagen they add is fabulous! But I don’t eat them in their normal form-just whatever seeps out into the broth

I noticed on the bottom of your metal Colendar
There was all kinds of thick goodies on the Bottom
Take a peek at it the next time.
You might want to scrape that in there too,
    it looked good.

Most Asian market/Grocery stores have chicken and duck feet, you might want to give them a try , if there are any in your area and see if they carry them. 😊

Steph, our Walmart here in Ohio has them, the Chicken feet, in the chicken section where the livers and gizzards are. I roast chicken gizzards in the air fryer for my dog, and give her the chicken feet raw. Much healthier treats for her. Have you tried chicken livers? They're pretty good, they have a milder flavor than beef liver.

Steph if you have trouble finding chicken feet go to any "neighborhood" butcher (i.e. not a normal grocery just straight up butcher), OR if you have farmers that sell organic eggs, and chickens, they will have them, or your local Spanish grocery for sure will have them.

If you have a Mexican grocery store near you, you can find the chicken feet there, along with turkey necks etc.

I haven’t gone full carnivore yet. Still working my way slowly. But that gelatinous goop had me gagging at the thought of it cold. Steve is such a great Guinea pig with your experiments. Gotta give him props for that. I think I just need to get past my mind set. I’m not a fan of weird textures. But….if it’s going to help me to feel better I can get over it. Anyway, thanks for sharing your secret recipe! How cool your neighbors gave you some gorgeous looking fish. Enjoy it. Cheers from FL😺

Hey! Just a tip you can typically find chicken feet at ethnic grocery stores. If you have a Latin, Caribbean or African grocery store near you then they should have them. I am Haitian, so I always end up having to go to the ethnic grocery store when I am making certain dishes and I have always seen chicken feet at Latin, Caribbean and African grocery stores.

Do you think using an unfiltered, nondiluted brand of Apple Cider Vinegar, like Fairchild's, could increase the mineral/nutrient extraction vs. regular raw ACV with the Mother?

Wholefoods has chicken feet in a small freezer by the meat counter. I’ve bought them for my dog and they are gross but guess I’m going to get some for me😳🤔👍and WFM also has chicken backs and chicken necks that would be good for soup😄
FYI to everyone- the raw chicken feet, necks and raw marrow bones are great to give your dog or cat but after they are cooked, not suitable for the 4 legged family members.

I have a start of my bones from Thanksgiving from the carcass and my families plate all in a gallon size freezer bag in my freezer right now and the broth from the turkey and the parts from the turkey the heart, kidney and liver is in the freezer too. Thought I would use those for the Broth too.
