Actually the semla dates back to the 1700s in sweden, but then it was served differently placed in a bowl of hot milk called hetvägg (hot wall :D). It's said that the swedish king Adolf Fredrik died from eating too many semlor back in 1772
According to the story he ate 14 (!) , before a large dinner of sourkraut, meat and turnips, lobster, caviar and champagne. (No wonder he died) This should be some kind of "challenge" in a resturant where you sign a legal document that "The resturant accepts no liability in the event of hospitalization or death."
Mattias Ljungberg (the owner in the video) is taking about the current type of semla which is around 100 years old. The hetvägg semla from the 1700s wasn´t like the semla of today, there was no almond paste and the bun was really dry - so it had to be wettened by warm milk, hence the name hetvägg (hot wall).
What a lovely owner - quality is clear to see. Glad you’re all safe and having fun times. Keep these different city vlogs coming, more variety = better content. Well done you all.
Tösse was actually one of the first bakeries to break the classic semla mould when they launched a wrap semla, with acream and almond paste rolled in a soft, sweet and cardamom tasting wheat flat bread. Heresy, but very delicious heresy!
Guys! You cant leave Sweden without trying a Tunnbrödrulle (Flatbread roll with sausages and mash and much more..) That is streetfood you dont find anywere else. 😋
Back in the 60s,70s and early 80s we had lots of decent cakes in the UK. Then we got Supermarkets followed by Greegs. All the nice cakes disappeared with the independant and small manufacturers of cakes, The variety was then restricted by maintaining cost for profit. Can still see the Rum Babas in my head from when i was a kid at Taylors cake shop. Closest ive seen since was in Harrods food hall.
Funniest was when they asked him and he said Tösse which they completely ignored and instead gave themselves praise for saying Tosse. He said it less than 1 second ago and it just flew right over their heads.
Semla has been around a little bit longer than a 100 years. Swedish king Adolf Fredrik loved Semla, so much that he had a stroke after eating too much "Semlor" year 1771. Well there are probably other reasons for the stroke but that is the story at least.
Hetvägg, specifically. Semla served in warm milk. He supposedly ate a large amount of them, as it was his favorite, following a meal of meat and turnips, sauerkraut, lobster, kaviar, kippers and champagne. After the king's death, count Johan Gabriel Oxenstierna wrote that hetvägg should be banned for regicide.
It's the same holiday, mardi gras is also known as the fatty day and the day we eat semlor here in Sweden is known as Fettisdagen wich translates as the fatty day or the day of fat.
The ultra traditional way to eat semla is called hetvägg. The semla is served in a deep dish plate of warm full fat milk. To die for, almost literally.
It should be noted though that this a regional thing, more common in the northern parts of Sweden. That being said as a kid, growing up in the town of Mora, I often ate semla as a hetvägg (translates to "hot wall"), but later on I didn't like it as much, since the hot milk just turns the whole pastry into a soggy mess, more or less... Anyway, the hetvägg is a popular tradition, and a lot of people swear by it :)
@@t-man78 Making a hetvägg with a modern semla bun is like asking for a disaster, the traditional bun has a crispy shell that stays sturdy after being boiled in milk :)
There is a fun chart over what is a semla. Search for Semla alignment chart and you will find it. Are you a Purist, Neutral or Rebel regarding shape/form and ingredient? I am a ingredient purist, shape neutral. A quite common Semla substitute the almond paste with vanilla cream.
While watching you guys eating, I feel I wanna have one too! 😂👍 But I stick to one, max 2 each year, therefore I never get tired of them, really love it
You can survive on the satisfactory feeling eqting a semla, all the way until Easter, when it’s time for the next bit of culinary delight: the little Sillbit with a couple of Nubbe (pickles herring with a some dram).
You can actually put it in warm milk as well, as in a shallow bath of warm milk on a plate. Which is a more traditional way of eating them. I personally i prefer to eat them that way, you should try it if you get the chance!

It's SEMLA you barbarianbs, not selma! Jokes aside, semlor are delish. I think the beauty lies in how simple it is really. It's just a cardamom bun with almond paste and cream. The bun and cream just helps to mellow out and balance the almond paste for a tasty treat. I guess some people might think it's rather plain, but i think the combination of textures and falvors come together really nicely.
Now he knows why you should use the lid to scrape up some whip cream 😂. It's both the worst and the best season for semlor. Good to get some pudge during winter to stay warm, but it's also beard season for the same reason and that whip cream gets everywhere 😂😂 Ps. It's not actually called Tosse. I think he tried to say the name in English or something. The letter Ö is pronounced as the first sound in earl, and you're saying that quite often don't you, Earl Grey tossers 😉.

Excellent. To eat Semla, or fastlagsbulle the propper way. First take the "lid" of the semla, and dip it into the cream. Then eat it. You should be levt with the lower part filled with cream and other sweet stuff almond paste etc. Now take a bite, and remember to dipp your nose into the cream, filling both nostrils with cream. Also if you are a man with a beard or mustache, it should be full of cream to, this is how its meant to be eaten, not like a stuck-up with a spoon. This way you will walk around all day smelling only sour cream. If you don't, you did not eat it correcly, repeate the process with another semla.
