- This crazy quick, super tasty crusted cod is a fantastic way to celebrate beautiful white fish. Using a food processor as a little cheat to speed through making the crust and paste, but with no compromise. Using sun dried tomatoes, basil, parmesan, garlic and chilli to create a paste that has big impressive flavour!
This speedy recipe is from Jamie's 30 Minute Meals TV series first aired on Channel 4 in 2010. All the food made in this video was shared out and eaten among the very lucky crew. Nothing goes to waste.

@@wonderwoman5528 Many thanks for your response! In my oven grill, you need to set the temperature for grilling, like you do for baking. I guess I will go for 180 C. What do you think?
@@redribbonshoe I don’t have that on my grill, but I preheated for about ten minutes until nice and hot. I’m sure it’ll be fine :)
For the paste: blend half a chilli, sun-dried tomato paste (2-3 tbsp) with a swig of the oil, two cloves of garlic, lemon zest and juice of + lemon, handful of basil, tbsp balsamic vinegar, 40g or inch square of parmesan.
For the breadcrumb coating: blend 200g bread, half a tin (or 4 fillets) of anchovies, pepper, 2 cloves of garlic.
This is astonishing! The best fish recipe I have ever tried. Combination of this sauce and crumbs is juz perfect- fish is melting in your mouth as a butter 💥

I've made this many many times and it truly is delicious; if I don't have any basil I'll improvise with some green pesto; I use cod loin sometime, mackerel another time. And I bake it in the oven at 180 C !! Let those creative juices flow. Absolutely beautiful with sweet potato wedges and peas; proper fish fingers and chips and peas.

what's good about this one, is that it can be very healthy with a little changing in the ingredients like using whole wheat bread or anything that fit with my diet.

This recipe is exceptional. Flavours are superb. The crust and paste prevent the fish from drying out. The video doesn't help much with timing, but I used a thermometer to check when it reached almost 145F and it was spot on. From memory it was: in grill without paste 5 mins while paste prepared - 10 mins with paste on - 10 mins with crust on, and it was done.

Jamie, you have some nice fish recipes, but this is one of the better ones i have seen in a while. All kinds of flavor and texture in this recipe, and being Irish, cod is my favorite fish.

Just tried out this recipe last night and it tasted amazing!!! I have a couple questions and would really appreciate some inputs!
-My oven doesn't have grill mode, what can I do to achieve the same result?
-The breadcrumbs tasted great but it wasn't crispy, what have I done wrong?
I bake mine in the oven at 180 C until your bread crumbs are crispy.

Jamie for Minister for Food, seriously, his zeal for getting kids to eat healthy, his sugar crusade, his simple, tasty recipes to wean people off fast food, the govt is missing a fantastic opportunity.
I made the crusty cod, with Bart breadcrumbs and tinned tomatoes as I had no sundried in, followed the other steps, and added some passata, and honestly even with my shortcuts it tasted great, oh I added some dried mushroom powder to it for a health boost.
Will definitely eat that again, and next time I've ordered some Greek sun dried tomatoes!

Major tip here; when anyone says to use X amount of garlic, use twice that amount to get proper flavour in your dish.

How hot is the overn? And... for how long do you bake the fish?

I think grill setting is also known as broil. Not sure entirely.

Why would you use the garlic crusher when it goes through a food processor?
Because a food processor won't do the job
Crushing garlic gives a hotter piquant flavour to the final dish. The processor will chop the garlic & chopped garlic is milder when cooked.
