When you soak in or add lemon it breaks down the oxylates. I soak lentils and beans overnight in lemon juice and water. Totally changes it and removes oxalates, then you can actually digest it. Makes huge difference.

For excess concentrate, sweeten to taste with sugar, add a little lemon juice , boil and put in canning jars for later use.
i use a juicer and add sugar or honey . i cook up the pulp later for muffins and other stuff
I like to make strawberry rhubarb wine and will try adding the vanilla and cloves this time.
Rhubarb juice in ginger ale tastes like a sparkling wine.
Try replacing the sugar with Pure Maple Syrup which is an excellent healthy sweetener

i have access to a huge field of rhubarb, just cut down 50-100 stocks. making jam with most of it but definitely going to try this tomorrow

That's breast cancer and interstitial cystitis waiting to happen with all that oxalate. You have a great channel though, not trying to be critical.
The Oxalate is in the leaves that's why their not edible. Stalks should be cut off at least 1" below the leaves just to be safe.
