I think Fisk should have known sign language. Throughout the Daredevil series they showed that he was fairly fluent in at least Mandarin and Japanese though he pretended to not understand either. It makes sense that he would learn ASL for his beloved "niece"
I think it was kind of the point. Fisk is a manipulative POS, he doesn't care about Maia enough to learn ASL, but he cares about maintaining his power as the Kingpin enough to know Mandarin and Japanese to get a leg up against the competition.
That kinda bummed the whole series for me. He's known for his "method" acting so I'd expect him to make himself fluent to make those exchanges more personal.
Signing and verbalizing is also a way to reinforce lip reading skills. It's also normal to do both so hearing persons can feel included in the conversation when nearby.
About the hour on the clock, showing the same time: Here, in Romania, I've heard people stoping the clocks intentionaly, at the hour of a loved one's death, especially if they died in that house.
I absolutely loved the interaction between the Maya and Fisk this entire episode! Especially their last conversation because not only does it super confirm that the Daredevil show from Netflix is 100% Canon, but so is the rest of the Defenders Saga! Seeing Wilson Fisk try to manipulate Maya by trying to trick her into following in his footsteps by giving her the opportunity to kill him with the same Hammer that he killed his father with was absolutely insane! Amazing episode!
I think it's pretty obvious that Fisk is lying when he claims that this is the exact same hammer that was used to kill his father. Simply because how stupid would he and his mother have to have been to not have properly disposed of a freaking murder weapon? What? Fisk is a liar? Say it ain't so!
I don't think this kingpin is the Netflix kingpin. He and daredevil are very similar but not exactly the same. Which smartly allows marvel to pick and choose which aspects of Netflix marvel they want to use!
Jessica the clock is definitely different, its close but im pretty sure the hands just switched places and its a couple minutes different, the top hand goes from going through the 8 vs not being able to reach it, because its now the hour hand

I think the hammer is different because of the multiverse. I think the the events of the MCU take place on earth 616 but the events of the netflix daredevil take place on earth 617 or something. An earth so incredibly similar to 616 in so many ways except for a few subtle ways. That would help make the defenders universe Canon and explain plot holes and continuity errors
