    For excess concentrate, sweeten to taste with sugar, add a little lemon juice , boil and put in canning jars for later use.

    i use a juicer and add sugar or honey . i cook up the pulp later for muffins and other stuff

    Try replacing the sugar with Pure Maple Syrup which is an excellent healthy sweetener

    i have access to a huge field of rhubarb, just cut down 50-100 stocks. making jam with most of it but definitely going to try this tomorrow

    What I'm going for is using rhubarb syrup to make a carbonated rhubarb drink using wild yeast from my ginger bug.

      @@elisamarro7356 A kind of yeast that lives on ginger. You can make a ginger bug, which is a formation of more yeast by combining shredded ginger, water, and sugar. This will then produce a solution of yeast which you can use to naturally carbonate liquids.

      You can use the pulp in almost any kind of cookie or cake or bar as a substitute for raspberry or other fruit jams.

    Is vanilla extract necessary?

      If you don't have it you can certainly skip it, but it won't have the same wow effect. There are so few ingredients that each flavor plays its part. Let us know how it goes if you try it :)

      It certainly can have a cleansing affect after a long winter for those who eat heavy all winter long; just like a LOT of herbal plants that pop up early in the season (like dandelion and fiddleheads).

    That's breast cancer and interstitial cystitis waiting to happen with all that oxalate. You have a great channel though, not trying to be critical.

      The Oxalate is in the leaves that's why their not edible. Stalks should be cut off at least 1" below the leaves just to be safe.

      When you soak in or add lemon it breaks down the oxylates. I soak lentils and beans overnight in lemon juice and water. Totally changes it and removes oxalates, then you can actually digest it. Makes huge difference.

    I cringed watching you chop. Knife skills are a must. Please practice curling your fingers on the hand holding food. I'd hate to see a cut on those fingers. Thanks for sharing the recipe. I have rhubarb ready now and am anxious to try this.
