Hi. I just started training in Wrestling for MMA. I am right-handed, and thus have my left leg in front when assuming a fighting stance. Should I also practice the sprawl drill assuming a left-handed stance (ie. with my right leg in front)? Thanks in advance.

Not at all! I would definitely focus on your regular stance at first (I'm just a lefty, that's why it looks weird in the video). Eventually, you should work up to being able to sprawl just as well on both sides.

We those in conjunction with the technical stand up for jiujitsu at my Academy.....I have a bad habit of landing on my toes tho need to stop it

The sprawl drills are awesome for conditioning and reaction time. They're also killer in BJJ for stuffing takedowns and transitioning to guillotine chokes and back takes.
Flow Athletics for sure my last nogi match I used those transitions alot
im 6'5'' in no gi. Competing tomorrow - Will let you know if this video reinforced some things.

Does it matter if my knees touch the ground when I'm drilling sprawls or doing reps of sprawl burpees?
CojackM You should not be landing on your toes. The first thing to hit the mat (after your hands) should be your upper thigh. If your knee touches after that, it's alright, but try not to put much weight on it. Visualize driving all your weight through your hips and into your opponent (or the mat, when doing it solo).

do you need to wear a knee brace when doing these drills? looks like they could fuck up your knees without all that continuous landing on them
Your knees shouldnt really be hitting the mat. It's your upper thigh that hits the mat - landing on muscle, not bone. See my response to CojackM below.
