I'm always looking for recipes as my Daughter has Lyme disease & I have to be very careful. These would still be delicious without nuts wouldnt they ? As she cant have them. This lady deserves a gold award for her presentations as it is free of all the talk, talk, religious messages etc: I just love her way and right to the recipe. She's so cute with her pigtails. I made these last year and failed to thank you for your post. I made them, they disappeared, I made more. Sane thing happened. Made more. 4 times! This is now the favorite cookie for several family members. They made a mess eating them because the powdered sugar would land all over the table or wherever so I started making slightly smaller ones that can just be popped into mouths without needing to bite into them and there was little to no mess! It's as easy as you told us it was and they are so very delicious. Toasting the pecans make a huge difference so do not skip popping them in the oven before adding them bexause Inside the cookie they are crispy crunchy fresh and have more flavor than f you use them and straight out if the bag. Love this recipe,!
Made these yesterday for my friend who has celiac disease so I used almond flour in place of the all purpose flour and I only had walnuts so I toasted them and chopped fine. She came for dinner tonight and absolutely loved them. She said she thinks it's her favorite cookie now. I sent her home with a tin of them. My 8 yo dd is a celiac and I was going to try gf flour, but almond flour sounds yummy too. Would you still need the pecans if you used almond flour? I'm not that big on nuts.

Hello! Thank you for the memories! My mother made these every Christmas. She called them butter balls. She used pecans when she could afford them. Otherwise she chopped walnuts and mixed them into the dough. The grandparents all liked the walnut version better because they didn't get under their dentures. LOL Those were the days! The only time I ever notice a problem with using salted butter and then adding the salt per the recipe is with Toll House cookies, for some reason that salty taste really comes out in them, I learned this by forgetting that I used salted butter lol.
I've been baking over 25 years and they always say in a pinch of salt or teaspoon of salt or salted butter never never never do I add salt to any of my big Goods or do I use salted butter and all my stuff comes out perfect
I made a recipe like this once. I shaped the balls into teardrops, and baked them. I turned them into Christmas mice by adding a thin licorice tail, dipping them into white chocolate and adding almond slices for the ears. I piped on eyes and used a red hot for the nose. Now I keep it simple.

That one ball was so over the top good.. I am now waiting to die because as a newly diagnosed diabetic I should not have even looked at it less alone eat it. My neighbor used too make Christmas cookies for my family when I was in my early teens. I don't know how but every yr. she would ring the bell, I would answer an I would hide them, I never shared any of them because nobody knew but me and her until she would ask my mom's did she like them but every yr. by then they would be gone. Well, it is Christmas time. Christmas specials and movies have been on tv for weeks now and Christmas music is on the radio and all the stores are decorated for Christmas and Black Friday. But yeah I get what you're saying. I've had these cookies before and heard of the name "snowball cookies". I just didn't know what I ate was called a snowball cookie or how to make them. I'll probably make them this year for Christmas.
Yummm😋 Gosh, I miss all the baking my dear late Mom used to do, especially at Christmas time. When my Mom made her snowballs, she used fine ground almonds. Before she rolled them into a ball shape, she'd put a red maraschino cherry in the center before completely surrounding it with the dough. OMG!!! They r delicious... I made them vegan, with margarine (vegan butter).. at first i was so scared cause at 350 degrees they melted a little... but the second tray i put in a 190°C and they stayed a little longer at room temperature before going to the oven and they stayed firm without melting... a really easy recipe and tasty ... with one of ny favorite nuts 😋😋😋 thank you so much for the recipe
Russian Tea Cakes are my very favorite cookies! YUMMM My recipe is slightly different..I don' toast my pecans or chill the dough, but they always come out delectable and melt in your mouth. I used to make 20+ dozen because they were gifted to all my family. Happy Holidays!

I make these for potlucks. Easy, quick and look so elegant! When I take them out of the oven I slide the parchment paper and cookies off the pan unto a cooling rack to cool slightly then sprinkle powdered sugar over them. After they cool they get a second coat of powdered sugar. Sometimes, I put a little cocoa powder in the powdered sugar.

I made these with a little bigger pieces of nuts had to squeeze together to form balls but they held together just fine. My sister loved them. Made using pecans and another batch with walnuts. Great. And thanks so much
I've been making these cookies for the past 20 years for Christmas, weddings and special occasion. they are the favorite at every event. I usually make about 12 batches of this recepie but I make mine very small, bite size because they expand as you bake them, I usually cook them till they are golden brown, let them cool and sugar coat them twice. I've had coworkers make them but for some reason theirs don't come out as good as mine.

Salted or unsalted butter? I use whatever I have on hand and don't taste much difference whether it's salted or unsalted.
My recipe calls for salt but if I use salted butter then I omit the salt from the recipe.

My neighbor used too make Christmas cookies for my family when I was in my early teens. I don't know how but every yr. she would ring the bell, I would answer an I would hide them, I never shared any of them because nobody knew but me and her until she would ask my mom's did she like them but every yr. by then they would be gone. This cookie was my favorite, that's why I never shared😂 She made enough to last me a couple of weeks. I think of her every time I see this cookie, I'ma make them myself now, thanks for the recipe. P.S. I'm 62 now an she probably looking down from heaven laughing 😂😂😂 b safe😷

Well, it is Christmas time. Christmas specials and movies have been on tv for weeks now and Christmas music is on the radio and all the stores are decorated for Christmas and Black Friday. But yeah I get what you're saying. I've had these cookies before and heard of the name "snowball cookies". I just didn't know what I ate was called a snowball cookie or how to make them. I'll probably make them this year for Christmas.

Yummm😋 Gosh, I miss all the baking my dear late Mom used to do, especially at Christmas time. When my Mom made her snowballs, she used fine ground almonds. Before she rolled them into a ball shape, she'd put a red maraschino cherry in the center before completely surrounding it with the dough. OMG!!! They r delicious... I made them vegan, with margarine (vegan butter).. at first i was so scared cause at 350 degrees they melted a little... but the second tray i put in a 190°C and they stayed a little longer at room temperature before going to the oven and they stayed firm without melting... a really easy recipe and tasty ... with one of ny favorite nuts 😋😋😋 thank you so much for the recipe
Russian Tea Cakes are my very favorite cookies! YUMMM My recipe is slightly different..I don' toast my pecans or chill the dough, but they always come out delectable and melt in your mouth. I used to make 20+ dozen because they were gifted to all my family. Happy Holidays!
Nancy Fenity yep Russian Tea Cakes is what we call them. I use walnuts. The mini chocolate chip idea sounds great. I may have to make a batch of those too!
Nancy Fenity - We called them Russian tea cakes, too! I'm Polish on my dad's side, but my Danish mom always made them and that's what she called them, too. When I was a kid I wasn't so keen on them, but as an adult, I love them, especially with tea! Cheers!

I make these for potlucks. Easy, quick and look so elegant!
When I take them out of the oven I slide the parchment paper and cookies off the pan unto a cooling rack to cool slightly then sprinkle powdered sugar over them. After they cool they get a second coat of powdered sugar. Sometimes, I put a little cocoa powder in the powdered sugar.

I made these with a little bigger pieces of nuts had to squeeze together to form balls but they held together just fine. My sister loved them. Made using pecans and another batch with walnuts. Great. And thanks so much

I've been making these cookies for the past 20 years for Christmas, weddings and special occasion. they are the favorite at every event. I usually make about 12 batches of this recepie but I make mine very small, bite size because they expand as you bake them, I usually cook them till they are golden brown, let them cool and sugar coat them twice.
I've had coworkers make them but for some reason theirs don't come out as good as mine.
Size does matter!!
