It’s a classic French dessert with a hollow, light and airy pastry puffs filled with sweet pastry cream. These homemade keto cream puffs are just as delicious as the original version. You won’t believe how simple and easy these elegant little pastries are to make!💕
INGREDIENTS
3 large egg yolks
⅓ cup (65g) powdered erythritol
¼ teaspoon (1g) salt
1 cup (240mL) heavy whipping cream
3 tablespoons (45g) unsalted butter
1 ½ teaspoons (6mL) vanilla extract
¼ teaspoon (1g) xanthan gum
1 ½ cups (150g) blanched almond flour
⅓ cup (40g) coconut flour
1 ½ teaspoons (6g) baking powder
1 ½ teaspoons (6g) xanthan gum
1 ½ cups (375mL) water
½ cup (120g) unsalted butter
½ teaspoon (2g) salt
½ teaspoon (2mL) vanilla extract
3 large eggs at room temperature
Bake at 375°F (190°C) in 25-30 minutes
Yields 12 servings (3 pieces per serving)

they came out perfect ly..... I tried couple of other recipes they didnt come out well. I made lots of mini creampuffs.. Im on keto not my family couldnt save these from them.. 😂😂 they used cream and nutella in

Hi , Thanks for your recipe, I tried 2 times but the pastry puff inside kind of wet n eggy & the color goes yellow puff like sponge cake not like your puff’s colour. I did divide your recipe into 2/3 because it too much for me to do full recipe ( is it kind of reason of that fail ) . Also after follow step by step and when I put eggs to the dough, I used whisk tool to mix instead of using machine like your, is that kind of fail ?? Please give me advice. Many thanks
Hello, when mixing the eggs with the batter it is important to use an electric mixer to fully incorporate all the ingredients and also to incorporate the air into the batter. If your pastry puff seems kinda wet inside try baking it longer as every oven runs different.

Hi Jacki. 😊 You have to adjust the water and eggs if you’ll just use coconut flour. I haven’t personally tried it with this recipe so I can’t really tell if it will work or not. ❤️
