  • Welcome to Bonita's Kitchen! Today we will be making RHUBARB BREAD. See recipe posted below!

    Ingredients:
    2 1/2 cups all-purpose flour 1 1/2 cups packed brown sugar
    1/2 tsp sea salt 1 tsp baking soda
    1 large egg 1 cup evaporated milk or buttermilk
    3/4 cup butter or margarine 1 tsp vanilla
    1/4 cup chopped nuts 1 1/2 cup finely chopped rhubarb “ fresh or frozen”
    2 tsp confectionary sugar
    Method:
    In a medium bowl add brown sugar, room temperature butter, milk and vanilla, start mixing. In a separate small bowl add egg “to check” then whisk together with fork, then add to mixture.
    Sift in flour, salt and baking soda, slowly start mixing together until blended.
    Fold in chopped rhubarb and nuts, until equally combined.
    Grease two loaf pans 9 x 5 inches, put batter into each pan.
    Pre-heat oven to 325ºF for 1 hour or until done or knife clean.
    When baked let rest for 5 minutes, remove from pans on cooling rack, then sprinkle with confectionary sugar.
    BONITA’S TIPS:
    Fresh or frozen rhubarb can be used for this recipe, if fresh peel or leave peel on and chop finely. Toss fresh or frozen rhubarb in some flour before folding into batter. This helps from sinking to the bottom of your bread.
    Nuts can be used or left out depending on food alleges, low sugar can be used follow food guide on google.

    bonita just started watching you and it came to mind that you need to put editble lime around the rubarb now and as soon as it disolves ,,,add more etc...... it will take the bitterness right out of it.. BUT MAKE SURE YOU DO NOT LET THE LIME TOUCH THE LEAVES... just spread around the base, i had 4 plants of rubabrb when i lived here, and i had a lady that would walk by my house and always comment how much she loved my plants.... so 1 day told her to go get a pitch fork / shovel and her vehicle and come dig them up as i dont use them. within 1/2 hr they were gone.. she was very happy to get them;];];] this is what she told me.. and my sister also confirmed this . so it must work... thank you for another awesome recipe never had this...but have had boiled down rubarb over toast or ice cream;];];] hope you have a great wk!!!

    What a timely video! I checked my freezer and voila, forgotten frozen rhubarb was there. I took out the butter to soften and I made this last night after supper, but doubled the walnuts as we like walnuts. Bonita! This is a great recipe. We love it (and you). Thank you so much for sharing. P.S. The new crop of rhubarb is poking it's nose out of the ground here in Ontario.

    Looks like another winner, Bonita! can't wait to try it when I start seeing rhubarb at the farmers' market this summer.
    Since our grocery stores seem committed to depriving us of our beloved 4 oz. cans of evaporated milk (grrrr!) your Pringles lid is a good tip with the too-large-to-use-at-once 12 oz. cans!! Happy Sunday to you.

    My Nanny use to grow rhubarb in her yard and boy would we eat lots of it. Love all things rhubarb. My Nan would make like a sauce and I would eat it like cereal. This bread looks amazing.     I made your rhubarb bread yesterday and was surprised how tasty it is. Maybe chopping the rhubarb in small pieces is what gave it so much flavor. We always had rhubarb In our small backyard in Detroit. My mom would put a little sugar in a juice glass and I would dip it and eat it raw! We grow it now in my backyard. Yumm.

    Had never made anything with rhubarb, although I had a plant in my garden for the last 14 years! After I watched the video, made it 2 weeks ago, and was a hit!! Making it again today to take to a bbq at a friend’s….. easy and quick

    Guess what I have in front yard ??? Rhubarb and I never know what to do with it all! Last year I made a crumble with it. I can’t wait to try this in a few months when I have so much I don’t know what to do with it.

      Thank you so much for stopping by and leaving a message, yes the brown sugar gives it a tasty balance and the nuts gives it the crunch, but the rhubarb is lovely in this recipe. My mom don't like rhubarb cooked only raw, and I gave her some and didn't tell her what type of bread it was and she loved it and after she couldn't believe it was rhubarb.     Thanks for the recipe and the tip on the Pringles lid. Now... here's a tip for you. If you put a damp cloth or even a paper towel under your cutting board it wont slip and slide all over the counter. Works for me!

    That looks delicious!! Do find that the loaf is more moist when you use frozen vs fresh rhubarb?

    You can "chop" nuts by putting the nuts into a plastic bag and run a rolling pin, wine bottle, or heavy glass round bottle over the nuts to "chop" them. I rarely use a knife to chop nuts. The frozen rhubarb can be "chopped" by a blender or food processor. Quick Tips.

      T o Patti from Montreal,When I need more rhubarb than I grow I buy it at Metro in Montral on the South Shore. It is 5$ a bunch.Or you could try a farm stand, I go to one on the Savane Road in St Hubert.

      Thank you Monique for stopping by and for your question? Baking soda and Baking powder is pretty mush your rising ingredient, baking soda you can use less to help rise then baking powder. I like using it in this rhubarb bread, loafs like banana, date, anything with molasses to left the heaviness of that liquid. But if you don't have baking soda to use you can use powder but maybe replace with 2-1/2 tsp to 1 baking soda. I hope this helps answer your question and enjoy. :) Bonita

    Hello, I made this recipe today and it is very nice. However, I couldn’t really taste the rhubarb very much. Would it ruin the recipe if I added another 1/4-1/2 cup of rhubarb?

      Hi Pat, Thank you for your message and for stopping by. If you wish to add more rhubarb it won't ruin the recipe but it may be a little more moist. Start with a 1/4 cup and if that is not enough the next time add the 1/2 cup. Stop back today we will be sharing another rhubarb recipe. Enjoy Bonita
