I canned rhubarb juice for the first time this year using my steam canner. It turned out great. I add it to sparkling water.
Clever tip about leaving the leaves at the base of the plant.
What can I say? I don't like weeding, so why not use the leaves to help with that?
Ive never made the juice. I boil the rhubarb and add packet or gelatin powder. Straight in the fridge. Rhubarb jelly with ice cream is the best!
Sounds tastu! I've never made refrigerator jelly (I usually can it), but I do love rhubarb on ice cream and on layer cakes. So delicious!

Could I just run the rhubarb through a juicer and skip that 1st cook stage?
I've never tried! Rhubarb is very stringy (especially if you're using older stuff) and so I'm guessing it would tend to clog juicing machines. But let me know how it goes if you try it! :)
I have antique large jars like yours, with those caps. How do you know if their sealed? On standard lids the center goes down. thank you.

But to quickly answer your question? Remove the bands after jars have cooled and lift the jar about an inch off the counter by the lid/rubber seal only. If the lid pops off, the seal failed. If it holds, you have a seal. :)
How long did you can them for??
I'm over 2000 ft in elevation, so I had to process my half gallons for 15 minutes. :)
What lids are you using?
