- Light and fluffy flourless roll cake. Unbelievably delicious with cloud like texture with no eggy taste! Literally ate the whole cake in just one day without the guilt! 😋

INGREDIENTS
2 tablespoons (30g) salted butter
1 ounce (30g) cream cheese
6 large egg yolks at room temperature
1 teaspoon (5mL) vanilla extract
6 large egg whites at room temperature
⅓ cup (65g) granulated erythritol
Bake at 315°F (157°C) for 25-30 minutes.
Roll the cake while it’s still warm then let it cool completely before wrapping it with parchment paper and refrigerate it for at least 2 hours before serving.
Yields 8 servings (macros per serving)

This was the second dessert of yours I made. We've been low carb/keto off and on for years and hubby said this was his favorite low carb dessert. I made a quick chocolate sauce and warmed up some sugar free jam to drizzle over top. Delicious ☺️

Looks so good! I bet you could make lemon curd or sugar free jam and make a “jelly roll” cake if you wanted to add a little sweetness..but plain would be so light and tasty too!

I make a chocolate mousse that I keep in my refrigerator for a small treat during the day. It would be fabulous to spoon over this! 1 cup of whipping cream, 1/4 cup favorite sweetener, 1/4 cup cocoa powder, 1 tsp vanilla, and a pinch of salt. Put it all in a blender or mixer and whip until it holds together nice and firm. I am going to try this!

If you want to add more protein to that mousse, then look up a chocolate mousse using avacodo. It's excellent, and you would never know it's in there.
I'll bet that would taste really good rolled in the cake... maybe even incorporate some cream cheese into it. AND a layer of raspberry preserves..Thanks for sharing your recipe!

Woah, she made an egg fast carnivore sponge cake. Its such a lovely generic recipe. I want to make it into cupcakes with a tasty frosting. Red food coloring and cream cheese frosting and hurray! red velvet cupcakes guilt free. Or forget the frosting and add classic sugar free french vanilla custard. Also egg fast friendly. Salted caramel and espresso. The possibilities are endless. I love generic recipes. They make such a good starting point. Thanks a million for this masterpiece.

I did it twice during the holidays. Quite a success ! I totally improvised the filling with lemon zest in the remaining cream cheese + erythritol ! Not bad. It rolled really well. Next time I'll try with your ice cream recipe !! And work on some outside decoration.

I made this today. It didn't come out quite as fluffy as in your video. It tastes great, but not sure what I did wrong...didn't seem to rise or expand like it should have. I'll try it again another time! I served it with a homemade buttermilk-vanilla glaze and some strawberries! Yum!

We have a similar dessert in the Philippines called Brazo de Mercedes but we fill it with a custard filling first before rolling.
I actually made the same cake called brazo de mercedes posted I think less than a month ago. ❤️🤗

I was so excited about this cake! 😢 Sadly it didn’t rise well and when I tried to take the parchment paper out it was too stuck. I let it cool off. Still, it was impossible to get the paper put without breaking the cake. I ended up with a big mess of pieces of yummy bread! What did I do wrong? I followed the instructions exactly.

Hey! thanks for the receipe! I just made this, added also no sugar cacao. But it is separated - like the yolks sunk down, created a gelatine layer and the rest (whites potentially) stayed as a separate layer on top. has anyone experienced a similar issue? Thanks Ellie! I recommend to roll it while it’s still warm. Cooling it completely will cause the cake to crack while rolling. And after rolling leave it out to cool before wrapping it with parchment paper or cling wrap to chill in the fridge to prevent sticking.🤗❤️

Hello dear, you can probably make this in a round cake pan but I suggest to make it in a 9 or 10 inch round pan. The cake needs to be thin like in the video to keep it from deflating/collapsing.

Looks very good! I'm guessing it tastes like a cross between sponge and angel cake! I never would have thought to try to make a cake with ZERO flour (be it wheat or almond or soy etc etc) but it definitely seems to work!

Not sure why you'd roll it without filling....
Not all roll cakes have fillings. Go to asian bakery and you’ll see lots of traditional roll cakes and it is without any filling.
Goes to show that the cake itself is flexible,will not crack even without the support of any filling. And you can add some if you want to. Personally I prefer roll cakes without any filling.
