when it comes to simple, quick an authentic, hands down best tv chef in the world
I totally agree with you. BUT BUT Jamie's on the health train and it's still the old calorie train - the dish needs more salt and lots of extra virgin.
For everyone who wants to know it...This is a classical pasta from Sicily, it is called "pasta alla norma". If you can find it, the original recipe is meant to have a peculiar type of ricotta which is called "ricotta salata" (salty ricotta).
How does it differ from "normal" ricotta in case I can't find it? Is it just more salty or what else can I do to come closer the original flavour?
No. In the traditional "pasta alla Norma" the aubergines are fried separately and added to the pasta at the end, and ricotta salata is used instead of parmesan.
Of course is made with ricotta salata instead of parmesan, I said it. And of course the aubergines are fried. I was just giving some extra-infos if someone wanted to deepen their knowledge in this recipe.

@@idnwiw it's salted and dried to the point of being gratable. Feta is similar, but too wet. Goya makes proper ricotta salata in the US.
I love the fact that he uses ingredients that I can find at my local supermarket😍 a lot of these food shows have these exotic ingredients which I’ve never heard of 🙄

Just made it. It tastes AMAZING! The basil and ricotta and the sauce..ohhhh....With the first bite it instantly reminded me of my holiday in Italy last summer! What a great way to relive that time! It’s totally going to become a regular dinner.

This Recipe is bomb. The only thing I did different was walnuts because forgot to buy pine and threw in Calabrian chili peppers into sauce instead of steaming pepper. Soooooooo good

Never try to cook the food at home
For vegan Ricotta. Soak some almonds overnight or cashews. Next day, blend the nuts with a few cups of water. Strain liquid from pulp and you have nutmilk. In a saucepan on medium heat, pour in the milk, and add a few tablespoons of acid, such as lemon juice or apple cider vinegar. This will curdle the milk. Stir for about 10 minutes and leave the mixture to cool. About ½ hour later you got yourself som amazing vegan ricotta. Disard liquid and keep the "cheese" :)
Taschina could you then save the pulp, maybe toast it for the toppings, or is it just waste?

Flawed and Beautiful that pulp has almost no flavour left though, so it merely adds fiber, and very little taste :)

Awesome video! What do you think about roasting the aubergine in the oven for a bit? Wouldn’t it give a nice depth of flavor for this dish?
I always chop up the aubergine/eggplant and fry it in the pan until it gets a little brown on the outside before adding the tomatoes. Tastes amazing as well. So I’m guessing the oven would do!
