    Nutmeg isn't essential but it does add a nice taste to the doughnuts. But you can omit it if you like and they will still be great.

    To me, saturated fat is the enemy so I usually focus more on ingredients than calories but I did my best count using all the ingredients in my recipe. An average fried glazed doughnut seems to be around 250-300 calories with 50% of them from fat, mostly saturated. Mine is about 150 calories with 22% from fat and almost NO saturated fat.

    You will not get the same result by using milk. The acid in buttermilk is needed to create a puffy, airy, doughnut as well as a better taste.

      I won't use buttermilk either -- absolutely NO dairy for me; BUT try taking some almond milk, add a little bit of Apple Cider Vinegar to it!

    For a simpler way to put the batter in the pan you could put it in a ziplock and cut off a corner:)

    I've made these twice already & I like it better with out the glaze. After I doubled the recipe, my sister says the donuts need more sugar & my nephew ate more than half them 😅. These are definitely my go to from now on thanks Jenny! ❤🎉

    With a soft dough like that I can't think of anything else that would work to keep the hole in the middle. There are other recipes for baked doughnuts with a firm dough that is rolled and cut with a special doughnut cutter then baked flat on a baking sheet. You might want to try that.

    BRILLIANT idea for your butter/canola mix for greasing pans!! I hate the sprays bc they leave a residue that is tough to clean on my pans.

    You really do. Buttermilk makes baked items light and tender. (that's why buttermilk pancakes are so good!) They say if you don't have buttermilk you can add 1 Tbsp. of lemon juice to milk and let it stand for 5 minutes and I've tried it but it's not the same at all. So buttermilk is definitely needed, but you don't have to drink it! I get that!

    suggestion for ya Jenny, saw another video where they put the batter in a ziplock baggie and cut the corner off. the batter went into the pan easily and no mess. Love your video's.

    I don't think that would work. The batter is too runny and will just spread out flat on the pan. There are other recipes for doughnuts with a stiffer dough that you roll and cut into doughnut shapes and that would work on a flat baking pan but I have never tried those.

    I have had this doughnut pan for about 20 yrs or so. I think I saw it one time on an infomercial, and I made donuts just a few times with the pan. However, since I saw this recipe, I am going to get the pan out and try making the donuts. However, although the donuts are done on both sides, I don't like the color variation, so, about 7 min. or so in the baking process, I'm going to see if the donuts are of a consistency that they can be turned, and if they are, I'm going to turn down the heat so as not to burn them, and I'm going to turn the donuts. Also, choc. donuts and incing could also be made with the donut and icing recipes, and maple icing could also be made. I think I'm going to try those choc. and maple additions, too. But, I really do enjoy all your recipes. I made the chicken pot pie, and because I"m vegan, I used a chik'n substitute, and it turned out really well. Thanks for doing healthy recipes, Jenny. Although we have become a health-conscious society now, there are still shows that do unhealthy recipes.

    (You say you substituted brown sugar for white sugar and made your own buttermilk using a cup of milk to a tablespoon of white vinegar) Both of those changes, unfortunately, will not result in my light, airy doughnut. Brown sugar always makes baked products more dense & heavy. And I've never had luck with "homemade" buttermilk. At least it explains why yours did not turn out. Using white sugar will help but I'm not sure you can get it right without real buttermilk. Let me know if you try again.

    The easy way to fill donut pans and cake ball pans is to put your batter in a plastic bag and cut a tiny corner off the bag and fill the cavity with the batter, this works for waffles too.

    I'm sure by now you have learned that canola oil is highly inflammatory so a better choice(s) would be coconut, almond or light olive oil. I love all your recipes but I never use the 'fat free" option as they add bad ingredients(such as sugar)to make up for the missing fat. Healthy fats are good for us. Really not trying to be negative here just trying to help😘You have the cutest kitchen items, timers, spatulas, so colorful and happy!

    This recipe has been foolproof for me and always has a light, airy, melt-in-your-mouth texture. I'm wondering if there is one little thing you may have done differently or an ingredient that you substituted. They definitely should not be bread-like. Are you using the same exact pan? Could your baking powder or soda be expired? Did you use all-purpose flour? If you let me know anything different I might be able to pinpoint the problem. I'll try to help you to attain the light donuts you seek.

    I LOVE me some baked donuts! I have two donut pans (because who wants to make only six donuts?) and look forward to getting a heart-shaped donut pan as well (baked donuts and whoopie pies are my big 'SHOW' pieces - nobody realizes how easy they are).
    I'll be trying these but, I have to say: my go-to donut recipe (from which I've begun to make new varieties) is from Chloe Coscarelli's first cookbook. It is amazing!
    In fact, I made a batch of cinnamon donuts with apple cider glaze the other day for a "breakfast for dinner" party and the recipe I had found, despite rave reviews, was unimpressive. However, I went bake and made the Chloe's donut recipe, with some alterations to mimic the flavor I was going for. AMAZING!! Super fluffy, moist...even better on day two, if you can believe it!
    I want to try these to see how they stack up. I'll report back. :)

    You will not get the same result by using milk. The acid in buttermilk is needed to create a puffy, airy, doughnut as well as a better taste.

    That's so cool! But is it possible to pipe the batter on a baking sheet in circles, so that you won't need the donut tray?

    Ms Jones try Smart Balance butter, olive oil and butter, much healthier than canola.

    Hi. Love the donuts. My glaze does not dry clear - any idea why??? I'm in UK - is the sugar an icing sugar?

    I love that this is a basically small cake recipe (like one of mine that's doubled.)
