    Thank you so much for this video. I can cook pretty much any kind of seafood and fish, octopus, calamari, salmon, whole fish with the head like the red snapper... But for the life of me, I have never been able to cook cod. Now I can, and thanks to you, it came out perfect! You are a God send! Love your videos and your recipes, I am a big fan now!

    If you put a wire rack (upside-down) on the paper towels, it allows leftover oil to drain away from the fillets after cooking without the fillets sitting on an oil-soaked paper towel until plating.
    I have a small wire rack from a toaster oven specifically for this.

    Thank you!!! Last time I cooked cod I must’ve overcooked it and it came out hard and rubbery, I had to throw half of it out, it was inedible. So I tried again - but found your video first, I tried your 2nd method and it came out PERFECT!! Your tips and techniques and the time of cooking worked really well. Those are great tips on padding the moisture off first, the cooking time based on the thickness, and getting the pan hot first - it all made for perfectly cooked delicious cod! I was so happy how it came out. Thank you again!! 😊

    Albert, thank you so much! I just tried all three recipes and La Plancha was my favorite by far. My cod was not frozen (I wouldn't dare say "fresh" since it was from the supermarket.) I had exactly 3 pieces which were about half-inch thick. They cooked in no time and all turned out delicious. From now on, I'll be cooking la plancha style.

    What a fabulous channel! I am a former sous chef, so, I can cook a little bit. However, it has been at least 10 years since I have made cod and every once in a while, if I am going to make something, I like to just watch someone else make something that I have not made in a some time. I believe the last time that I made actually cod, it was butter-seared with lemon garlic (mojo) and cilantro, and that was way back when I was still at the restaurant; I am now retired.
    I clicked on this video just to see someone else's take on traditional cod. I was very impressed by these easy, yet, traditional ways, of making cod, it really brought me back too. Fish is a dish that can be really simple, but can also get overly complicated very quickly if we start overthinking it, which is what I was starting to do. Watching this video took me back to the days when I first started cooking in New York in the early '80s. I certainly appreciate watching this video. This great channel is certainly worth subscribing to as well. Thanks for your time, my friend.

    Just ate this. I cooked the first one. The flour coating. I squeezed half a lemon and put a capful of apple cider vinegar on the plate before pulling it off the pan and it was simply wonderful. You know something you cooked is good if while your eating it you have thoughts of cooking it for others. This is one of those

    For me, heating up a pan with EV olive oil works perfect and that method presented no problems with the filet sticking to the pan. Result was excellent and thanks!

    I just did the breaded fried fish. It came out amazing! The only thing I changed was that I sprayed avocado oil instead of frying to reduce calories. It was the perfect blend, easy and delicious. This recipe is a keeper. Thanks!

    Wish I'd found you yesterday. I made 2 cod fillets in the oven since my doctor says I can't have fried food. They were ok but dry. I'm going to use your pan grilled (plancha) method next time. I can use my grapeseed spritzer so they get a bit of oil on each side, then season. I have more fresh cod, so will do your method for grilling this time. And thanks for these simple recipes. 👍🏻

    Just cooked frozen cod the first way. Yes, whilst still frozen. Did exactly as you recommend, then finished off in the oven which was already on for another dish. Turned out moist, delicious and simple to make. Thank you very much.

    This video was really helpful. I am not that confident at cooking fish but want to eat a lot more and after watching this I will definitely try at least 2 versions.       I agree Deb, to pat on paper towels, is an oversight on my part & yet it really is important. Also, I had some fresh Panko crumbs I rolled my fillets, instead of flour & viola' super tender, and delicious. I grated FRESH garlic & Paprika....so delightfully decadent!!!😋🧑‍🍳

    I made the first way tonight. Next time I will only season one side of the fish, it was a touch salty, but that was my bad. Otherwise the timing worked perfectly. I had two thick fillets and a thin one. I did the thick ones 3 minutes a side and the thin one 90 seconds a side. The fish was flaky and tasty. I will do it this way again for sure!!!! Thanks!

    I have had a little cafe... made everything from scratch... raised out in the country... BEEF..
    I have always been afraid (there I said it) of cooking FISH... so sillllllly. I know.
    I love your video... NOW I will cook Fish...
    Can you put 50/50 oil/ butter?
    Can I cook Tilapia the same way?

    I discovered recently that fresh cod is my favorite fish. Fresh cod fish is expensive, so I wait until it's 5.99 lb and I buy quite a bit to freeze. 5.99 lb in amerikkka is the cheapest I've ever seen fresh cod fish.
    I've been pan frying wrong for months, so thank you for sharing.

    So, I'm 50 years old and made a New Year's Resolution to eat better, specifically by including more fish in my diet. This is a big change for me because I live in a land-locked area, and good, fresh fish is expensive. Up til now, my experiences with fish and seafood have been limited to tinned tuna, fish fingers drowing in ketchup or tartar sauce, breaded and deep fried butterfly shrimp, supermarked deli seafood salad made with imitation 'krab' meat, tinned clam chowder, and the occasional fish cakes made with tinned salmon, mackrel, or sardines. So, buying what the finshmonger told me was "a nice piece of cod" was a big step for me.
    I've tried cooking fresh fish in the past, trout and bluegills I caught myself, various fillets from the market, and I can recall only twice that it wasn't a disaster. Pan frying was always a train wreck.
    I followed the tips in this video, and had a lovely dinner. Thank you so much.
